IRISH FRECKLE BREAD
This is an authentic recipe traced back to County Cork on the Emerald Isle. I got it from Taste of Home magazine. This freezes well. Prep time includes rising and kneading time. Both prep and cook times are approximate.

Steps:
- In a mixing bowl, dissolve yeast and 1 tablespoon sugar in warm water.
- Add the butter, eggs, potatoes, salt, remaining sugar and two cups flour; beat until smooth.
- Stir in raisins and enough remaining flour to form a soft dough.
- Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes.
- Place in a greased bowl, turning once to grease top.
- Cover and let rise in a warm place until doubled, about 1 hour.
- Punch dough down.
- Turn onto a lightly floured surface; divide into eight portions.
- Shape each into a ball.
- Place dough balls in a greased 10-inch springform pan.
- Cover and let rise until doubled, about 30 minutes.
- Place on a baking sheet.
- Bake at 350 degrees for 25-30 minutes or until golden brown.
- Remove sides of pan.
- Place on a wire rack to cool.

FRECKLE BREAD (RED HOTS)
This is a great bread recipe that I got from King Arthur Flour email. A sweet twist on cinnamon bread using Red Hots candies :) From their site: Delightfully spicy bread using Cinnamon Red Hot candies in place of the traditional cinnamon swirl. The pink and red pools of melted cinnamon candy remind us of freckles after a day in the sun. This bread makes excellent toast, amazing French toast and can also be made into cheerful and unique cinnamon buns. Cooking time includes rising time.

Steps:
- Combine all dough ingredients except cinnamon candies and mix and knead together -by hand, mixer or bread machine- until you have a soft, piable dough.
- Allow the dough to rise, covered, for 45 minutes to one hour or until full and round. To test, poke dough with index finger approximately 1/2 inch deep. If the impression remains, the dough has sufficiently risen.
- Gently deflate the dough, and pat into a 8" x 10" rectangle. Knead in the cinnamon candies in 3 stages, using about 1/3 of the candies each time.
- Shape the dough into a loaf and place in a greased or parchment lined 8 1/2" x 4 1/2" loaf pan. Tent the pan loosely with lightly greased plastic wrap. Allow to rise for 40-50 minutes. Dough should just crest the top of the pan.
- If making buns, divide the dough evenly into 9 pieces and shape into smooth, round balls. Place buns in greased 9x9" square pan. Tent the pan loosely with lightly greased plastic wrap. Allow to rise for 30-40 minutes. Buns will be full, puffy and barely touching one another.
- Bake bread (or buns) in preheated 350 degree oven for 30-40 minutes (20-25 minutes for buns). If bread browns too quickly on top, tent loosely with aluminium foil. Place pan over parchment or foil lined cookie sheet to catch any drips of hot candy. Bread is done when internal temperature reads 190 degrees on an instant thermometer.
- Remove bread from pan and allow to cool on wire rack. Place rack over a piece of parchment to catch any drips of hot candy. Candy will set as bread cools.

- Combine the basil, cheese, mayonnaise and garlic in a bowl and mix well.
- Arrange the baguette slices in a single layer on a cookie sheet.
- Broil the slices until light brown.
- Turn the slices and spread with the mayonnaise mixture.
- Return to under the broiler and broil until light brown and heated through.
- Serve immediately.

- Place water and red hots into a medium size pan. Whisk water and red hots constantly over medium heat till red hots are completely dissolved (remember to keep whisking because red hots like to stick at the bottom of pan). Bring to a boil and add jello; stir to dissolve 2 minutes. Take off heat and add applesauce. Pour mixture into a 8x8 inch glass baking dish or medium size glass bowl. Chill 4-5 hours or till set. When jello has set, beat heavy cream with mixer till almost stiff. Add sugar and vanilla and beat till stiff. Top jello with whipped cream and serve.

When the King Arthur Flour traveling baking demos came to the Salt Lake City area I was so exited to learn how to make the perfect sweet breads. They gave everyone this great versatle recipe that can be made into cinnamon rolls, braids, sticky buns, monkey bread, and more.

- For the sponge: In a small bowl stir together water and sugar until sugar is dissolved. Stir in yeast and flour. Cover with plastic wrap and set aside until bubbly and active, about 10 to 15 minutes.
- For the dough: In a large bowl, mix together all of the sponge, yogurt, butter, eggs, sugar, salt, and vanilla or citrus zest. Add flour 1 cup at a time, mixing until the dough comes away cleanly from the sides of the bowl.
- Turn dough out onto a lightly floured surface and knead for about 5 minutes, until soft and pliable but not sticky. Let dough rest while you clean and grease the bowl. Finish kneading the dough until it's smooth, supple, and springy.
- Place the dough in a greased bowl, turn to coat all surfaces, cover with plastic wrap and let sit in a warm place for about 1 1/2 hours, or until doubled.
- Gently deflate the dough and shape into desired shapes. Cover with plastic wrap and let rise until doubled in bulk, about 35 to 45 minutes.
FRECKLE BREAD
This wonderful potato bread gets just the right touch of sweetness from the raisins - its "freckles." It makes great toast and spectacular bread pudding. My friends and family have tried this recipe and love it!

- 1. 1. Bring the water to a boil in a small saucepan. Add the potatoes and cook until tender, about 20 minutes. Measure off 3/4 cup of the boiling water. If there isn't enough potato water, add warm tap water to make 3/4 cup. 2. Mash the potatoes in a bowl. Add 3/4 cup of the flour, the yeast, sugar, and salt. Stir in the potato water with a wooden spoon, and continue stirring until the mixture forms a smooth batter. 3. Cover with a dish towel and set in a warm place until the dough doubles in volume, 1 to 1-1/2 hours. 4. Whisk the egg until frothy. Stir the egg, butter, and raisins into the batter. Start adding flour one-half cup at a time, mixing well after each addition, until you have a soft dough. 5. Preheat the oven to 375 degrees. 6. Turn out the dough on a lightly floured work surface. Divide the dough in half with the sides of your hand, and allow it to rest for 5 minutes. Roll the dough into 2 cylinders, each about 9-inches long. 7. Grease a 9-inch by 5-inch loaf pan with the vegetable oil spray, and place the dough cylinders side by side in the pan. Cover with a towel and set in a warm place to rise again until double in size, about 45 minutes. Remove the towel and bake the bread until light brown (it should sound hollow when tapped), about 20 minutes. Makes 1 loaf
