FREEKEH SOUP FOR TWO

Freekeh Soup For Two image

Steps:

  • Heat oil in a saucepan over medium heat. Add onion and cook until slightly softened, about 3 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in freekeh and toast for 3 minutes. Add carrot, celery leaves, parsley, salt, pepper, and bay leaf.
  • Bring to a boil. Reduce heat and simmer until freekeh is tender, 15 to 20 minutes. Taste and adjust seasoning.
  • Allow soup to rest for 5 minutes. Remove bay leaf and serve.

  • In a large saucepan, saute onion and carrot in butter for 4 minutes or until crisp-tender. Stir in the broth, chicken, cauliflower, beans and macaroni. Bring to a boil. , Reduce heat; cover and simmer for 15-20 minutes or until macaroni and vegetables are tender. Add spinach and pepper; cook and stir until spinach is wilted. Garnish with croutons if desired.

  • Pulse the coarse freekeh in a food processor until partly smooth. Don’t over-blend or you will get a stodgy paste. Heat the olive oil in a pan, add the chopped onion & saute until golden. Stir in the freekeh.
  • Transfer the freekeh-onion mixture to the saucepan with the reserved broth, cover and cook 30- 40 minutes or until freekeh is well cooked. Stir in the shredded chicken and cook another 10 minutes. ( If the soup is too thick because freekeh absorbs liquid well, add more water or chicken stock. Adjust salt and spices.
