Steps:

  • 1. Traditional Medieval French Custard Tarte Tarte Médiévale... This delicious flan in a pie crust is not only typical of medieval dessert recipes, but is also a real pleasure to the palette! Enjoy! Preparation Time: 20 minutes Cooking Time: 30 minutes Ingredients: 4 cups Milk 4 Eggs 2/3 cup Granulated Sugar 1/4 cup Cornstarch (optional) Pinch of Nutmeg 1 - 2 tsp. Cinnamon Butter and flour for Pie dish 1 Pie or Tarte Crust (see bottom of page for a delicious and easy crust recipe!) How to Make It: Preheat oven to 450°F 1. Combine milk and sugar in a pot and gently bring to a boil. Remove from heat and let cool. 2. Mix cornstarch with 3/4 cup of water and then stir into warm milk. Put milk back on a low heat, and stirring constantly bring to a boil and then remove from heat. 3. Beat the eggs well, and then gently stir into the milk until homogenous. 4. Butter and flour pie dish. Roll out pie crust and place in dish. Pour in milk mixture and bake for 30 minutes. Let cool off before serving. Voilà! Tip: You can make this tarte earlier in the day and let stand at room temperature. Variations: If you would rather make a crustless flan, go right ahead by following this recipe! The only difference is that you will want to cook the flan in a bain-marie (double-boiler). In fact, crustless custards were also very typical among medieval dessert recipes... so, don't worry, you'll be just as authentic! The most common spices for medieval dessert recipes were: cinnamon, nutmeg, ginger, saffron, and cloves. So, feel free to make your own combinations with this recipe! Cheese Custard Tarte Recipe Tarte au Fromage Blanc... This creamy tarte provides another sumptuous variation to French medieval desserts. It's not quite as authentic (it has flour) as the traditional custard tarte above, but it's just as delicious! And, it's very easy to make! Enjoy! Preparation Time: 10 minutes Cooking Time: 40 to 45 minutes Ingredients: 1 lb. Fromage Blanc (or sour cream) 2 cups Crème Fraîche (or heavy cream) 2 Eggs 1/2 cup Granulated Sugar 1/3 cup Flour Butter and flour for Pie dish 1 Pie or Tarte Crust (see bottom of page for a delicious and easy crust recipe!) How to Make It: Preheat oven to 375°F 1. Combine all ingredients in a bowl and stir well, until homogenous. 2. Butter and flour a pie or tarte dish. Roll out crust and place in dish. Pour custard into crust and bake for 40 to 45 minutes. Let cool before serving. Voilà! Tip: You can make this tarte earlier in the day and let stand at room temperature. Variations: If you would like to add any of the typical medieval desserts spices (cinnamon, nutmeg, ginger, saffron, cloves) go right ahead and experiment! Just don't add too many in one tarte, it will overpower the natural and delicate taste. You can also substitute the sour cream with cottage cheese. French fromage blanc is actually a beat version of our textured cottage cheese. Crust Recipe for Medieval Tartes Here is a delicious crust recipe that will perfectly accompany these medieval dessert recipes. If you don't feel like making your own pie crust, just use a good pre-made one! Preparation Time: 10 minutes Refrigeration: 30 minutes Ingredients for Crust: 1 1/3 cup Flour 2 Eggs 4 oz. Butter (chilled!) 1 tbsp. Granulated Sugar Pinch of Salt How to Make Crust: 1. Mix salt, sugar, and flour. 2. Cut chilled butter into small pieces and mix into flour with finger tips. Stop working batter once it looks like "sand". 3. Make a well and pour in eggs. Incorporate into flour using your fingers and a spatula. 4. Once homogenous, form a ball, place on a floured surface and knead for 10 seconds. Reshape into a ball, roll out with a rolling pin, and refrigerate for 30 minutes before rolling out. Voilà! Again, if you don't feel like making your own crust, just use a good pre-made one!
  • 2. Rice Pudding Recipe... Absolutely Divine! Riz au Lait... so creamy, so delicious, it's difficult to stop eating it! Preparation Time: 5 minutes Cooking Time: about 50 minutes Ingredients: (6 people) 4 cups Whole Milk 1 Vanilla Pod, Seeds Scraped (or a tsp. of extract) Pinch of Cinnamon (optional) 1/2 cup Sugar 1 cup Round Rice (Aborio or other) 3 tbsp. Butter (unsalted) 2-3 Egg Yolks Pinch of Salt How to Make It: 1. Warm milk and add vanilla (cut pod in half lengthwise, and scrape seeds into milk) or vanilla extract. Add cinnamon, if you want, as well as pinch of salt. Keep on very low heat. 2. Bring 4 cups of water to boil. Add rice and cook for about 2 minutes. Strain. 3. Bring milk to light boil and add rice. 4. Cover and let simmer (very low heat!) for 30-40 minutes. 5. Add butter and stir. 6. Add egg yolks (one at a time!) and stir well. 7. Serve warm or cold (refrigerated). Voilà! Variations for Rice Pudding Recipes: If you want to spice things up a bit, or if you are looking for a touch of elegance, add a little rum on top, right before serving. It looks pretty and tastes great. Or, add some raisins or cherries right before adding the butter and stir. Of course, you can add any chopped fruit that you wish to add a touch of originality Serving Ideas: Lots of choices. First of all, you can serve it in one large dish or in small individual dishes or ramekins. If you make individual portions, refrigerate the extras. They will stay fresh for a few days and rice pudding recipes make wonderful snacks. Not to mention breakfast! Baked Rice Pudding Recipe! Riz au Lait à l'Ancienne... This traditional French dessert recipe is outstanding... enjoy! Preparation Time: 5 minutes Cooking Time: 3 hours Ingredients: (6 people) 1 cup Round Rice (Aborio or other) 4 cups Whole Milk (or low fat) 1/2 cup Granulated Sugar 3 tbsp. Butter (unsalted) 1 Vanilla Pod, Seeds Scraped (or 1 tsp. extract) Additional Butter for Baking Dish How to Make It: Preheat oven to 300°F 1. In a bowl, gently stir together milk, rice, sugar, butter (diced), and vanilla (cut pod in half lengthwise and scrape out small seeds or use extract). 2. Butter bottom and sides of baking dish and pour in rice mixture. Put in oven and let cook for 3 hours. 3. From time to time, using a spoon, break the caramel crust (which forms on top as cooking) and push down into pudding. This adds an excellent texture when served. 4. Remove from oven and let cool off a little. Serve warm or cold (refrigerated). Voilà! Variations for Rice Pudding Recipes: Same as above... If you want to spice things up a bit, or if you are looking for a touch of elegance, add a little rum on top, right before serving. It looks pretty and tastes great. Butter (room temperature) Rum Powdered Sugar to decorate Butter and Granulated Sugar for baking dish How to Make It: Preheat oven to 350°F 1. Chop chocolate into small pieces and put in a bowl. 2. Heat up cream and milk (don't let it boil!) and pour over chocolate pieces. Stir until chocolate melts and the batter is smooth. 3. Stir in butter until smooth. 4. Once batter is cool, add eggs, and whisk well. 5. Butter and sugar a baking dish (or a flan dish). 6. Cut bananas into thick slices. Line the bottom of baking dish with bananas. 7. Pour chocolate batter into dish, over bananas, and bake for 15-25 minutes, depending on how firm you want it. 8. Take out of oven and sprinkle top with rum and powdered sugar. Put back in oven, best if right under grill, and bake for about 3-5 minutes. Serve Warm. Voilà! Tip: You can prepare this dessert ahead of time. I always do!
