GORTON (FRENCH-CANADIAN PORK SPREAD)

French-Canadian pork spread for toast and crackers....This was my memere's recipe and so far I have never had any better. Very simple to make :) I guess from what I read, Croton and Gorton are almost the same, Gorton being the New Englander translation :) Enjoy

Gorton (French-Canadian Pork Spread) image

Steps:

  • Stir the pork fat, ground pork, onions, water, cloves, and nutmeg together in a large pot. Season to taste with salt and pepper. Bring to a boil over medium-high heat, then reduce heat to medium-low, and simmer until the pork is tender, at least 1 1/2 hours. Use a potato masher to mash the pork mixture every 15 minutes as it cooks.
  • The longer you simmer the gorton, the better the flavor will be. Add water as needed to keep the mixture from boiling dry. When you're ready to stop cooking, let the liquid reduce as much as possible without letting it burn. Refrigerate the gorton overnight. Remove and discard the fat layer, or stir it into the meat for a creamier spread.

Steps:

  • place pork liver, chopped garlic, ground Thyme, black pepper, salt and wine into food processor and mix until texture is similar to thick soup. Pour mixture over minced pork and combine well. Place mixture into cast iron terrine, or none stick dish and place into baking dish. Place the 2 Bay leaves and spring of Thyme on top of mixture and place the lid on top. Fill baking dish to 3/4 of the way to the top of the terrine. Bake in a 345 degree f, oven for 2 1/2 hours. Leave to cool before placing it into the fridge over night.

1 pound of pork liver
4 cloves of finely chopped garlic
Tablespoon of ground Thyme
1 t-spoon of black pepper
2 T-spoon of of salt
1/4 cup of white wine
1 1/2 pounds of ground pork
2 Bay leaves
1 spring of Thyme

PATTE DE COCHON (FRENCH CANADIAN PORK HOCK STEW)

This is a tradional French Canadian dish. Every "Quebeqois" knows what this is. It is basicly a poor mans dish. Farmers found use for every part of the animals they farmed. This recipe uses the pork hocks. This was served at least once a week at my grandparents house.

Patte De Cochon (French Canadian Pork Hock Stew) image

Steps:

  • (For Broth).
  • Cover pork hocks with water, add chopped onion, garlic powder, allspice, salt and pepper. Simmer for about 2 hours. Add water as needed.
  • Remove hocks, cool and take meat off bones. Strain the broth and reserve.
  • (For Meat Balls).
  • Mix ground meat, egg, allspice, onion salt, onion chips, garlic powder, nutmeg and allspice together and form into small meatballs. Roll the meatballs in flour to coat. Place on a cookie sheet and bake at 350 degrees for 20 minutes.
  • Brown the dry flour in frying pan until light golden brown. Mix flour well with 1 ½ cup water and add to broth. Once meatballs are out of the oven, place in a casserole dish and cover with broth. Simmer in 275 degree oven for 3 hours. Add meat from pork hocks and let simmer for another hour.

1 lb ground pork or 1 lb beef
1 onion
1 teaspoon onion salt
1 teaspoon garlic powder
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1/4 cup dehydrated onion chips
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg
flour, for coating
3/4 cup flour, for sauce
