Steps:

  • Preheat oven to 350 degrees.
  • Lightly coat 2 cookie sheets with vegetable cooking spray.
  • Sift flour, baking powder and salt together.
  • Beat egg yolks with extracts in a mixer bowl until pale and thick.
  • In a clean mixer bowl, with clean beaters, beat egg whites to soft peaks.
  • Beat in sugar 1 T. at a time, until stiff and glossy.
  • Gently fold egg yolks into egg whites.
  • Fold in dry ingredients until just blended.
  • Drop by level tablespoonfuls 2 inches apart onto prepared cookie sheets.
  • Bake 10 minutes or until golden.
  • Carefully transfer to wire racks to cool completely.

SPONGE DROP COOKIES

This is a lovely cookie with lots of variations available. Take two cookies stuff in between them fruit center such as raspberry filling and dust with powdered sugar. They make great gifts for the holidays.

Steps:

  • Beat the whole eggs until thick and light.
  • Add milk and lemon extract and beat in sugar.
  • Add flour which has been sifted with the baking powder and salt.
  • Cut a piece of parchment paper to fit the cookie sheet.
  • Drop or shape about the size of a quarter with a pastry tube on the parchment paper or buttered cookie sheet.
  • Bake at 350 degrees for about 10 minutes depending on your over. Yield about 6 dozen cookies.

  • Cut the butter in tablespoons and place them in a heavy saucepan over medium heat. Once the butter has melted, reduce the heat to low and continue cooking, until the solids sink to the bottom of the pan and turn golden brown, about 10 minutes. Remove from heat and pour the browned butter into a small bowl. Stir the vanilla and lemon zest into the butter, then set aside to cool.
  • In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside until needed.
  • In the bowl of a stand mixer fitted with the whisk attachment, beat the eggs at medium speed while gradually adding the sugar. Once all of the sugar has been added, increase the speed to medium-high and continue whipping the mixture until it's very thick and pale in color, about 3 to 4 minutes. Turn the mixer off and, using a silicon spatula, fold in the flour mixture in three additions, stirring just until combined. Fold in the butter mixture.
