Steps:
- In a large bowl, combine 2 cups flour, yeast and salt. Stir in 2 cups warm water, and beat until well blended using a stand mixer with a dough hook attachment. Using a wooden spoon, stir in as much of the remaining flour as you can.
- On a lightly floured surface, knead in enough flour to make a stiff dough that is smooth and elastic. Knead for about 8 to 10 minutes total. Shape into a ball. Place dough in a greased bowl, and turn once. Cover, and let rise in a warm place until doubled.
- Punch dough down, and divide in half. Turn out onto a lightly floured surface. Cover, and let rest for 10 minutes. Roll each half into large rectangle. Roll up, starting from a long side. Moisten edge with water and seal. Taper ends.
- Grease a large baking sheet. Sprinkle with cornmeal. Place loaves, seam side down, on the prepared baking sheet. Lightly beat the egg white with 1 tablespoon of water, and brush on. Cover with a damp cloth. Let rise until nearly doubled, 35 to 40 minutes.
- With a very sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across top of each loaf. Bake in a preheated 375 degrees F (190 degrees C) oven for 20 minutes. Brush again with egg white mixture. Bake for an additional 15 to 20 minutes, or until bread tests done. If necessary, cover loosely with foil to prevent over browning. Remove from baking sheet, and cool on a wire rack.

FRENCH WHITE BREAD
This is a light sourdough french bread that is made using your mixer and dough hooks. It has been around a number of years...say 1975 vintage! Hope you enjoy.

- Insert the dough hook into your mixer.
- In large mxing bowl, dissolve the yeast in 3/4 cup warm water.
- Add the starter, salt, sugar and 1 1/2 cups flour.
- Mix on medium until smooth and flour is incorporated, about 1 1/2 minutes.
- Cover and let rise for 60 to 90 minutes or until double in bulk.
- On low speed of mixer, slowly add remaining flour and baking soda.
- Knead dough for 5 to 7 minutes with dough hook.
- The dough should have a satin texture and form a ball, cleaning sides of the bowl.
- Shape the dough into a ball and let rest on a floured board for 10 minutes.
- Form into a French loaf, place on greased cookie sheet that has been lightly dusted with cornmeal.
- Make 3 to 5 diagonal slashes on top of loaf with sharp knife or scissors.
- Cover and let rise 90 minutes.
- Bake at 375 degrees for 50 minutes.
- When baked the loaf will be nicely brown and sound hollow when tapped with knuckles.
WONDERFUL WHITE BREAD

- In a small saucepan, heat the milk with butter over low heat just until the butter melts. Remove from heat and add to the bowl of a standing mixer fitted with a dough hook. Proof the yeast by adding it to the warm milk and butter. Add the sugar and stir gently to dissolve. Let stand 3 minutes until foam appears. This indicates the yeast is active. Turn mixer on low and gradually add the flour. When the dough starts to come together, increase the speed to medium and add the salt and 1 egg white. Stop the machine periodically to scrape the dough off the hook. Mix until the dough is no longer sticky, about 10 minutes.
- Turn the dough onto the work surface and knead for a minute or so by hand. Knead by folding the dough over itself and pushing out with the heel of your hands, not down. Rotate the dough and repeat. The dough is properly kneaded when you can pull it and it stretches without breaking. Form the dough into a round and place in an oiled bowl, turn to coat the entire ball with oil. Cover with plastic wrap or a damp towel and let rise over a gas pilot light on the stovetop or in another warm place until doubled in size, about 45 minutes. Test the dough by pressing 2 fingers into it. If indents remain, the dough is adequately risen.
- Once the dough is doubled and domed, turn it out onto the counter. The act of turning out the dough naturally deflates the gas, so there is no need to aggressively punch it down. Handle the dough gently, overworking the gluten at this point will produce a dense loaf that is difficult to shape. *To form a loaf, pat the dough into a rectangle, fold the long sides to the middle then fold under the ends. Pinch the seams closed and place in a greased 9 by 5-inch loaf pan, seam side down. Make sure the dough touches all sides of the pan. Cover with plastic wrap and let rise a second time for 20 minutes or until the top of the dough is nearly level with the top of the loaf pan. Preheat oven to 350 degrees F, place a large pan on the bottom rack of the oven. Bring 3 cups water to a boil on the stove. Pour the hot water into the preheated pan to create a steam bath for the bread. This will make a crisp crust.
- Slash dough down the middle of the loaf with a sharp knife to allow the steam to escape during baking. Brush the top with remaining beaten egg white and sprinkle with sesame seeds. Bake the bread for 30 to 40 minutes until crust is golden and internal temperature reads 195 degrees F when checked with an instant read thermometer. The bottom of the loaf should sound hollow when tapped. Immediately remove the bread from the pan and cool completely on a rack.
- * Variation: To make Cinnamon-Raisin Swirl Bread: after the first rise, press the dough out to a rectangle, sprinkle surface with cinnamon and raisins to cover. Roll up like a jellyroll, pinch the seams closed and continue as directed in the recipe.
FRENCH COUNTRY BREAD
A simple European-style country bread. Just enough whole wheat to give it some flavor but not so much that it's heavy. I use an overnight starter to give it extra flavor.

- The night before baking the bread prepare this starter: In a medium sized non-metal mixing bowl dissolve 1/2 teaspoon active dry yeast in 1 cup warm water. Add 1 1/2 cup bread flour and mix well. Cover and let sit overnight at room temperature.
- The next day: In a large mixing bowl, dissolve the 2 teaspoons yeast in the 2 cups warm water. Add the starter mixture, the whole wheat flour, 3 cups bread flour and the salt; stir until well combined. Add the remaining bread flour, 1/2 cup at a time, mixing well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Grease two 9x5-inch loaf pans. Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves. Place the loaves into the prepared pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 45 minutes. Preheat the oven to 425 degrees F (220 degrees C).
- Bake in the preheated oven for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

- Pulse flour, salt, and vinegar in a food processor to combine.
- Stir together yeast and 1/3 cup water in a small bowl until yeast is dissolved, then let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.) With motor running, pour yeast mixture and remaining 1 1/3 cups warm water into flour mixture in processor, blending until dough forms a ball and pulls away from side of processor bowl, about 1 minute.
- Cover processor feed tube and let dough rise until it fills bowl, about 1 hour. Pulse several times to deflate dough.
- Generously oil bread pans with olive oil.
- Turn out dough onto a work surface and divide in half (dough will be very soft). Press 1 half into a 10- by 8-inch rectangle and fold in the 2 short outer sides to meet in the middle, pinching edges together. Turn over (seam side down), then roll and stretch into a 15-inch-long irregular loaf. Put loaf, seam side up, in bread pan and turn to coat with oil, leaving loaf seam side down.
- Repeat procedure with remaining dough. Let loaves rise, uncovered, in a warm draft-free place 30 minutes.
- Put oven rack in upper third of oven, then put a large roasting pan with 1 inch of water in it on bottom of gas oven or on lowest rack of electric oven. Preheat oven to 450°F.
- Make 3 shallow diagonal slashes down length of each loaf with razor. Bake loaves 30 minutes, then carefully remove pan of water from oven. Remove bread from pans and turn upside down on upper oven rack, then bake until golden and crusty all over, about 5 minutes more. Cool loaves on a rack.
THE SATURDAY WHITE BREAD
This yeast bread recipe from Ken Forkish is designed for someone who wants to make good, crusty loaves of white bread from start to finish in one day.

- Autolyse: Combine the 1,000 grams of flour with the 720 grams of 90°F to 95°F (32°C to 35°C) water in a 12-quart round tub or similar container. Mix by hand just until incorporated. Cover and let rest for 20 to 30 minutes.
- Mix: Sprinkle the 21 grams of salt and the 4 grams (1 level teaspoon) of yeast evenly over the top of the dough. Mix by hand, wetting your working hand before mixing so the dough doesn't stick to you. (It's fine to rewet your hand three or four times while you mix.)
- Reach underneath the dough and grab about one-quarter of it. Gently stretch this section of dough and fold it over the top to the other side of the dough. Repeat three more times with the remaining dough, until the salt and yeast are fully enclosed.
- Use the pincer method to fully integrate the ingredients. Make five or six pincer cuts across the entire mass of dough. Then fold the dough over itself a few times. Repeat, alternately cutting and folding until all of the ingredients are fully integrated and the dough has some tension in it. Let the dough rest for a few minutes, then fold for another 30 seconds or until the dough tightens up. The whole process should take about 5 minutes. The target dough temperature at the end of the mix is 77°F to 78°F (25°C to 26°C). If the final mix temperature is cooler, don't worry, it will just take longer to fully rise (in this case tripling in size). If you have a warm spot where the dough can rise, that will help make up for the cooler dough temperature. If your dough is warmer, the dough will triple in size sooner. (The next time you make the recipe, you can adjust the final mix temperature by using warmer or cooler water.) Cover the tub and let the dough rise.
- Fold: This dough needs two folds. It's easiest to apply the folds during the first 1½ hours after mixing the dough. Apply the first fold about 10 minutes after mixing and the second fold during the next hour (when you see the dough spread out in the tub, it's ready for the second fold). If need be, it's okay to fold later; just be sure to leave it alone for the last hour of rising.
- To fold the dough, dip your active hand in the container of warm water to wet it so the dough doesn't stick to you. With your moistened hand, reach underneath the dough and pull about one-quarter of it out and up to stretch it until you feel resistance, then fold it over the top to the other side of the dough. Repeat four or five times, working around the dough until the dough has tightened into a ball. Grab the entire ball and invert it so the seam side, where all of the folds have come together, faces down. This helps the folds hold their position. The top should be smooth.
- When the dough relaxes a bit and flattens repeat the process for the second fold. When the dough is triple its original volume, about 5 hours after mixing, it's ready to be divided.
- Divide: Moderately flour a work surface about 2 feet wide. Flour your hands and sprinkle a bit of flour around the edges of the tub. Tip the tub slightly and gently work your floured free hand beneath the dough to loosen it from the bottom of the tub. Gently ease the dough out onto the work surface without pulling or tearing it.
- With floured hands, pick up the dough and ease it back down onto the work surface in a somewhat even shape. Dust the area in the middle, where you'll cut the dough, with a bit of flour. Cut the dough into 2 equal-size pieces with a dough knife or plastic dough scraper.
- Shape: Dust 2 proofing baskets with flour. Shape each piece of dough into a medium-tight ball. Place each seam side down in its proofing basket.
- Proof: Lightly flour the tops of the loaves. Set them side by side and cover with a kitchen towel, or place each basket in a non-perforated plastic bag.
- Plan on baking the loaves about 1¼ hours after they are shaped, assuming a room temperature of about 70°F (21°C). If your kitchen is warmer, they will be optimally proofed in about 1 hour. Use the finger-dent test to determine when they are perfectly proofed and ready to bake, being sure to check the loaves after 1 hour: Poke the rising loaf with a floured finger, making an indentation about ½ inch deep. If it springs back immediately, the loaf needs more proofing time. If the indentation springs back slowly and incompletely, the loaf is fully proofed and ready to bake. With this bread, 15 minutes can make the difference between being perfectly proofed and collapsing a bit.
- Preheat: At least 45 minutes prior to baking, put a rack in the middle of the oven and put 2 Dutch ovens on the rack with their lids on. Preheat the oven to 475°F (245°C). If you only have 1 Dutch oven, put the second loaf into the refrigerator about 20 minutes before baking the first loaf and bake the loaves sequentially, giving the Dutch oven a 5-minute reheat after removing the first loaf. Alternatively, you can keep the second loaf in the refrigerator overnight, in its proofing basket inside a non-perforated plastic bag, and bake it early the next morning; if you do this, put the second loaf in the refrigerator immediately after shaping.
- Bake: For the next step, please be careful not to let your hands, fingers, or forearms touch the extremely hot Dutch oven.
- Invert the proofed loaf onto a lightly floured countertop, keeping in mind that the top of the loaf will be the side that was facing down while it was rising-the seam side. Use oven mitts to remove the preheated Dutch oven from the oven. Remove the lid. Carefully place the loaf in the hot Dutch oven seam side up. Use mitts to replace the lid, then put the Dutch oven in the oven. Maintain the temperature at 475°F (245°C).
- Bake for 30 minutes, then carefully remove the lid and bake for about 20 more minutes, until at least medium dark brown all around the loaf. Check after 15 minutes of baking uncovered in case your oven runs hot.
- Remove the Dutch oven and carefully tilt it to turn the loaf out. Let cool on a rack or set the loaf on its side so air can circulate around it. Let the loaf rest for at least 20 minutes before slicing.

- Add to bread machine according to owner's manual (my machine does liquids first); program for DOUGH or MANUAL.
- At the end of the cycle, place on lightly floured surface, rolling into a large rectangle; start at the longest end and roll up tightly, pressing seams and tapering each end, tucking under.
- Place loaf on a greased baking sheet or stone; cover and let rise for one hour until doubled.

FRENCH BREAD WITH EGG WHITES
This is a really nice French bread from Bernard Clayton's New Complete Book of Breads. Folding in the beaten egg whites makes for very light loaves with good texture. Prep time includes rising time.

- Beat egg whites till they are stiff; set aside.
- Measure 2 1/2 cups flour into a mixing bowl and add the yeast, sugar and salt.
- Pour in the hot water and the butter, beat 50 strokes with a wooden spoon or 2 minutes with a mixer flat beater.
- Fold in the egg whites by hand or with the flat beater.
- It will take a few moments for the dough to absorb the egg white.
- Add flour, 1/4 cup at a time till the mixture is no longer moist but soft and elastic.
- If it continues to be sticky, add sprinkles of flour.
- Lift the dough from the bowl and place on a lightly floured work surface, or if in the electric mixer, attach the dough hook.
- This is a soft, dough that will be slightly tacky, but not sticky. Knead by hand with a push-turn-fold rhythm, adding sprinkles of flour if the moisture breaks through. Knead for 10 minutes.
- If kneading by hand, occasionally lift the dough above the work surface and bring it crashing down to speed the development of the gluten network.
- If in a mixer, add sprinkles of flour if the dough sticks to the side of the bowl.
- Place the dough in a greased bowl, cover with plastic wrap (or a towel) and put aside to rise at room temperature to double in bulk (about 1 hour, unless using rapid rise yeast).
- Divide the dough into equal parts and roll each under the palm of your hands into a 15-inch long baguette.
- Lay the dough either in French bread pans or directly onto a prepared baking sheet (greased and lightly sprinkled with corn meal). Keep the loaves apart so they do not touch during rising or baking.
- Mix the cornstarch, 1/2 t salt and 1/3 cup water - brush the loaves with this mixture and sprinkle with sesame seeds (or poppy seeds) if desired.
- Let rise, uncovered, till doubled in bulk, about 1 hour.
- Preheat oven to 350 20 minutes before baking and place a pan on the floor of the oven below the bottom rack. Five minutes before baking carefully pour 1 cup hot water into the pan to create steam for a crispy crust (be careful not to burn yourself with rising steam!).
- Bake in the moderate oven for 20-30 minutes, or till the crust is risen and golden brown. (to test, turn one loaf over and thump with the forefinger to make certain it sounds hollow - if not, return to the oven for a few minutes).
- Remove from the oven, remove from pans and place on a metal rack to cool.

BASIC DOUGH FOR WHITE BREAD, FRENCH BREADS, PIZZAS, AND HARD ROLLS
Yield Enough for one 2-quart loaf pan, 2 long fat French loaves, three 18-inch baguettes, two 9-inch round loaves, two 16-inch pizzas, or 12 rolls

- Proof yeast in tepid water with the sugar for 5 minutes (see below), then stir in the cold water. Measure the flours and salt into the food processor fitted with a steel blade. With the machine running, rather slowly process in the yeast and water, adding driblets more cold water if needed, until the dough balls up on top of the blade. Let it revolve 8 to 10 times, then stop the machine and feel the dough. It should be reasonably soft and pliable. If damp and wet, process in a tablespoon or so more flour; if dry, add a dribble more cold water. Let rest for 5 minutes.
- Process the dough another 15 seconds or so, then remove it to a floured board and let it rest 2 minutes. Knead it vigorously by hand a good 50 times, as described below.
- Preliminary Rise. Turn the dough into a 4-quart fairly straight-sided ungreased bowl. Cover bowl with plastic wrap and a towel, and set in a draft-free place-75°F is ideal. Dough will rise to 1 1/2 times its original volume, usually in about 1 hour.
- Second Rise. Turn dough out onto a lightly floured board. Push and pat it into a 14-inch rectangle and fold it into 3, like a business letter. Repeat a second time, then return it to the ungreased bowl, cover, and let rise again. It will rise to 2 1/2 to 3 times its original volume, usually in 1 to 1 1/2 hours. When almost tripled, the dough is ready to form and bake.
- The very special movements here are designed to force the dough to develop a gluten cloak that holds as it bakes free-form into its characteristic loaf. Keep your work surface lightly floured at all times, so the gradually forming cloak will not tear. Set a smooth, lightly floured cotton or linen towel on a large rimless (or upside-down) baking sheet, to hold the formed loaves.
- Cut the dough in half, then fold each piece in half. Cover one; push and pat the other into an 8-by-10-inch roughly rectangular shape.
- Fold in half lengthwise. Press and pound firmly with your fist to seal the edges and flatten the dough to about its original shape.
- Roll the dough so the seam is centered on top, and firmly press a rough trench into the seam with the side of your hand.
- Using the seam as a guide, fold the dough in half lengthwise, and again press long edges together firmly to seal.
- Starting at its center, begin rolling this length of dough under your open palms, gradually moving your hands apart and stretching the dough as you roll. Elongate the dough to about 18 inches (no longer than the length of your baking surface!) and place it seam side up on the long half of the lightly floured towel. I now like to pinch the sealed long edges securely together, just to be sure. Cover loosely with another floured towel while you form the second loaf the same way. Make a pleat in the towel alongside the first loaf, to separate the two loaves, and lay the second in place.
- Final Rise Before Baking. Usually 1 to 1 1/2 hours. Cover both loaves with the floured towel and let rise until more than doubled in volume. Meanwhile, make everything ready for baking, so that you may proceed almost at once.
- To Bake 2 Loaves of French Bread. Slide the oven rack onto the middle or lower-middle level, set the baking stone or tiles upon it, and preheat the oven to 450°F. Sprinkle the sliding board lightly with cornmeal, and have your unmolding board and instant-read thermometer at hand.
- Remove the covering towel and place the unmolding board against the inside side of one loaf, lift the towel on the other side, and flip the loaf, its smooth side up, onto the board, then nudge the loaf onto one side of the sliding board. Repeat with the second loaf. Push the loaves so that the ends of each are at one end of the board.
- With a razor blade held almost flat, make 3 slightly angled slashes in the top of each loaf. Open the oven door. Poise the sliding board so that the ends of the loaves are about 1 inch from the back of the oven, then quickly snatch the board out from under the loaves, depositing them on the hot surface. Immediately pour 1/2 cup water onto oven floor or hot pan (see page 83). Close the door. Bake 20 minutes; reduce temperature to 400°F and bake 10 minutes more, until done (see below). Remove and cool on a rack.
- BAGUETTES. After the second rise, divide the dough into 3 equal pieces. Shape, roll, and stretch each into a thin (2-inch diameter) rope; let rise until more than doubled. Bake as for fat loaves, but check for doneness 5 minutes after reducing heat to 400°F.
- ROUND COUNTRY LOAF (OR LOAVES). After the second rise, turn the dough out onto a floured surface; deflate as described in the master recipe. Use all the dough for 1 large loaf, or divide in half for 2 smaller loaves.
- Pat the dough into a disk. Lift one side and bring it almost over the other; rotate a quarter turn, and repeat 6 to 8 times, to make a thick cushion. Turn the dough over and rotate it between your palms, tucking the sides under as you go, to make a smooth, round loaf.
- Turn the dough over, smooth side underneath. Pinch the edges together, set on a floured towel, and cover with another towel. (Repeat with the remaining dough, if you are making 2.)
- Let rise until more than doubled. Prepare and preheat oven to 450°F as in the master recipe. Transfer the loaves smooth side up to the cornmeal-dusted sliding board. Slash the top with your razor in a decorative pattern, such as a crosshatch or a tree with branches. Slide into the oven, create steam, and bake as in the master recipe. Large loaves may need an additional 10 to 15 minutes at 375°F to finish baking.
- BAKING IN LOAF PAN. Butter a 2-quart loaf pan. Pat the dough into a rectangle slightly smaller than the pan. Fold in half lengthwise twice, as for long loaves, to form an even rectangle. Place seam down in pan, press flat into corners. Let rise until dough has doubled in volume.
- Meanwhile, slide rack onto lower-third level, and preheat the oven to 450°F. Slash top of loaf lengthwise down the center with a razor, and bake for 20 minutes, then reduce temperature to 400°F. When done, turn out of pan and cool on a rack.
- HARD FRENCH ROLLS. After its second rise, divide dough into 12 pieces. Fold each in half. One at a time (or 2 when you are an expert), rotate the dough under the palm of one hand to form a ball. Pinch undersides to seal, and set smooth side down on a lightly floured towel. Cover with a second towel and let rise until more than doubled.
- Prepare and preheat the oven to 450°F, as in the master recipe. Arrange the rolls 3 or 4 at a time smooth side up at the end of your cornmeal-dusted sliding board. Slash each with a circular stroke around the side, or a cross on top. Slide onto baking stone and rapidly continue with the rest. Make steam as in the master recipe. Bake 15 to 20 minutes, then reduce temperature to 375°F and bake a few minutes more until done.
- PIZZA. For two 16-inch tomato pizzas. Set rack on the lower-middle level and preheat the oven and pizza stone to 450°F.
- Form the dough into 2 smooth balls and let rest, covered. After 10 minutes, lightly flour a pizza paddle; flatten and stretch the dough into a thin disk on the paddle by rolling it out and pressing into shape with your fingers, or stretch and twirl it, professional-style, while supporting it on both your fists and twisting them apart-you'll have to see it done to do it!
- Brush the top of the dough generously with olive oil, dust with 1/2 cup of grated hard cheese, and spread over 2 cups of fresh tomato sauce (page 30). Drizzle on more olive oil, sprinkle on 1/2 cup or so of grated mozzarella cheese; a sprinkle of thyme, oregano, or Italian herbs; and a little salt and pepper. Drizzle on more oil and another 1/2-cup dusting of grated hard cheese.
- Slide onto hot baking stone and bake 10 to 15 minutes, or until top is bubbling, edges have puffed, and bottom is crisped. Prepare second pizza while first is baking.
- It's always wise to make sure your yeast is really active. Stir a tablespoon of active dry yeast in a cup with 3 tablespoons of tepid water and a pinch of sugar. In 5 minutes it should begin to bubble. It's alive!
- If you overknead in the processor, the dough can heat up; in addition, the gluten strands can break down, preventing a full rise. To finish the dough, fold it over on itself, then, with the heels of your hands, push it out in front of you, roughly, rapidly, and vigorously. Repeat about 50 times, until it is smooth and elastic and when you stretch the dough it holds together. It should not stick to your hands unless you pinch and hold a piece.
- Flour contains both starch and gluten. The gluten holds the particles together and also allows the dough to hold its rise. However, gluten develops increasing resistance as the dough is worked, and it then becomes more and more difficult to manipulate. Whenever your dough won't roll easily, simply stop where you are and let it rest 10 minutes or so. The gluten will relax, and you can continue.
- Ideal temperatures are 70° to 75°F. Warmer, the rise is too fast and you miss out on flavor development. Colder is fine, even down to a refrigerator chill-you get flavor development-but it simply takes the dough longer to rise: the colder the environment, the longer it takes.
- French bread not only rises free-form, but it bakes free-form-not in a pan. It is difficult, even frustrating to attempt it without the proper equipment. Here is what you will need.
- A Hot Baking Surface. French bread does not cook properly when baked on a metal sheet. It must be slid upon a baking stone or a pizza stone, or line your oven rack with ceramic quarry tiles-available in some cookware shops or in building-supply stores.
- Unmolding and Sliding Boards. The risen loaf is unmolded from its floured towel and slid onto the hot baking surface. I use 3/8-inch plywood bought at the home-improvement store, an 8-by-20-inch board for unmolding and for sliding a single loaf, and a 20-inch board 2 inches narrower than the width of my oven for sliding several long loaves or rolls.
- Cornmeal. A light dusting of coarse cornmeal on the sliding board keeps the dough from sticking.
- Steam. To prolong the rise and set the crust, you need steam the first few seconds of baking. In an electric oven, toss 1/2 cup water into the bottom, just before closing the door. In a gas oven, set a hot cast-iron frying pan on the lowest level as you preheat, and toss the water into that when the time comes.
- If you prefer to make the dough entirely by hand, mix the ingredients in a bowl with a sturdy wooden spoon, then turn dough out onto a lightly floured work surface. For the first few minutes, pick it up with a scraper and slap it down roughly, and continue a number of times, until the dough begins to have body. Let rest 5 minutes. Then proceed to knead it with your hands as described below.
- The loaves should feel light, they should make a pleasant thump when tapped, but they are not done until an instantread thermometer, left in for several seconds, reads 200°F.
RUSTIC FRENCH BREAD
From "The Joy of Cooking" latest edition. This is my first time baking with a sponge starter. It is very easy and it makes a delicious loaf. I have made twice already with great results! This makes 2 loaves.

- Plan on making sponge first.
- I use active yeast and mix with water first to proof it. After 5 minutes, mix in flour with plastic or wood utensil until starter leaves side of bowl. I like to use a glass mason jar with lid. Let sit at least 6 hours in warm place until it triples, refrigerate if not using right away(take out and leave at room temperature for an hour before use).
- Mix in 4 1/2 cups of flour (I used 2 cups whole wheat and the rest white), water, sponge starter, salt. Knead for about 10 minutes. Dough should be sticky, but not stick to your hands. Place in lightly oiled bowl and turn over once to coat.
- Let rise until double in bulk (about 2-3 hours).
- Punch down and shape into 2 loaves on 2 cookies sheets dusted with flour.
- Place in warm place (I heat oven alittle and place in it .)Let rise until double.
- Preheat oven to 450. Place a small pan on lower shelf to hold 2 cups of boiling water. Score top of loaves with and x.
- Place boiling water in pan on lower shelf, place loaves on center shelf and bake for 40 minutes. I baked mine for 30. Bottom of bread should sound hollow. I agree as stated by reviewer, 450 degree was too high a temperature for full 40 minutes. I baked until golden brown all over for 30 minutes, turned off oven with bread inside for last 10 minutes directly on rack.
- Turn off oven and let sit for 10 minutes to develop crust. Take out and let cool off on cooling rack. I served with my recipe for roasted garlic.
