- Preheat oven to 375 degrees F.
- In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.
CORNISH GAME HENS WITH GARLIC AND ROSEMARY
The fragrant roasted birds are served with a pan sauce containing whole garlic cloves. Cornish Game Hens with Garlic and Rosemary. Pour a light Chianti throughout the meal.

- Preheat oven to 450°F. Pat hens dry with paper towels. Season cavities lightly with salt and pepper. Place 1 lemon wedge and 1 rosemary sprig in cavity of each hen. Rub hens with 1 tablespoon oil. Season outside of hens lightly with salt and pepper. Arrange in heavy large roasting pan. Scatter garlic around hens.
- Roast hens 25 minutes. Reduce oven temperature to 350°F. Pour wine, broth and remaining 2 tablespoons oil over hens. Continue roasting until hens are golden brown and juices run clear when thigh is pierced at thickest part, basting every 10 minutes with pan juices, about 25 minutes longer.
- Transfer hens to platter, pouring any juices from cavity into roasting pan. Tent hens with foil to keep warm. Transfer pan juices and garlic to heavy medium saucepan. Boil until reduced to sauce consistency, about 6 minutes.
- Cut hens in half lengthwise. Arrange on plates. Spoon sauce and garlic around hens. Garnish with additional rosemary sprigs and serve.

- In a large, non-reactive bowl, mix onion, garlic, lemon juice, olive oil, white wine, Worcestershire sauce, hot pepper sauce, pepper, celery salt, and salt. Place Cornish game hens in the bowl, coating evenly with the marinade mixture. Cover, and marinate in the refrigerator at least 4 hours.

- In a large skillet or saucepan, saute celery and onion in 2 tablespoons butter until tender. Remove from the heat. Stir in cornbread, bread crumbs, pimientos, broth, egg, poultry seasoning, 1/2 teaspoon salt and 1/4 teaspoon pepper; mix well. , Stuff each hen with 3/4 cup stuffing. - Preheat the oven to 375°F Heat the olive oil in a large flame-proof casserole and add the onion, garlic and bacon; sauté 5 to 6 minutes, until the onion has softened.
- Brush the hens with a little melted butter and season well.
- Lay the hens on top of the onion mixture and place the other vegetables around hens. Add the chicken stock, wine and herbs.
- Cover and bake for 20 minutes, then remove the lid and brush with the remaining melted butter; bake for another 25 to 30 minutes, until golden.
- Transfer the hens to a warmed serving platter and cut each in half with poultry shears.
- Remove the vegetables with a slotted spoon and arrange them around the hens. Cover with foil and keep warm.
- Discard the herbs from the pan juices. In a small bowl mix the butter and flour to form a paste. Bring the liquid in the pan to a boil and then whisk in teaspoonfuls of the paste until thickened.
- Season the sauce and serve with the Rock Cornish hens and vegetables, garnished with fresh herbs.

CORNISH GAME HEN: SPATCHCOCK HEN
Steps:
- Preheat a panini press on high.
- Place the game hen breast side down on a cutting board. Using scissors or poultry shears, cut from the neck to the tailbone to remove the backbone. Once you remove the backbone you will be able to see the inside of the bird. Make a small slit in the cartilage at the base of the breastbone to reveal the keel bone. Grab the bird with both hands on the ribs and open up like a book, facing down towards the cutting board. Remove the keel bone. Cut small slits in the skin of the bird behind the legs and tuck the drumsticks into them in order to hold them in place. Season on both sides with salt and pepper.
- Spray the bottom of the panini press with the nonstick cooking spray. Place the bird, skin side up onto the press, pray the skin side with non-stick cooking spray and close the lid. Top the press with a 10-pound weight and cook for 8 to 10 minutes or until the skin is golden brown.
- Allow to rest 3 minutes before serving.

- Sprinkle in cavity of each hen.
- Truss hens.
- Heat butter, lemon and paprika to make basting sauce.

- Put the hens on a cutting board, breast side down. Use kitchen shears to cut out the backbones. Open the hens to expose the ribs and then flip them breast side up. Use the palm of your hand to press down between the breasts to slightly flatten the hens. Put the hens in a large resealable zip-top bag, and then add the buttermilk, garlic powder, onion powder, cayenne, dried rosemary and 1 tablespoon salt. Shake well and refrigerate for at least 2 hours and up to 8.
- About 2 hours before ready to serve, take the hens out of the refrigerator and let them marinate at room temperature for 1 hour.
- Place a wire rack on top of a baking sheet. Fill a Dutch oven with 2 inches of oil and bring to 350 degrees F on a deep-fry thermometer over medium-high heat.
- While the oil heats, remove the hens from the marinade and pat dry. Put the flour in a large, wide, shallow bowl with 1 teaspoon salt. Toss the hens to coat in the flour.
- Put one of the hens in the hot oil, skin side down and reduce the heat to medium. Cover and cook for 5 minutes then uncover and cook for 5 minutes more. Turn the hen over and cook for 5 minutes. Flip and cook for 5 minutes more. Continue to cook, turning occasionally, until cooked through, up to a few minutes more. Carefully remove the hen from the oil and transfer it to the prepared baking sheet. Sprinkle with salt.
- Return the oil to 350 degrees F and fry the other hen in the same way. Transfer the second hen to the prepared baking sheet and let them stand at room temperature for 10 minutes.

- Rinse hen with cold water & pat dry. Season with salt & pepper inside & out.

ROCK CORNISH GAME HENS IN RASPBERRY SAUCE

- Clean birds and pat dry.
- Pour 2 tablespoons oil into a 10- to 12- inch frying pan over medium high heat. Add birds, a few at a time (do not over-crowd), and brown all over, about 5 minutes per bird; add oil as needed.
- Arrange birds, breast up and slightly apart, on a rack in a 12 X 17" roasting pan.
- Roast birds at 375 F oven until breasts are moist in center but not wet-looking (cut into breast just above wing joint to test), 1 hours (internal temp should be 165 degrees).
- Remove birds to a platter; if needed, keep warm in a 150°F oven up to 30 minutes. Reserve roasting juices.
- Make sauce: Add to your frying pan sugar and 1 tablespoon vinegar.
- Cook over medium high heat until sugar liquefies and turns a golden caramel color, 3 to 5 minutes.
- While stirring, add remaining vinegar; simmer, stirring, until caramel dissolves, about 2 minutes.
- Add broth and quail hen roasting juices; boil, uncovered, until reduce by half, about 15 minutes.
- Mix cornstarch and water; stir into sauce. Stir until boiling. Add raspberries, brandy, lemon juice, and salt and pepper to taste.
- Pour sauce over the birds and serve.

- Heat a small skillet over medium.
- Add cumin seeds; heat 1 minute.
- Add oregano; cook and stir 30 seconds or until cumin is lightly toasted.
- Add 1 teaspoon oil and garlic; cook 30 seconds.
- Remove from heat.
- Blend cumin mixture and remaining ingredients, except hens, in a small bowl.
- Wash hands.
- Rinse hens and pat dry.
- Lightly salt and pepper inside of hens.
- Secure wings to hens and tie legs together with string, if desired.
- Place marinade in a large resealable plastic bag; add hens and seal bag.
- Wash hands.
- Turn bag to coat hens evenly with marinade.
- Refrigerate at least 8 hours or overnight, turning occasionally.
- Set up grill for indirect cooking: For gas grill, preheat all burners on high.
- Turn one burner off; place food over "off" burner.
- Reset remaining burner(s) to medium.
- Close lid.
- For charcoal grill, arrange hot coals around outer edge of grill; place disposable pan in open space; place food over open area.
- Close lid. Heat to medium.
- Wash hands.
- Remove hens from marinade; discard leftover marinade.
- Place hens (not touching) over indirect heat on grill.
- Wash hands.
- Grill hens, covered, 50 to 60 minutes or until done (internal temp 180ºF).
- Let stand 5 minutes before serving.
- Serving Suggestion: Serve with black bean salad and corn on the cob. Refrigerate leftovers.
