FRENCH VANILLA CREPES
I had to make a fancy dessert for about 45 people so I made one up. I served these crepes filled with a sweet ricotta filling, froze them and drizzled them with raspberry and chocolate sauce and whipped cream. They were a huge hit and very simple. They work great at breakfast time with fruit or egg filling too.

- Combine eggs and salt. Beat in flour alternately with milk.

FRENCH CREPES
A quick and easy recipe for real crepes. Use with sweet fillings. Time does not include the 30-minute rest for the batter.

Steps:
- Put the flour and salt in a bowl. Make a well. Pour in the slightly beaten eggs into the well. Stir with a fork until mixed.
- Stir in the rum. Add the milk slowly, stirring constantly with a fork. The batter should be smooth, so any lumps need to the broken up and blended inches Let the batter sit for 30 minutes before proceeding.
- Brush a crepe or heavy frying pan (any size) with melted butter.
- When the pan is hot, pour in just enough batter to thinly cover the bottom of the pan. Tilt the pan so the base is completely covered with batter. Cook crepe until golden on the bottom (1 minute or so). Flip with a metal spatula, and cook until the second side is golden.
- Transfer crepe to a plate and cover with foil to keep warm.
- Repeat the cooking process until the batter is used.
- Unfilled crepes can be well wrapped and frozen.
- The recipe can be halved, but then use only two eggs.

VANILLA CREPES
When I was a little girl, my mother would always make us crepes on Sundays. I also loved the smell of vanilla when my mother would make her cookies. So, I would always ask her to make her cookies, and when she refused, I would take out the vanilla and sit it next to me with the cap open, so that I could breathe the aroma. My mother get a kick out of this, and said, well, if it's that important, we'll add a little vanilla kick, just for you. After the first time she put the vanilla in, there was never a last...it became a tradition.

When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden. Repeat with remaining batter.

SWEET CREPES

- Put the flour and salt and in a large mixing bowl. Gradually whisk in the milk. Whisk in the eggs, 1 at a time, and then whisk in the sugar, melted butter, and vanilla. Cover and let rest in the refrigerator for about 1 hour.
- Heat an 8-inch nonstick skillet over medium-high heat. Melt a small pat of butter in the pat and swirl around so that it lightly coats the surface.
- Add 1/3 cup of the batter and move your wrist in a circular pattern to coat the pan with thin even layer of batter. Cook for about 1 minute or until the first side browns lightly, then flip and cook 45 seconds to 1 minute longer. Remove to a plate and repeat with remaining batter.
- Fill with jam, honey, sugar, chocolate hazelnut spread, peanut butter, bananas - anything sweet that you enjoy from your pantry.
VANILLA COGNAC CREPES
A splash of Cognac adds warmth to these basic vanilla crepes. Try them with sautéed apples and a drizzle of caramel sauce.

- Whisk all the ingredients vigorously until the crepe batter is completely smooth; allow it to rest in the refrigerator for at least 20 minutes before making into crepes.
- Melt a little butter in a crepe pan or large skillet over low-medium heat.
- Add 3 tablespoons of batter to the pan and swirl until the bottom of the pan is covered with batter.
- Cook the crepe for 1 minute, or until the crepe is slightly moist on top and golden underneath.
- Loosen the edges of the crepe, slide the spatula under it, and then gently flip it upside down into the pan.
- Cook for 1 minute and transfer the cooked crepe to a plate to keep warm.
- Repeat with the remaining batter.

SPELT CREPES
We all love, love crepes but we recently discovered our dd does better when not eating traditional wheat. These crepes are beyond delicious!

- In a large bowl, whisk the spelt flour, baking soda, salt, sugar, eggs, buttermilk, water, and oil to form a very smooth and thin batter. Or place in a blender and mix until smooth. Best if you can do this the night before - otherwise you can let it sit for 30minutes before baking (although they are still yummy if you cant wait).
- Over medium heat, heat an 8-inch frying pan or a few minutes. Add the 1/2 teaspoon of butter or coat with cooking spray. You will only need to do this at the start.
- Using a dry measuring cup, add a scant 1/4 cup of prepared crepe batter to the frying pan (you may need up to 1/3 cup if using a larger pan). Twirl the pan so that the batter covers the bottom of the pan in a thin layer. The first couple of crepes are often a write-off (or snack for the chef).
- The crepe will be ready to flip when it appears slightly dry on top and golden on the bottom (approximately 1 1/2 to 2 minutes). To flip, I usually run a knife around the edge and then use my thumb and forefinger to flip it or slip a rubber spatula beneath. The crepes will only require about 30 seconds of cooking on the other side.
- Stack the crepes on a plate as you go. You can keep them warm in a 200 degree F. oven or they are great served at room temperature.
- They are yummy filled with nutella, peanut butter & bananas, plain & sprinkled with powdered sugar or our fave - filled with sautéed cinnamon apples & plain, non-fat greek yogurt.

KATE'S BASIC CREPES
This is my foolproof method for crepes. There are step-by-step photos in the French Forum to go with it. Use oil for savory crepes, sweet butter for dessert crepes. Depending on your taste and the weather (humidity affects the batter), use anywhere from 6 - 8 eggs. And check out the Crepes! cookbook for dozens of crepe fillings and recipes posted here on 'Zaar.

Steps:
- First, combine the flour, eggs, salt and oil in a large bowl so you have plenty of room to whisk and combine these ingredients well. Then add about a quarter of the milk and mix till smooth.
- When it is smooth, add the balance of the milk all at once and mix gently until you have achieved a homogenous batter --NO LUMPS (Sans Grumeaux!).
- Then let the batter sit at room temperature for at least half an hour -- Now your batter is ready.
- Heat your skillet or, if you are lucky enough to have one, your crepe pan, add oil or butter or a combination of both--just enough to give the pan's surface a sheen, and add just enough batter to make a very thin veil across the pan.
- Then, using a spatula, carefully turn your crepe once it begins to brown around the edges and cook it on the other side.
- When it is lightly browned on both sides, remove it from the pan and lay it on a warm plate.
- Repeat the process, stacking your crepes one on top of the other.
