SMOKED SALMON CUCUMBER BITES

Steps:
- In a small bowl, mix together the sesame seeds, poppy seeds, onion flakes, garlic flakes, black pepper and 1/2 teaspoon sea salt; set aside.
- In a separate bowl, mix together the sour cream, minced dill, lemon zest and remaining 1 teaspoon sea salt; set aside.
- With a peeler, stripe the cucumber, running the peeler from one tip to the other, leaving a small strip of skin in between each peel. Using a mandoline or knife, slice the cucumber on the bias into 1/4-inch slices. Slice the salmon into 2-inch strips.
- Lay out the cucumber slices on a platter. Place about 1/2 teaspoon of the sour cream mixture on each cucumber. Ripple or fold the strips of smoked salmon and place on top of the sour cream mixture. Garnish with dill sprigs and sprinkle with the seasoning mix before serving.
SALMON WITH POPPY SEED SAUCE
I do not like the taste of Salmon but I know that it is good for you, so I tried something that I thought that would add a different twist. My family loves it and it is always a bog hit....enjoy!!!

Steps:
- Turn oven on to 350.
- Season Salmon Steaks wih garlic powder and seasoned salt.
- Cover and put in oven for about 25 minutes. Remove from oven and pour Poppy Seed Dressing over the Salmon and place back in the over for abaout 5-10 minutes. Remove from oven and let cool for about 2 minutes.
- This goes good with steamed rice and or yellow rice with any veggie.
SEEDY SCONES WITH SMOKED SALMON

- Heat the oven to 220C/200C fan/gas 8 and line a baking sheet with baking parchment. Tip the flour, ½ tsp salt and baking powder into a bowl and stir to combine. Rub the butter in using your fingertips for around 5 mins until the mixture resembles breadcrumbs. Quickly stir in the milk using a cutlery knife. Bring the mixture together with your hands, then knead briefly on a lightly floured surface and form into a ball (be careful not to overwork the dough). Flatten the dough into a 16cm circle, then cut into eight triangles. Transfer to the prepared baking sheet.
- Mix the sesame seeds, poppy seeds and a grind of black pepper together in a small bowl. Brush the scones with the beaten egg, then sprinkle with the seed mixture and a pinch of sea salt flakes. Bake for 18-20 mins until cooked through. Leave to cool on a wire rack until just warm. To freeze, leave to cool completely, then pack into food bags and freeze for up to three months.
- Combine the soft cheese with the spring onions and chives. Serve the scones slightly warm with the soft cheese mixture and smoked salmon, with some capers and dill fronds scattered over, if you like.

MARINATED SMOKED SALMON WITH POPPY SEEDS

- Whisk together the poppy seeds, orange zest and juice, vinegar and oils with some black pepper and a pinch of salt - be sparing with the salt, as smoked salmon is naturally quite salty.
- Carefully separate the slices of salmon, then put into a mixing bowl with most of the radishes and spring onions. Drizzle over the dressing and gently toss together lightly - using your hands is best. Let the salmon marinate for just 5-10 mins while you toast the bread - any longer and the vinegar will begin to 'cook' the fish.
- Spread the salmon over a large plate or platter, pour over any dressing left in the bowl, then scatter over the reserved radishes and spring onions. Bring to the table with toasted bread and a few forks, and let everyone help themselves.
