I've made this for years... its one of our favorite salads. I hope you enjoy it too! (the time doesn't include refrigerating it overnight)

Steps:

  • Combine all ingredients & mix well.
  • Place in refrigerator and let stand overnight.

6 cups fresh cucumbers, thinly sliced
1 cup red bell pepper, thinly sliced
1 cup green bell pepper, thinly sliced
1 cup white vinegar
1 red onion (cut into thin rings)
1/2 cup sugar
1 1/2 teaspoons celery seeds
1/2 teaspoon garlic powder
1 1/2 teaspoons salt

Vinegar and Sugar Cucumber image

Steps:

  • In a large bowl mix first 3 ingredients.
  • Peel and slice cucumbers and onion and add to vinegar/water/sugar mix.
  • Cover and refrigerate for 1 hour before serving.
  • If all the cucumbers and onions are eaten reserve the vinegar/water/sugar mix and add fresh cucumbers and onion.
  • My servings are an estimate, as I can eat the whole bowl myself :) The cooking time is actually the refrigeration time.

1 cup sugar
1 cup white vinegar
1 cup water
4 cucumbers, peeled and sliced
1 medium red onion, sliced

JUST CUCUMBER SLICES

This is a simple recipe to have as a refreshing side dish. It's especially good for picnics, bar-b-ques, potlucks and buffets. If you like your slices on the tart side cut back on the sugar a little bit. Please note it will need to be chilled at least 3 hours.

  • In a bowl toss together the cucumbers, onion, if using, and dill.
  • Combine sugar, vinegar, water and salt and bring to a boil.
  • Pour over cucumbers.
  • Stir to coat.
  • Cover and refrigerate 3 hours or overnight.

Steps:

  • Mix cucumbers, onions, peppers and salt in one bowl and set aside.
  • Put vinegar, sugar, celery seed and mustard seed in a cooking pot and bring to a boil.
  • Remove from heat and let cool for one hour before pouring over cucumber mixture.
  • Pour mixture over vegetables.
  • Put in jars and store in refrigerator.
