BLUEBERRY & LEMON FRIANDS

Steps:
- Preheat the oven to fan 180C/conventional 200C/gas 6. Generously butter six non-stick friand or muffin tins. Melt the butter and set aside to cool.
- Sift the icing sugar and flour into a bowl. Add the almonds and mix everything between your fingers.
- Whisk the egg whites in another bowl until they form a light, floppy foam. Make a well in the centre of the dry ingredients, tip in the egg whites and lemon rind, then lightly stir in the butter to form a soft batter.
- Divide the batter among the tins, a large serving spoon is perfect for this job. Sprinkle a handful of blueberries over each cake and bake for 15-20 minutes until just firm to the touch and golden brown.
- Cool in the tins for 5 minutes, then turn out and cool on a wire rack. To serve, dust lightly with icing sugar.

- Pre-heat oven to 200deg.
- C.
- Lightly grease 12 friand moulds.
- If friand moulds are not available, muffin tins can be used.
- Place dry ingredients in a large mixing bowl and stir to combine.
- Add egg whites and butter and stir again until the mixture is smooth.
- Spoon evenly into friand moulds and bake in the oven for about 20 minutes or until the tops have started to crack and the edges are golden brown.
- Remove from oven and allow to rest in moulds for 5 minutes before turning out onto a wire cake rack to cool completely.
- Dust friands with icing sugar before serving.
- Variations: Before baking, friands can be topped with raspberries, rhubarb or blueberries.
- 2 tablespoons poppy seeds and the grated rind of 2 lemons, oranges or mandarins can be added to the dry ingredients.
- If using citrus in the mixture, a glaze of melted marmalade can be brushed on the cooked friands whilst they are cooling.
- Friands are best eaten on the day they are made.

RASPBERRY FRIANDS
I was given a cookbook for Christmas and this was the first thing I made..yummm! (You can use a muffin tin if you dont have friand moulds.)

- Preheat oven to 220°C.
- Spray a tray of friand moulds (or a muffin tray) with non stick baking spray.
- Place the ground almonds, icing sugar and flour in a mixing bowl.
- Add the unbeaten egg whites and mix together.
- Add the melted butter and raspberry essence and mix well.
- Spoon approximately a tablespoon of mixture into each mould. Place a few raspberries in each mould then cover with the remaining mixture.
- Bake for 5 minutes, then turn oven down to 200C and bake a further 12-15 minutes.
- Cool in tin for 5 minutes before turning out on to wire rack to cool.

Old fashioned French cake now a trendy cafe item "Down Under". I like these because they are so quick and easy to make; minium effort, maxium affect. My sister in law in Australia introduced me to them.

Steps:
- Preheat oven to Gas 5, 200-210C, 400-425 degrees F.
- Grease 12 muffin cups or friand pans.
- Combine ground almonds, sieved sugar and flour in medium bowl.
- Add egg whites and cooled melted butter and mix with wooden spoon.
- Pour or spoon mixture into prepared pans.
- Bake about 25 minutes, turning pan/s during cooking.
- Friands should spring back to the touch Variations: Before baking- Scatter sliced strawberries on top.
- Add juice and grated rind of lemon to batter, top with raspberries.
- Scatter sliced plums or nectarines or peaches on top and add a tsp of almond essence to batter.
- Any flavourings work plus adding some finely chopped chocolate, white or dark works well with raspberries.

BERRY FRIANDS
Very simple, very nice. No whisking, no folding, just simple stirring required. And you can substitute the blueberries with any type of berry, or even choc-chips or slivered almonds. This one is definitely a good thing!

- Preheat oven to 180 degrees Celsius.
- Melt the butter either in the microwave or in a saucepan over low heat on the stove. Set aside.
- Sift the icing sugar, flour and baking powder together into a large bowl. Add the almond meal and stir to combine.
- Add the egg whites and stir to combine.
- Add the butter and stir to combine. Don't worry if there are a few lumps, just make sure there aren't too many. Mixture should be medium thick.
- Lightly grease 10 muffin cups of about 1/2-cup capacity. If your tray has 12, grease 10 and fill the remaining cups with water.
- Spoon 2 tablespoons into each cup, then sprinkle 2-4 blueberries on top.
- Bake for 15-25 minutes, or until they spring back lightly when touched.

MY FRIEND THE FRIAND
The friand is a small, moist, dense, rich almondy cake. It is truly awesome. I can never stop at just one. I like to eat it fresh out of the oven, with a tablespoon of fresh cream. Wonderful. If you feel like a treat, add some fresh strawberries with the cream :). From Simple Food by Jill Dupleix

Steps:
- Heat oven to 200 degrees C.
- Melt butter and allow it to cool.
- Use 1 tablespoon to coat 10 muffin tin moulds or individual oval baking moulds measuring 5 x 10 cm.
- Sift icing sugar and flour into bowl, mix in the ground almonds.
- Lightly beat egg whites with a fork, fold them into dry ingredients.
- Add cooled, melted butter and orange rind, mix well.
- Three quarters fill each mould with mixture and bake on the middle shelf of oven for 10 minutes.
- Turn tray around, and bake for another 5- 10 minutes, till tops are golden, and springy to the touch.
- Leave in the tins for 5 minutes, then gently unmould onto a wire tray and leave to cool.
- Dust the friands with icing sugar to serve.
CHRISTMAS SPICED FRIANDS

- Heat oven to 200C/180C fan/gas 6. Place the butter in a small saucepan and heat until foaming and browned. Remove from the heat and pour through a sieve, then leave to cool. Discard the white solids, leaving only the melted butter. Grease 10-holes of a friand or muffin tin with a little of the butter. Whisk the egg whites in a large bowl until just frothy. Sift over the flour, spices and icing sugar. Scatter with ground almonds and pour in the cooled butter. Fold into the egg whites and mix until smooth and without any lumps. You can chill the friand mix at this stage for 2 days before baking.
- Fill each hole with some of the mix and place the tin or tins on a baking sheet. Bake for 18-20 mins until the friands have risen and are golden and springy to the touch. Remove from the oven and leave to cool for about 5 mins before transferring to a wire rack. Eat slightly warm or completely cool, but the friands are best eaten on the day of baking. Dust with icing sugar before serving with Chestnut fool (see 'Goes well with').

- Feet Trifle. Monica is the trained chef out of the group, but that doesn't stop the rest of the gang from attempting to cook every now and then, with Rachel even getting in the cooking mix in "The One Where Ross Got High."
- Moist Maker. The moist maker is something that is never actually shown on Friends, so fans have absolutely no idea what it looks like. But it is the incredible story that comes from this famous sandwich that makes fans remember it so much.
- Sugar-O's. The popular moment where Jon Lovitz makes a cameo in Friends leads to a hilarious moment involving food. He appears initially to interview Monica about a job as a chef, however, when he appears to sample her food, he actually has the munchies.
- Turkey à la Head. This is one of the most famous images from the history of the entire show, with Monica standing with an uncooked turkey on her head, which has gone on to become something that has been merchandised by the show in order to show just how popular it has become.
- Engagement Ring Lasagna. Another great example of Monica cooking something far too much is when she makes lasagna. While the dish is a great one, she makes way too many in an attempt to get it right.
- Jam Crackers. Anytime Joey comes out with something that he thinks is pure genius always relates to comedy gold, with his proud exclamation that he created "Jam crackers," being a perfect example of that, which spills from the fact that Monica ends up making tons of jam.
- Wax. Wax isn't something that most people would advise to be eaten, but in Friends, that's exactly what happens. Desperate times call for desperate measures when the majority of the group end up stuck in Monica's room while Ross and Rachel have a huge argument in the apartment.
- Thanksgiving Yams. Who could forget the incredible Thanksgiving episode of Friends which involved Brad Pitt being a guest star on the show as an old friend of Ross, who was supposed to be eating healthy until he sees his arch-enemy, Rachel Green.
- Friend Stuff With Cheese. Anytime Friends uses lots of makeup and prosthetics, it's clear something hilarious is going to happen, and while it is normally Monicagets that treatment, for this particular food example it is Joey (who absolutely loves food) that ends up being changed.
- Monica's Candy. Candy is something that everybody can enjoy, and that's why it is no surprise that it gets brought up within Friends. Monica makes her own and kindly puts it out on her apartment door for other people to take for free in order to try.
