AIR-FRIED OLIVES
These fried olives are salty, spicy, crunchy, and very addictive. Serve with ranch or blue cheese dressing for dipping if desired.

Steps:
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Place flour in a bowl. Place beaten egg in a separate bowl. Combine bread crumbs and Parmesan cheese in a third bowl.
- Coat olives first in flour, then in egg, and finally in the bread crumb mixture.
- Place 1/2 of the olives in the basket of the air fryer. Spray the tops with cooking spray.
- Cook for 12 minutes, shaking halfway through cook time. Repeat with remaining half of olives.

FRIED OLIVES
Steps:
- Heat canola oil to 350 degrees F. (Drop a very small piece of bread crumb into the oil if it starts to sizzle the oil is hot enough.)
- Drain the olives.
- Mix flour, garlic powder and chili powder together and place in a shallow dish. Pour eggs into another dish, and bread crumbs with ground black pepper into a third.
- Roll the olives in the flour, then roll them in the beaten egg and finally roll them in the bread crumbs. Set on a plate to give the breading a chance to dry and form a crust while the oil heats.
- When oil is hot, put half the olives into it, being careful not to drop them and splatter hot oil. Fry until golden brown, then remove and drain on paper towels. Be sure to tip the oil out of the center of the olive. Serve on a platter with Manchego cheese cubes and slices of serrano ham.
AIR FRYER FRIED OREOS
This carnival treat is easy to replicate at home with your air fryer. We doctored up pancake mix to create a sweet batter that gets light, golden and crisp. The key to a perfect coating is to get the batter's consistency right-so adjust as needed with extra mix.

- Cut 2 sheets of parchment to fit the basket of a 3.5-quart air fryer without hanging over the edges and set aside. Preheat the air fryer to 350 degrees F.
- Whisk together the egg, milk and vanilla in a medium bowl. Add the pancake mix and sugar and whisk until smooth. The batter should be the consistency of thick cake batter to allow it to coat the cookie and hold its shape. If necessary, adjust the consistency by adding more pancake mix 1 tablespoon at a time.
- Line the basket of the air fryer with a parchment piece and spray lightly with cooking spray. Dip 6 cookies in the batter, letting the excess drip back into the bowl. Arrange the cookies on the parchment in a single layer without touching. (Make sure to place a cookie on each of the four corners so the parchment doesn't fly up during cooking.) Air fry at 350 degrees F until the battered coating is golden brown and puffed, about 7 minutes. Remove and repeat with the remaining sheet of parchment and cookies.
- Dust the fried Oreos with confectioners' sugar just before serving.
FRIED OLIVES

Steps:
- Soak olives in cold water for 15 minutes to reduce brininess. Drain, and pat dry. Stuff each with blue cheese.
- Put flour, egg, and breadcrumbs in 3 bowls. Dredge olives in flour, dip in egg, then dredge in breadcrumbs. Refrigerate until ready to fry.
- Heat vegetable oil in a saucepan over medium until hot but not smoking. Working in batches, fry olives until golden, about 1 1/2 minutes. Transfer to a paper-towel-lined plate using a slotted spoon. Serve warm.
FRIED STUFFED OLIVES
An appetizer from the Lindsay Olive Company. They suggest substituting 5-6 tablespoons of dried tomato tapenade or pesto for the anchovy paste if you like.

- Stuff olives using a pastry bag.

- If using unpitted olives, pit them with an olive pitter (or cherry pitter) to keep them intact.
- Place the onion, garlic, ham, parsley, olive oil and cayenne in a food processor and pulse on and off until everything is pureed and very creamy and smooth.
- Remove to a bowl.
- Using a pastry bag outfitted with a nozzle small enough to fit into the cavity opening of the olive, stuff each olive with the filling.
- Spread the flour onto one plate and the breadcrumbs onto another.
- Heat about half an inch of olive oil in a large, heavy skillet over medium heat.
- Roll the olives in the flour, then in the egg, and finally into the breadcrumbs.
- Fry until the breadcrumbs have turned golden.
- Remove, place on paper towels to drain momentarily and serve.

- In a large bowl, combine beef, soy sauce, Worcestershire, garlic powder and onion powder, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties, indenting the center slightly., Preheat air fryer to 350°. Arrange patties in a single layer in greased air fryer.
