FRIED PIES

Steps:

  • To make the pastry, mix together the flour, granulated sugar and salt. Cut in 1 cup of the shortening until the mixture resembles coarse crumbs. Add 1 of the eggs and the buttermilk and stir until it just comes together. Add a little more buttermilk if needed. Form it into a ball and refrigerate for at least an hour.
  • To make the pies, roll the pastry out into a large square. Trim the edges to make a rectangle. Cut into 8 to 10 long rectangles, using a butter knife.
  • Spoon a tablespoon or so of filling into the top half of one of the rectangles.
  • Use the remaining beaten eggs to seal the edges by folding the bottom half of the rectangle over the top. Then crimp the edges shut with a fork. Repeat with the other pies, filling half with apple pie filling and half with cherry pie filling.
  • Heat shortening in a medium, deep saucepan over medium-high heat to 350 degrees F. Fry the pies until golden brown, 2 to 3 minutes per side. Remove and immediately drain on paper towels.
  • Sprinkle with powdered sugar and serve.

6 cups all-purpose flour
4 tablespoons granulated sugar
1/2 teaspoon salt
1 cup shortening, plus more for frying
2 eggs, beaten
2 cups buttermilk, more if needed
Apple pie filling, canned
Cherry pie filling, canned
Powdered sugar, for sprinkling

Steps:

  • 1. Sift flour and salt together. Cut in the shortening.
  • 2. Add water and mix with fork. Roll out to about 1/8 inch thick on a floured board.
  • 3. Cut with a large cookie cutter (4 inches in a diameter). In each round, place 1 heaping tablespoon fruit filling.
  • 4. Moisten edges with cold water, fold and press edge with a fork.
  • 5. Heat oil in deep fryer, fry pies, a few at a time, 2 to 3 minutes on each side; cook until golden brown.
  • 6. Drain on paper towels. Drizzle glaze over fried pies while warm.

2 c all purpose flour
1/2 c shortening
1 tsp salt
1/2 c cold water
1 can(s) any kind of fruit filling like apple, peach, blackberry, cherry and blueberry
glaze:
1/2 c confectioners' sugar
2 Tbsp milk

FRIED MINI FRUIT PIES

I had leftover pie filling from the campfire pies we made last weekend so I decided to do this with them. So good and super easy, I just drop them in the fry daddy a few at a time and drain on paper towels! Yummy! Remember when McDonalds used to fry their pies??? So good!

Steps:

  • 1. Lay out pie crust. Use a wide mouth jar or glass to cut circles in pie crust.
  • 2. Spoon a tbsp. pie filling on half the circle and fold crust over. Seal edges with a fork
  • 3. Fry in hot oil until golden brown.
  • 4. Drain on paper towels. Cool slightly and sprinkle with powdered sugar if desired.

1 can(s) fruit pie filling (or 2 c. of your favorite home made pie filling)
2 pillsbury refrigerated pie crusts.

Steps:

  • Sift dry igredients into a bowl,then cut in shortening.
  • Add milk gradually,
  • Press into a ball.Roll out to 1/8 inch thick.
  • Cut into rounds or rectangles or squares,in size desired. When filled & folded over you will get half moons or squares or triangles.
  • Place 2 Tablespoons or so in center,moisten edges with water. Fold over and seal edges with tines of a fork.
  • Deep fry at 350* until golden brown.Drain on paper towel and glaze or dust with cinnamon or powdered sugar.
  • Cool well before storing in an air tight container in fridge.

  • Cut bread into 3 1/2-inch rounds using a round cutter.
  • Spread peanut butter into the center of 2 slices of bread, leaving 1/2-inch space around the border. Repeat with the jelly for the remaining 2 slices of bread.
  • Place 1 slice jelly bread and 1 slice peanut butter bread together and press down edges to form a seal. Repeat with remaining slices.
  • Place pies in preheated oil and cook until golden and crispy, about 2 minutes per side. Transfer to a plate lined with paper towels. Dust with powdered sugar and serve.

Steps:

  • 1. Sift flour, salt, sugar and baking powder. Add evaporated milk, egg and oil. Mix well. Chill 2 hours. Sprinkle small amount of flour on flat surface. Roll dough 1/8 inch thick. Cut into 6 inch circles(about the size of a saucer.)
  • 2. While dough chills, cut fruit into quarters and pace in sauce pan with the 2-1/2 cups water. Bring to a boil, reduce heat and simmer for about 40 minutes or until fruit is very soft. Stir in the 2/3 cup sugar. Cool.
  • 3. Place a 1/4 cup fruit on each circle. Fold over, moisten edges and seal using tines of fork. Fry in skillet in shallow oil until puffed and golden brown, turning once. Drain on paper towels. Can be eaten warm or cold.
  • 4. NOTE: The pies can be fried in a deep fryer at 375 degrees, until golden brown.

4 c all purpose flour
1 tsp salt
2 Tbsp sugar
2 tsp baking powder
1 can(s) 14-oz. evaporated milk
1 large egg
2/3 c vegetable oil
FILLING:
1 pkg 16-oz. peaches, apricots or apples
2 1/2 c water
2/3 c sugar
