CRISPY DEEP-FRIED PIZZA

Crispy Deep-Fried Pizza image

Steps:

  • Preheat the oil to 365 degrees F. A deep-fryer is best, but if using a stove top method, fill a cast iron Dutch oven or heavy chicken fryer with oil about 4 inches deep.
  • Roll dough out and cut it in half. Stir the oregano and basil into the pizza sauce. Slice the pepperoni. Spread half of the pizza sauce on half of each side, of the dough, add the cheese and pepperoni, distributing evenly. Apply a thin line of the water to the edge of the dough and fold each over onto itself and press to seal.
  • Check the oil temperature and carefully add the pizza pockets. Cook for 2 minutes, turn over and cook for 1 minute more. Remove to a paper towel lined plate. Transfer the pizza to serving plates and garnish with remaining pizza sauce, Parmesan and fresh basil leaves.
  • Combine all the dry ingredients in bowl of food processor or stand mixer. Or if by hand, combine in a medium bowl. Add the warm water to small glass bowl. Sprinkle the yeast over and let it sit for 10 to 15 minutes. Add oil and yeast mixture to dry ingredients and depending on method using, combine until a dough ball forms. For food processor, pulse on dough setting until dough is smooth and elastic. For stand mixer, slow speed until dough is smooth and elastic. For hand method, knead on lightly floured surface until smooth and elastic. Form the dough into a ball. Lightly oil a large bowl, add the dough ball to it, cover tightly with plastic wrap or a well-floured tea towel, and set in a warm place or a 100 degree F oven until doubled, about 1 hour.
  • Punch down, and let rest for 5 minutes. Divide the dough in half for 2 large pizzas or into 4 equal pieces for calzones or small individual pizzas. Roll the dough into 1/4-inch thick rounds. Cooks Note: Can be made ahead and also freezes well.

1 teaspoon sugar
1 teaspoon sea salt
1 tablespoon active dry yeast
1 cup warm water (110 to 115 degrees F)

Pan-Fried Pizza image

Steps:

  • Combine flour, yeast and salt in a food processor. Turn machine on and add 1/2 cup water and 2 tablespoons oil through feed tube. Process for about 30 seconds, adding more water, a tablespoon or so at a time, until mixture forms a ball and is slightly sticky to the touch. (If mixture becomes too sticky, add flour a tablespoon at a time.)
  • Put one tablespoon olive oil in a bowl and turn dough ball in it. Cover bowl with plastic wrap and let rise until dough doubles in size, 1 to 2 hours. When dough is ready, re-form into a ball and divide it into 4 pieces; roll each piece into a ball. Place each piece on a lightly floured surface, sprinkle with a little flour, and cover with plastic wrap or a towel. Let rest until each puffs slightly, about 20 minutes.
  • When ready to cook, press one ball into about a 10-inch round. Use a little flour, if needed, to prevent sticking and a rolling pin, if desired. Film a 10-inch skillet with olive oil and turn heat to medium. When oil shimmers, put dough in pan and adjust heat so it browns evenly without burning. (If dough puffs up unevenly in spots, push bubbles down.)
  • Turn dough, then top browned side with tomato sauce, cheese, a bit of salt and pepper, and, if you like, prosciutto and/or basil leaves. If top is now heavily laden, cover pan and continue cooking, or run it under broiler, just until toppings become hot. With only a couple of toppings, just cook until bottom browns. Repeat with remaining dough; serve hot, warm or at room temperature.

Fried Neopolitan Pizzas image

Steps:

  • Make dough for crust:
  • Stir together yeast and water in a measuring cup and let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
  • Stir together salt and 1 cup flour in a large bowl, then add yeast mixture and 1 tablespoon olive oil and stir until smooth. Stir in just enough remaining flour (1/4 to 1/2 cup) for dough to come away from side of bowl.
  • Turn out dough onto a lightly floured surface and knead, sprinkling with just enough flour to keep dough from sticking, until smooth, soft, and elastic, 8 to 10 minutes. Dust dough all over with flour and put in a bowl. Cover bowl with a kitchen towel or plastic wrap and let dough rise in a warm, draft-free place until doubled in bulk, 1 1/2 to 2 hours.
  • Make sauce and assemble toppings while dough rises:
  • Heat oil (1/4 cup) in a 12-inch heavy skillet over moderately low heat until hot, then cook crushed garlic, stirring, until pale golden, about 1 minute. Add tomatoes and increase heat to moderately high, then cook, stirring occasionally, until sauce is thickened, 12 to 15 minutes. Stir in salt and pepper and transfer to a bowl. Discard crushed garlic if desired.
  • Put cheeses, basil, and minced garlic in separate bowls and keep, covered, at room temperature until ready to use.
  • Fry dough:
  • Heat 1 inch oil in a deep 12- to 13-inch heavy skillet over moderate heat until it registers 350°F on thermometer.
  • While oil heats, divide dough into 8 portions and stretch each portion with floured hands, pressing on work surface, to form 4-inch rounds (don't worry if they are irregularly shaped).
  • Fry rounds 2 at a time, turning over once with tongs, until golden, 2 to 3 minutes per batch, and transfer to a paper-towel-lined platter to drain. (Return oil to 350°F between batches.)
  • Spread each fried dough round with some sauce and sprinkle with toppings. Pizza should be eaten immediately, folded in half.

1/2 cup warm water (105-115°F)
1 teaspoon salt
1 1/2 cups unbleached all-purpose flour, plus additional for kneading and dusting
About 5 cups olive oil
For tomato sauce and toppings
1/4 cup olive oil
5 garlic cloves, 2 crushed and 3 minced
2 lb plum tomatoes, halved, seeded, and finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
6 oz fresh mozzarella (not unsalted), cut into 1/4-inch dice
1 oz finely grated Parmigiano-Reggiano (1/2 cup)
2 tablespoons chopped fresh basil or loosely packed small whole basil leaves

When I was very young my Italian Great Grandmother use to give us this treat (I guess to shut us up) while she was cooking. Now this calls for a sprinkle of sugar... BUT the beauty is you can fill them with sauce, mozzarella, meat, whatever you like. This is also great with any left over/unused pizza dough

Pizza Fritta (Fried Pizza Dough) image

Steps:

  • Heat oil in frying pan.
  • Break off ~2" pieces of dough.
  • Place in hot oil, cook until done (around 3-5 min and turning once).
  • Place on paper towel and let drain (1 min).
  • Sprinkle with granulated sugar.
  • Cut open and place in a teaspoon of jelly (optional), or just eat them as is.
  • --OR--.
  • Do not add sugar/jelly - let cool and just cut open place sauce/cheese/meat/whatever inside then bake in oven for ~3-5min (until done). It's like having an extra good hot pocket LOL.
