SUGARED DATE BALLS

When I was a youngster, Mom always baked these tender old-fashioned cookies dotted with chewy dates and crunchy walnuts. Much to the delight of my family, I've continued her delicious tradition.

Sugared Date Balls image

Steps:

  • Preheat oven to 325°. In a bowl, cream butter and sugar. Beat in milk and vanilla. Combine flour and salt; gradually add to creamed mixture. Stir in dates and nuts. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake until bottoms are lightly browned, 22-25 minutes. Roll warm cookies in confectioners' sugar; cool on wire racks.

FROSTY DATE BALLS

My mom makes these every Christmas. They are really delicious and so pretty too, like they have snow sprinkled on top. Hence the name, "Frosty" :) These can be thrown together in about 30 minutes and keep in an airtight container for about 1-2 weeks.

Steps:

  • Cream butter and 1/3 cup powdered sugar until light and fluffy.
  • Mix in water, vanilla, flour, salt, dates, and walnuts.
  • Roll into balls a little larger than the size of walnuts and bake on an ungreased baking sheet 2 1/2 inches apart at 300 degrees F for 20 minutes (Till soft but NOT brown.).
  • While warm, roll in powdered sugar OR sift powdered sugar over warm cookies.
  • *NOTE: Serving size is approximate!

Steps:

  • Place dates, chocolate and cherries in a food processor; process until finely chopped about 1 minute. Add nuts, coconut and sunflower kernels; process until blended. Add oil and vanilla; process until mixture comes together. Roll into 12 balls. Refrigerate, covered, at least 30 minutes before serving. Store in an airtight container in the refrigerator.

Mom's Frosted Date Balls image

Steps:

  • 1. Sift the flour twice. Add salt. Cream the butter and gradually add sugar. Add milk and vanilla. Sift in flour. Blend in dates and nuts. Roll into 1 inch balls.
  • 2. Place about 3 inches apart on undressed cookie sheet. Bake at 300 degrees F. for 20 minutes or until lightly brown. While still warm, roll in confectionary sugar. Makes about 3 dozen.

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

Steps:

  • In a large bowl, combine Rice Krispies and pistachios. In a large saucepan, combine butter, dates and sugar. Cook and stir over medium heat until mixture is combined., Remove from heat.   • In a saucepan over medium low heat, cook the butter, granulated sugar, and the dates until the sugar has fully dissolved.
  • Remove from heat and stir in the vanilla extract, pecans, and cereal. Use a non-stick spatula to combine everything. Let the mixture cool for several minutes.
  • Use your hands and form the mixture into 1-inch balls. Place the balls on parchment paper or a baking sheet. Dust lightly with powdered sugar (or you can roll them in a bowl of powdered sugar) and store in an airtight container.
