GINGER SPICED HOT COCOA
Steps:
- In a small saucepan heat the milk and ginger over a medium-low heat until scalding, about 4 minutes. While the milk is warming, put cocoa powder and sugar into a mug. Add the water to the mug and stir until the mixture has the consistency of a paste. Remove the ginger from the warmed milk. Add the chocolate mixture to the milk and whisk until slightly frothy. Pour the hot chocolate into the mug and top with chocolate shavings.

CREAMY AND FROTHY VEGAN HOT COCOA
This recipe intrigues me! A thick and creamy hot cocoa with a thick frothy foam on top, mimicking melted marshmallows. You will see a frothy foam form on top as you are mixing it. I recommend that you use Thai Kitchen's Pure Coconut Milk. It has no chemical additives or preservatives like some other brands. Placed here for safekeeping. From My Vegan Cookbook.

Steps:
- You can make this two ways.
- One is by placing all the ingredients into a large saucepan and with an immersion blender, blend everything together for 3 minutes. We want to whip air into it, so it's important to do it for at least 3 minutes.
- If you don't happen to have an immersion blender, you can throw it all into a standing blender and do the same and then pour it into the saucepan. On Medium-high heat stir the cocoa until it almost comes to a boil. DO NOT boil the cocoa, it will change the consistency too much. Turn down to simmer and serve.

FABULOUSLY FROTHY HOT CHOCOLATE
Yummy hot chocolate made without using chocolate. It sounds to good to be true, but it isn't! Just wait till you try it and see for yourself. My five year old sister adores this and she loves to scoop up the yummy froth. You can even add a little bit of coffee (lesser quantity than Milo) to add a mocha hit.

Steps:
- Pour about 200ml of milk into your microwave safe bowl. Put it in the microwave on high for 2 minutes.
- Get your favourite mug out. Fill it with the 3 teaspoons Milo & the sugar.
- Mix it together using a teaspoon.
- When milk has become warm, whisk it (using the whisk of course!) immediately. You should notice a frothy layer of milk forming at the top.
- Pour the hot milk (with exception of froth) directly into the mug from the bowl. All the milk that is not frothy should automatically pour into the cup.
- By this stage, you should have the milk froth left in your bowl. Before you do anything else, mix the Milo and hot milk together in the cup.
- Using a spoon, scoop out the froth from the bowl and layer it on top of your Milo Hot choccie. The amount of froth and how fluffy it turns out depends on how well you have whisked the hot milk.
- Now, sprinkle a little bit of extra Milo or cocoa powder on top of the froth, and let it sit for about a minute.
- Your hot chocolate is ready. Sip it. Spoon it. Lick it. Yum.
- ENJOY!

SPICED HOT CHOCOLATE
Adapted from a recipe in Better Homes & Gardens Meals for 1 or 2. Sorry, made this last night and it tasted like something was missing and I realized it was the cinnamon. It was in the directions, but I accidentally left it out of the ingredients list. It's been updated now.

FLUFFY HOT CHOCOLATE
This is our daughter's favorite hot chocolate recipe. It may look like ordinary cocoa, but a touch of vanilla sets it apart from the rest. And the melted marshmallows give it a frothy body you won't get from a cocoa packet. -Jo Ann Schimcek, Weimar, Texas

SIMPLE HOT COCOA FOR ONE
As with hot chocolate, use any milky liquid you prefer, whether it's from a cow, nuts (almond milk), beans (soy milk), or grains (rice milk). For sweeteners, feel free to substitute maple syrup, honey, or agave nectar for sugar, but start with less, about 1 tablespoon, and taste the combination before adding more.

Steps:
- Whisk together the cocoa, sugar, salt, and about 2 tablespoons milk in a small saucepan over medium-low heat until cocoa and sugar are dissolved. Whisk in the rest of the milk and heat it over medium heat, whisking occasionally, until it is hot. Stir in the vanilla and serve.
- If you like it frothy, blend it in the blender.
- This recipe multiplies easily. When you get up to a quart of milk, use 1/4 teaspoon salt.
