FROZEN FRUIT DELIGHT

Steps:
- Place contents of one frozen mixed fruit package in a microwave-safe dish. Microwave, uncovered, at 50% power for 1 minute. Repeat with remaining mixed fruit., In a blender, place half of the fruit, yogurt, banana and sugar; cover and process until smooth (mixture will be thick). Transfer to serving dishes. Repeat. Serve immediately or freeze for up to 4 hours.

ORANGE DELIGHT
A bright burst of orange flavor. A melt in your mouth dessert. Great for summer freshness.

Steps:
- 1. Mix the box cake according to directions, add the pudding to the cake mix and replace the water with orange juice and the oil with orange flavored olive oil. Bake according to directions in 9"x13" pan Cool.
- 2. Combine the frozen orange juice and ginger ale in a saucepan and bring to a boil.
- 3. Pour the hot o.j. mixture over the marshmallows and stir until melted. Cool
- 4. Bring the mascarpone to room temperature. Combine the mascarpone and cooled o.j. mixtures. Beat until smooth.
- 5. Beat the whipping cream until thick, add the powdered sugar and vanilla. Fold into o.j. mixture.
- 6. Break the cake into small pieces. place a layer of cake In a trifle dish or clear bowl, cover with a layer of cream mixture. Add another layer of cake, followed by another layer of cream, continue with this process until the bowl is filled.
- 7. Decorate with a layer of whipped cream, blackberries and shaved orange zest.
PUNCH DELIGHT

TRIPLE ORANGE DELIGHT

- In a large bowl, whisk orange juice, half-and-half, corn syrup, marmalade, orange rind and vanilla until well blended. Pour into a 13 x 9 x 2-inch baking pan. Cover and freeze for 1 1/2 to 2 hours or until frozen 1 inch from edge and center is slushy.Break into pieces. Transfer to a chilled large mixer bowl. With chilled beaters, beat at low speed until smooth but not melted. Spoon into a freezer container. Cover and freeze at least 1 hour or up to several days before serving.

FROZEN ORANGES
I've been making this recipe for close on 30 years. It's great, but only as great as the ice-cream you use. Don't be tempted to use any more liqueur as the alcohol stops the ice-cream setting (I've tried!) These are wonderful for a dinner party.

Steps:
- Remove a"lid" from the top of each orange (retain the lid).
- Carefully remove all the pulp from the orange-I use a dessertspoon to do this.
- Allow the ice-cream to soften for a minute or two, then working quickly, stir through the liqueur and concentrate and fill the orange shells with this mix.
- Replace the lids.
- Freeze for at least 6 hours but preferably overnight.
- Remove from the freezer about 10 minutes before serving so they go frosty.
- These look good with a sprig of orange or lemon leaves poked into the top before serving*note-don't be tempted to use the pulp in place of the concentrate, the flavour is all wrong.
- Use the pulp for juicing or something.
