OATMEAL FRUIT CRISP

This is a fast dessert recipe that lets you use up apples, pears, berries you have on hand. It is good to use up fresh fruit in season like apples and rhubarb. You can also use frozen sliced fruit - it doesn't need to be thawed before baking. This is a tried and true recipe made many times - Canadian Comfort Food for those long cold winters!

Steps:

  • Preheat oven to 375°F.
  • Slice apples in large greased large casserole dish. You can leave them unpeeled or peeled as you wish.
  • Combine dry ingredients, then cut in margarine until crumbly. Put over fruit and cook for approximately 35 to 45 minutes until fruit is cooked through. Check with a knife - if the fruit is soft and the oatmeal crisp is brown, it is done.
  • You can substitue diced rhubarb, pears, berries like saskatoons or blueberries for part or all of the apples. You may want to sprinkle a bit of cornstarch over top before you put the oatmeal over top to thicken the fruit as it cooks. Apples don't need thickening, but berries and pears are juicier.
  • Serve warm with vanilla ice cream.

4 cups sliced apples
3/4 cup quick-cooking oatmeal
3/4 cup brown sugar
3/4 cup flour
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup soft margarine

OATMEAL APPLE DESSERT

This is a healthy alternative to fruit pie made with traditional pie crust. The oatmeal is in the bottom, the recipe is unique, unlike a cobbler or crisp. It has minimal fat, sugar, and flour. The oatmeal gives a nutty taste. This is not tremendously sweet. The recipe originated with my mom. I always use Macintosh apples because they are most juicy and I like a slight tart taste.

Steps:

  • Mix the first five ingredients using your hand to a crumbly texture. Keep working the mix till the ingredients are integrated well. Grease a 9X9 metal baking pan, pour in the mix and press the mix tightly to the bottom. Be sure to fill the corners, leave no gaps, and try to get the mix slightly up the sides.
  • Peel, core and thin slice the apples. Place apples on top of mix and press down slightly. Depending on the size of apples you may need to adjust the count to fill your pan to the top.
  • Mix the water, cornstarch, 1/4 cup brown sugar and cinnamon. Bring to a boil to thicken and pour carefully and uniformly over the apples.
  • Melt 1 T butter and mix with pecans. sprinkle very lightly with salt to taste.
  • Sprinkle buttered chopped pecans on top.
  • Bake at 325 degrees for one hour. This dish is best the next day.

Category Desserts, Recipe Roundup, Save
  • No-Bake Cookies. Since this is a no-bake recipe, you’ll be left with a wonderful chewy texture from the oats. Though if you wanted something a little more crisp, try baking your oats for about 5 to 10 minutes to give them a nice toasty texture.
  • Apple Crisp. I don’t know anybody that would turn away a bowl of warm apple crisp. It’s sweet, spiced, fruity, and covered in a crunchy oat topping that is to die for.
  • Oatmeal Pie. I have to preface this by saying: if you’re not a fan of oatmeal cookies, then this might not be for you. Want to save this recipe? Enter your email below and we'll send the recipe straight to your inbox!
  • Oatmeal Carmelita Bars. Carmelitas are typically made up of an oatmeal shortbread base, topped with chocolate chips, pecans, caramel, and finished with more of the shortbread crust on top.
  • Jam Filled Oatmeal Bars. As much as I like the caramel version from above, I think the jam bars might be my favorite. I just love the bright color of the jam!
  • Easy Oatmeal Walnut Cookies. One-bowl and freezer friendly? You’ll have to try this recipe! I don’t think we use walnuts enough. I know they can be pricey, but I love their mild flavor and creamy texture.
  • Grandma’s Oatmeal Cake. This unusual cake was new to me, but I’m so glad I found it. Between the tender, lightly spiced cake, and the sweet, crunchy coconut topping, it was such a pleasant surprise.
  • Oatmeal Chocolate Chip Cookie Bars. Chocolate chip oatmeal cookies are pretty delicious, but they don’t hold a candle to these thick and chewy cookie bars.
  • Soft and Chewy Oatmeal Raisin Cookies. Have you given oatmeal raisin cookies a chance? Really? I know that chocolate chip cookies call to us all and peanut butter cookies are hard to resist, but I feel like oatmeal raisin has a bad rap.
  • Glazed Oatmeal Maple Scones with Pecans & Currants. From the pictures, I was a little unsure about this recipe. They don’t look like any scones I’m used to.
