Steps:
- Bring 4 cups of water to a boil in a saucepan.
- In another saucepan, combine the spearmint leaves, sugar, orange slices, cloves and tea bags. Carefully pour the boiling water over the tea mixture and let it steep for 3 minutes. Stir to dissolve the sugar, and then strain the tea into a small warmed teapot or other serving vessel. Serve hot.

- Bring water to a boil, then reduce to a simmer. Add milk, half and half and sugar and simmer for 15 minutes. Add mint and simmer an additional 30 minutes. Strain and serve hot, or chill on a bowl of ice and serve cold.
FRESH FRUIT AND MINT SALAD

- Peel and dice the mango or papaya, and put in a medium bowl. Trim the strawberries' stems and half or quarter, if large. Add to the bowl of fruit. Peel and dice the kiwi, add to bowl. Peel and slice the bananas, add to bowl.
- Cut the top and bottom off the oranges just deep enough to expose the inner fruit. Following the curve of the fruit cut the skin and pith off the orange in panels. Holding the orange over the bowl cut between the membranes to free the citrus segments. Let them fall into the bowl as they are cut free. By hand, squeeze all the juice from the remaining membrane over the fruit, then discard. Repeat with the other orange.
- Lightly stir the honey and Grand Marnier, if using, into the fruit. Strip the mint leaves off the stem, tear, or chop into smaller pieces, and stir into the fruit salad. Add the berries and set aside for 10 minutes or up to 2 hours.
- Serve.

- Bring the water to a boil. When it's boiling, add the sugar and stir until dissolved. Turn off the heat.
- Drop the tea bags and the orange peel into a teapot. Rip the mint leaves and drop them in too. Pour the water into the teapot, put the lid on, and allow to steep for about 10 minutes.
- When you're ready to serve, pour into small glasses, using a tea strainer. If you can, try pouring a good few inches from the glass - this cools down the tea, and creates a light foam on top that is traditional. You can also chill this tea and serve over ice on hot days. Refreshing, and great for your digestion!

- Pour boiling water into a very large bowl. Add the tea bags.
- Let steep for 5 minutes.
- Remove and discard tea bags Stir in sugar and cinnamon until sugar is dissolved.
- Stir in pineapple juice, cranberry juice, and lime juice.
- Remove 3 cups of the mixture.
- Cover and chill the remaining mixture for at least 4 hours or up to 3 days.
- Pour the 3 cups tea mixture into two clean ice cube trays, adding kumquat slices, if desired.
- Cover and freeze until firm.
- To serve, divide prepared ice cubes among glasses.
- Add chilled tea mixture.
- If desired, garnish with fruit and/or mint. Makes: 8 to 10 (about 8-ounce) servings.

- Take a few leaves of the mint in one hand and sharply clap your other hand on top, then drop the leaves into a teapot or cafetiere. Repeat with the rest of the mint, saving a few small sprigs for each glass as a garnish.
