FRIED FLOUR TORTILLA CHIPS
We first had these while on vacation in the Caribbean. After returning, I had to figure out how to make them. We now prefer these to store-bought corn tortilla chips.

Steps:
- Pour 1/4 to 1/2 inch oil in a heavy 10-inch skillet; bring oil to 360 degrees F (182 degrees C) over medium-high heat, about 8 minutes.
- Working in batches, gently arrange tortillas in the hot oil using a slotted spoon; cook, frequently turning tortillas with the slotted spoon, until golden brown, 2 to 3 minutes. Remove chips with slotted spoon and place a paper towel-lined plate to drain.

AIR FRYER FLOUR TORTILLA BOWLS
These cute tortilla bowls are great as DIY tostadas. Just set out all the fillings and have everyone make their own. The bigger the tortilla, the bigger the mold should be. Just make sure it fits in your air fryer. I used an 8-inch flour tortilla and a 4 1/2-inch souffle dish.

Steps:
- Preheat the air fryer to 375 degrees F (190 degrees C).
- Heat tortilla in a large skillet or directly on the grates of a gas stove until soft and pliable. Place tortilla inside souffle dish, patting bottom down and fluting tortilla up the sides of the dish.
- Air fry until tortilla starts to turn golden brown, 4 to 5 minutes.
- Remove tortilla bowl from souffle dish and place upside down in the basket. Air fry until golden brown, an additional 1 to 2 minutes.

HOMEMADE FLOUR TORTILLAS
Traditional flour tortillas - homemade and much better than store bought. Do not substitute vegetable oil or shortening for the lard.

- Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball.
- Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking the remaining dough.

- Add the water and vegetable oil and using your hands, mix together the dough until it is a cohesive ball and all of the liquid has been absorbed. If the dough is too sticky, add more flour 1 tablespoon at a time, as needed. (The dough should be soft and Playdoh-like in texture, but not sticky.)
- Transfer the dough onto your work surface and knead it about 10 times until it becomes smooth all over.
- Divide the dough into 12 equal balls then flat each ball slightly into the shape of a hockey puck. Flour each piece of dough on both sides then set them aside and cover them with a towel.

- Make a well in the centre. Add in the water and vegetable oil, then mix together so that the water absorbs the flour. Use your hands to bring the dough together. The dough should be workable BUT sticky to the touch (sticky dough = soft tortillas).
- Turn dough out onto a lightly floured work surface. Sprinkle the top of the dough with a little extra flour if too sticky. Knead to form a smooth, soft and Playdoh-like ball, about 2-3 minutes.
- Divide the dough into 8 equal balls for larger tortillas, or 9 balls for smaller sized. Working one piece at a time, flatten one ball out with the palms of your hands to resemble a thick disk. Lightly dust both sides with flour and set them aside. Cover with a clean kitchen towel for 10 minutes.
