BBQ RIBS ON THE GRILL
Tender, juicy, delicious - just a few words to describe these ribs. My dad taught me how to make these! Everyone loves them!

Steps:
- Preheat grill for low heat.
- Cut ribs in half and season with steak seasoning. Place ribs, bone-side down, in a foil pan; add water. Cover pan with a sheet of aluminum foil.
- Cook ribs on the preheated grill, adding water every hour if liquid has evaporated, 1 1/2 to 2 1/2 hours. Add barbeque sauce to ribs and continue cooking for 30 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

RIBS ON THE GRILL

Steps:
- Rub the Spice Rub on all sides of the rib racks and place on a sheet pan. Cover with plastic wrap and refrigerate for 24 hours.
- Preheat the grill to 275 to 300 degrees F for about 30 minutes.
- Remove the ribs from the refrigerator and let them come to room temperature.
- In a small bowl, add the mustard, vinegar and 1 cup water, and mix until well combined.
- Place the ribs on the grill, bone-side down, and turn every 5 minutes, brushing with mustard mixture when you turn them. After 30 minutes stop brushing with the mustard mixture, then continue to turn them every 5 minutes until they're done, about 2 hours 30 minutes.
- Serve the ribs with the Homemade BBQ Sauce.
- In a medium bowl, combine the pepper, paprika, garlic salt, seasoned salt and sugar, and mix.
- In a blender, add the habanero peppers and 1/4 cup of water. Blend until liquid.
- In a stockpot set over medium heat, add the tomato sauce, 1 cup water, the brown sugar, hot sauce, lemon juice, molasses, dry mustard, onin powder, paprika, pepper, granulated sugar, vinegar and Worcestershire sauce. Add the pureed habaneros as desired for a spicier sauce. Bring the sauce to a simmer and cook at a simmer until it thickens, 1 to 2 hours.
BEST BARBECUE RIBS EVER

- Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
- Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
- Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.
ST. LOUIS-STYLE GRILLED RIBS
Curry powder is the secret ingredient in my special barbecue rub. It, along with a handful of other dried spices that I always keep in my pantry, gives such intense flavor to these meaty ribs that you don't even need sauce. They are fall-off-the-bone tender.

- Prepare a grill for indirect cooking (with one side lit and the other side unlit) and heat to between 230 and 235 degrees F.
- Brush the ribs on both sides with the Dijon mustard. Rub both sides with Miss Brown's Rib Rub.
- Place the ribs on the unlit side of the grill. Close the lid and cook until beginning to brown, about 45 minutes. Uncover and spritz with the apple juice in a spray bottle. Close the lid and cook for 3 more hours. Wrap the ribs tightly with aluminum foil and cook until the ribs begin to become tender, 1 more hour.
- Unwrap the ribs and cook until very tender, 30 minutes to 1 hour longer. (Brush on sauce if you'd like during last hour of cooking.) Remove the ribs from the grill. Let stand for 5 minutes, then slice and serve.
- Stir together the garlic and onion powders, smoked paprika, brown sugar, curry powder, salt, pepper, celery seeds, chili powder and cumin in a medium bowl. Store in an airtight container for up to 1 month.

Steps:
- 1. Cut ribs into quarter racks and trim all silver fat off.
- 2. Combine in large pan. Water, salt, pepper, garlic, and sliced onion.
- 3. Bring water to a boil.
- 4. Rinse ribs and add to boiling water.
- 5. Reduce heat to simmer after ribs are in and simmer for 45 minutes approximately.
- 6. After 45 minutes make sure the ribs are ready to be grilled.
- 7. Sauce the ribs generously leaving extra sauce for during grilling.
- 8. Throw ribs on the hot ready grill until they are cooked all the way thru.
- 9. Use foil to cook slow if needed.
- 10. Sauce as the ribs cook until they are done flipping them frequently.
- 11. Enjoy!
