Steps:
- Stir chicken broth, lemon juice, 1/2 cup melted butter, 1 clove garlic, mustard powder, and ginger together in a bowl. Cover bowl with plastic wrap and refrigerate marinade for flavors to blend, about 30 minutes.
- Mix 1 cup softened butter, rosemary, thyme, and 2 cloves garlic together in a bowl until rub is evenly combined.
- Separate skin from the meat of the turkey by running your hand under the skin to separate. Spoon rub mixture evenly under the skin in several different parts of the turkey.
- Pour marinade into a meat injector and inject the meatiest parts of turkey with marinade, changing the angle of the needle several times.
- Brush turkey with olive oil and season with salt and pepper; place in roasting pan and cover with plastic wrap. Refrigerate turkey for 12 to 24 hours.

- In a small bowl, combine the soy sauce, oil, sugar, garlic, ginger and mustard. Pour 1/4 cup marinade into a large resealable plastic bag; add turkey. Seal bag and turn to coat; refrigerate for up to 4 hours. Cover and refrigerate remaining marinade for basting., Drain and discard marinade. On a lightly oiled grill rack, grill turkey, covered, over medium heat or broil 4 in. from the heat for 8-10 minutes or until a thermometer reads 170°, turning twice and basting occasionally with reserved marinade. Cut into slices.

GARLIC TURKEY MARINADE RECIPE

- Combine all ingredients in a blender. Process until well combined. Makes enough marinade for 15-20 pound turkey. Whole turkey, cleaned and dried Place turkey in a large heavy duty plastic bag. Wearing rubber gloves, rub generous amounts of the marinade into the meat. Rub the remaining marinade into the outside of the turkey. Place turkey in second plastic bag and seal. This helps keep the pungent odor of the garlic to a minimum in the refrigerator. Put turkey in a large pan or bowl in the refrigerator and refrigerate for 24-48 hours. During that time turn every so often and rub the marinade into the turkey through the plastic bag. Remove the turkey from the refrigerator. Wearing rubber gloves, remove the turkey from the marinade and wipe off some of the clinging garlic and spices. I prefer to roast a whole turkey with the breast down. It will also cook the thighs and legs more quickly and evenly. This breast down method will not give you that beautiful 'Norman Rockwell' turkey you carve at the table, but this method self bastes the breast resulting in a moister turkey. I also do not stuff the turkey as I find you have a moist stuffing but a dry bird. Roast following the package directions or you can smoke the turkey.

- Pat turkey dry. Combine the seasonings and garlic; rub over the outside and inside of turkey. Place lemon and orange wedges in cavity. Place breast side up on a rack in a roasting pan., Bake at 325° for 3-1/2 to 4 hours or until a thermometer reads 180°, basting occasionally with pan drippings. Cover loosely with foil if turkey browns too quickly. Remove turkey to a serving platter; Cover and let stand for 20 minutes before carving., Pour pan drippings and loosened brown bits into a measuring cup. Skim fat, reserving 2 tablespoons. Add enough water to measure 2 cups. In a small saucepan, combine flour and fat until smooth. Gradually stir in drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. - To make marinade, in blender, place all ingredients except turkey and Cajun seasoning. Cover and blend until smooth. Using meat injector, fill injector container to 1-ounce line. Inject marinade into turkey breasts, thighs and legs, every 1 to 2 inches, pushing plunger down slowly. Refill container and continue to inject turkey until marinade is used. (Or pour marinade over turkey in large glass dish.)
- Sprinkle Cajun seasoning inside cavity and over outside of turkey. Fasten neck skin to back with skewer. Fold wings across back with tips touching. Tuck drumsticks under band of skin at tail. Cover and refrigerate at least 8 hours but no longer than 24 hours.
- If using charcoal grill, place drip pan directly under grilling area, and arrange coals around edge of firebox. Heat coals or gas grill for indirect heat.
- Insert barbecue meat thermometer in turkey so tip is in thickest part of inside thigh muscle and does not touch bone.
- Place turkey, breast side up, over drip pan or over unheated side of gas grill and 4 to 6 inches from medium heat. Cover and grill 3 to 4 hours or until thermometer reads 180°F and legs move easily when lifted or twisted. Let stand 15 minutes before carving.

- Place broth and butter into a microwave safe bowl. Set on high for 1 minute until butter has liquified and broth has warmed. Remove from microwave and combine broth and melted butter with lemon juice. Add remaining ingredients and stir through. Let stand for 10 minutes, and stir through once more before using.
- Prepare the bird by patting dry with paper towels. Load marinade into the meat injector, and slowly inject into multiple spots in the turkey. Be sure to really work the breast meat, as it tends to dry out during cooking.
- If there is leftover marinade that you plan to use as a baste, place it into a saucepan, bring to a boil, reduce heat and simmer for 6-8 minutes on medium, or low. Let it cool for 10 minutes, and use as needed.
- If you are not using the marinade as a baste, simply discard it. Do not save it in the refrigerator as it has come into contact with raw meat.
