- Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off bulb. Brush with 1-1/2 teaspoons oil; sprinkle with rosemary. Wrap in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. , Meanwhile, cut the top fourth off the loaf of bread; carefully hollow out enough of the bottom of the bread so cheese will fit. Cube removed bread; set aside. Place cheese in bread. , Cool garlic for 10-15 minutes. Reduce heat to 375°. Squeeze softened garlic into a bowl and mash with a fork; spread over cheese. Replace bread top; brush outside of bread with remaining oil. Wrap in heavy-duty foil. , Bake for 45-50 minutes or until cheese is melted. Serve with toasted baguette, grapes and reserved bread cubes.

GARLIC BAKED BRIE SPIDER
A creepy, crawly, cheesy arachnid appetizer. This spider is sure to weave webs of deliciousness with brie, garlic, herbs, prosciutto and crispy puff pastry.

- Slice a grid on top of a brie wheel; approximately 4 slits horizontally and vertically.
- Insert thinly sliced garlic in the slots.
- To make the spider legs: roll out a sheet of puff pastry dough; then a layer of prosciutto on top; cut 1-2" strips.
- To make the spider's head: take a puff pastry dough and make it into a small ball (the size of a large meatball); slice black olives and insert them into the ball to make the eyes and fangs.
- Position the head and brie wheel on a baking sheet lined with parchment paper.
- Twist each strip of pastry dough/prosciutto and place them around the spider's body to form the legs.
- In a bowl, mix olive oil, rosemary, thyme, basil, salt and black pepper; spoon the mixture over the brie cheese wheel.
- Brush egg wash over the head and legs.
- Bake at 400°F for 15 minutes.
LEMON-GARLIC BAKED BRIE
This is a great recipe to serve as an appetizer for two or three people, but I will make it for just me as a light supper.

- Preheat oven to 400 deg. F.
- Cut off the top rind of the wedge, but not the sides. Place in a oven-proof dish.
- Sprinkle the garlic and rosemary over the brie. Take several swipes of the lemon with a microplane or zester over the brie. You may substitute about 1/4 teaspoons of lemon pepper for the fresh lemon, but fresh is best.
- Sprinkle with a pinch of salt and drizzle with olive oil.
- Place in oven and bake until it turns soft and/or bubbly - 20 to 30 minutes, you may need more time.
- Remove and serve with a crusty bread.

GARLIC-AND-HERB STAR BREAD
This pillowy soft bread comes together quickly without any special equipment. It would work well with a variety of fillings, but the soft garlic cheese punched up with smoky chiles, fresh herbs and lemon is a bright combo against the buttery bread.

- Stir the warm water and sugar together until dissolved, then stir in the yeast; set aside until foamy, about 5 minutes. Meanwhile, whisk the flour, baking powder and fine salt in a large bowl.
- Add the butter to the flour mixture and work it in with your fingertips until the butter is in pea-size pieces. Make a well in the center of the flour mixture and add the yeast mixture and milk. Stir with a wooden spoon until the flour is completely moistened and the dough looks like a shaggy ball, switching to your hands and gently kneading to bring the dough together, if necessary. Cover the bowl and let the dough rise at room temperature until doubled in size, 1 to 1 1/2 hours.
- When the dough is almost ready, make the filling: Combine the cheese, chiles, parsley, thyme and lemon zest in a small bowl. Mash and stir together with a small rubber spatula until smooth and spreadable. Set aside.
- Turn out the dough onto a lightly floured surface and briefly knead until smooth, three or four times. Pat until about 1 inch thick, then fold into thirds like a letter and pat until 1 inch thick again. Rotate the dough 90 degrees and repeat folding and patting two more times. Divide into 2 equal pieces.
- Lightly butter an upside-down rimmed baking sheet (or a rimless baking sheet). Roll out 1 piece of dough into an 11-inch round on a floured surface and transfer to the pan. Spread with the filling, stopping about 3/4 inch from the edge. Roll out the second piece of dough into an 11-inch round and place on top of the first. Pinch and press the edges of the dough together to seal.
- Center the rim of a drinking glass (about 3 inches in diameter) in the middle of the dough; gently press to mark the center. At the 12 o'clock mark, cut through the dough with a very sharp knife from the glass to the edge, leaving the center circle uncut. Repeat at the 3 o'clock, 6 o'clock and 9 o'clock points on the circle to make 4 quarters. Halve each quarter to make 8 equal wedges; halve those to make 16 wedges.
- Lift the edges of 2 wedges that are next to each other and twist them away from each other twice. Pinch the ends together to make a pointed tip. Repeat with the remaining pairs of wedges. Remove the glass and cover the dough with plastic wrap. Refrigerate until the filling is firm and the dough has puffed and risen slightly, 45 minutes to 1 hour.
- Meanwhile, preheat the oven to 400˚ F. Uncover the dough and re-pinch any ends that came apart. Brush all over with the beaten egg and sprinkle with flaky salt. Bake until golden brown all over, especially around the center circle, 25 to 30 minutes. Let cool a few minutes on the baking sheet, then carefully slide onto a rack to cool completely. Serve at room temperature.
NO-FUSS FANCY GARLIC BREAD

- Preheat the oven to 400 degrees F.
- Add the parsley, basil, salt and garlic to a small food processor fitted with the blade attachment. Pulse the mixture until it's finely chopped. Add the butter and cheese and pulse to fully incorporate.
- Cut the baguette in half through the middle and open the 2 pieces like a book, cut-side up. Spread the butter mixture evenly on each of the cut sides. Sandwich the 2 sides together and cut the baguette in half. Wrap each half in foil and place them on a rimmed baking sheet. Bake for 10 minutes.
- Remove the baking sheet from the oven and turn the broiler to high. Carefully unwrap the foil packs and open the bread, exposing the buttered sides. Return the baking sheet to the oven and broil until the edges are toasted, about 1 minute. Cut each baguette quarter into 3 pieces and serve.
BAKED BRIE WITH GARLIC AND RED PEPPER

- Into a small skillet measure the olive oil and add the garlic. Warm the skillet over medium low heat for 5-10 minutes, stirring occasionally. The garlic should be softened but should not brown. Add the bell pepper and continue to cook for another 2-3 minutes.
- Remove skillet from heat. Stir in the lemon juice, mustard, black pepper, salt and parsley.
- Place the brie on a rimmed baking sheet. (See my note in Instruction #7 about using a heatproof skillet.) Using a fork, poke holes all over the top surface of the brie. Allow the fork to go all the way to the bottom of the cheese but do not pierce the bottom rind.
- Pile the red peppers with garlicky olive oil onto the top surface of the cheese. Use a spatula to scrape every last drip of flavored oil onto the cheese. Set aside for 15 minutes, allowing the garlic oil to drip through the holes you've made in the cheese. (You can marinate it in the refrigerator for longer, even overnight. If doing so, cover with plastic wrap before refrigerating).
- If using BBQ: Preheat BBQ to 350°F and prepare for indirect grilling. Once BBQ is heated, place the cheese-pan on the grill, being sure that it is over indirect heat (i.e., that the heat is not directly below the pan). Put the cover of the BBQ down. If using oven: Preheat oven to 350°F Once oven is preheated put in the pan of cheese.
- Bake/BBQ for 15 minutes. If the brie is bulging at the sides and soft to the touch on top, it's ready. If it's not soft and bulging, bake/BBQ for another 5-7 minutes but check on it every minute or so (you want to catch it at the bulging stage not at the oozing-all-over-the-pan stage).
- It's nearly impossible to move the brie onto a serving plate once it's soft and gooey, therefore I used a 6" cast iron skillet and served directly from it. Place the pan of cheese on top of a heat-proof pot holder or trivet. Warn Guests: Pan is HOT. Serve with slices of French bread and/or water crackers. Red grapes would be a nice addition, too.

This is a combination appetizer that I serve based on a few different appetizers that I have seen offered in resturants. Your guests must love garlic, of course, but it is a rich, elegant appetizer that is sure to impress. I even occasionally make it for myself for dinner!

- Preheat oven to 350 degrees.
- Cut the tops off of the garlic, so that the cluster of cloves can be seen. Do not seperate cloves.
- Baste with oil and sprinkle lightly with Thyme.
- Place garlic on a medium piece of foil and then wrap foil around garlic, until it is complelety wrapped up in foil.
- Bake in oven for 1 hour to 1 hour and 15 mins. Allow to cool.
- Serve baked garlic with crusty French bread and Brie cheese.
- Squeeze garlic onto bread slices and alternate with slices of Brie on bread (you can also combine garlic and Brie slices, but it is quite rich).

- Preheat an oven to 350 degrees F (175 degrees C).
- Mix together parsley, garlic, rosemary, thyme, marjoram, and salami. Slice the Brie in half crosswise, so you have two wheels. Spread the salami and herb mixture on one of the cut sides and top with the other half of the Brie wheel. Place the Brie in the center of the sheet of puff pastry. Fold the puff pastry up and over the Brie, pressing to secure the pastry together using a little bit of water if necessary. Brush the pastry with beaten egg.
