Garlic Chicken image

Steps:

  • Season chicken on both sides with salt and pepper to taste.
  • Brown chicken and garlic in hot oil in a large saute pan.
  • Add wine, broth, lemon juice, and spices.
  • Bring to a boil, then reduce heat, cover and simmer 6-8 minutes or until chicken is cooked through.
  • Remove chicken and garlic from pan and keep warm.
  • Mix together remaining wine with the flour and mix into the pan juices, stirring briskly.
  • Bring to a boil and cook until thickened.
  • Serve sauce with chicken and garlic.
  • Mashed potatoes or rice may be served, if desired.

Steps:

  • In a glass dish,beat egg yolkwith garlic.
  • Place chicken in egg mixture, and turn to coat.
  • Cover dish and refrigerate for atleast 4 hours, or overnight if possible.
  • Preheat oven to 400 degrees F (200 DEGREES C).
  • Melt butter and pour into the bottom of a 9x13 inch baking dish.
  • Mix together the bread crumbs,Parmesan cheese, parsley, garlic powder, salt and pepper.
  • Dip marinated chicken in crumb mixture.
  • Place coated chicken in baking dish, and pour remaining egg mixture over.
  • Bake in preheated oven for 15 to 20 minutes on each side, or until chicken is no longer pink and juices run clear.

Steps:

  • Drop the egg yolks, chopped garlic and chicken breasts into a zipper-type plastic bag.
  • Press out as much air as possible and seal.
  • Massage the bag to make sure the chicken pieces are all well coated with egg and the garlic is well distributed.
  • Refrigerate for at least 4 hours, up to overnight.
  • Preheat the oven to 400 degrees.
  • Place melted butter in a 9x13-inch glass baking dish, tipping dish until bottom of pan is coated.
  • In small mixing bowl, combine the breadcrumbs, cheese, parsley, salt and pepper.
  • Dredge chicken pieces in this mixture so they are coated well on all sides.

  • Preheat oven to 350 degrees F.
  • Season chicken with salt. In a large heavy skillet, heat olive oil over medium heat and saute chicken for about 15 minutes or until lightly browned.
  • Place onion, celery, carrots, and parsley in the bottom of a large ovenproof casserole. Layer chicken over vegetables. Tuck garlic cloves between chicken pieces. Pour wine and water over chicken. Sprinkle with thyme, basil, rosemary, and oregano.
