Gazpacho Soup From The Kitchen Of Bad Dad Recipes

THE BEST GAZPACHO

Ripe tomatoes, crisp cucumber and red bell peppers come together to make a delightfully refreshing version of classic gazpacho. We added a touch of sherry vinegar for acidity, which plays nicely with sweet, ripe tomatoes. Hearty white bread adds body and creates the perfect creamy texture. Top with diced cucumber and a drizzle of olive oil for a light soup you'll want to make all summer long.

Steps:

  • Place the bread cubes in a small bowl and add enough water to cover. Let soak until the bread is completely saturated, about 2 minutes. Drain and squeeze dry.
  • Combine the bread, tomatoes, roughly chopped cucumber, bell pepper, garlic, 1/3 cup olive oil, 2 tablespoons vinegar, coriander, 1 teaspoon salt and a few grinds of pepper in a blender. (Work in two batches if necessary.) Blend on high speed until creamy and very smooth, about 2 minutes. Strain through a fine-mesh strainer into a large bowl or 8-cup liquid measuring cup. Cover and refrigerate until very cold, at least 2 hours and up to overnight.
  • Season to taste with more salt and pepper and add up to 1 more tablespoon vinegar. Ladle into serving bowls, top with the finely diced cucumber and drizzle with more olive oil. Serve chilled.

2 slices hearty white bread, crusts removed, diced (about 1 cup diced)
2 1/2 pounds vine-ripened tomatoes, cored and roughly chopped
1 English cucumber, 1/2 roughly chopped and 1/2 finely diced
1 red bell pepper, stemmed, seeded and roughly chopped
1 clove garlic, smashed
1/3 cup extra-virgin olive oil, plus more for serving
2 to 3 tablespoons sherry vinegar
1/2 teaspoon ground coriander
Kosher salt and freshly ground black pepper

Steps:

  • Combine all ingredients in a large bowl. For best results, chill over night. Makes about 10 cups. "Bad Dad's" Note: Time-saving tip is to chop ingredients using a Sonoma Williams or other hand food chopper that does little squares. Also good served over chilled shrimp. 4-6 ripe tomatoes, finely chopped
1-2 medium sized cucumbers, finely chopped
1-2 avocados, peeled & finely chopped
2-4 stalks of celery, finely chopped
1/2 onion, finely chopped
1 red bell pepper, finely chopped

SPICY HERBED SUMMER GAZPACHO

The soup we know as gazpacho originated in Spain's southern region of Andalusia. Farm harvesters traditionally prepared their lunches in the fields by pounding garlic, stale bread, water, olive oil, and salt in a large wooden bowl, forming a sort of nourishing paste to which they added cold water. Legend maintains that Christopher Columbus took barrels of this paste on his first voyage to the New World. Discovering tomatoes, cucumbers, and bell peppers in the Andes, he added them to the mix, creating the liquid salad we still call gazpacho. From "The Florida Keys Cookbook". Prep/Cook time DOES NOT include overnight refrigeration time.

Steps:

  • ONE DAY AHEAD:.
  • Place olive oil in a 5-quart saucepan over medium heat.
  • When oil is hot, add onions, red and green peppers and garlic. Saute until soft, about 7 minutes.
  • Add tomato juice, V-8 juice, Clamato juice, chicken broth, parsley, basil and chives.
  • Season with salt and pepper to taste.
  • Raise heat to high and bring mixture to boil.
  • Immediately remove from heat and add tomatoes and cucumber.
  • Stir to combine.
  • Transfer soup to a covered container and refrigerate overnight to marry flavors.
  • TO SERVE:.
  • Transfer soup to individual bowls.
  • Serve soup cold with sides of bread, cheese, croutons, or crackers.
  • NOTE: The secret to a good gazpacho is the harmonious marriage of flavors. This soup is best at peak harvest season, when vine-ripened tomatoes, peppers, and cucumbers are available.

MY FAVOURITE GAZPACHO SOUP

A wonderful cold raw tomato soup. Once the tomatoes and cucumbers are plentiful and the herbs are up this becomes a summer staple. It's almost a liquid salad. Fresh herbs and veggies are best but canned and dried can be substituted in a pinch.

Steps:

  • Soak the bread in 1 cup of water for 5 minutes and then squeeze out the excess water.
  • *Place the bread in a blender.
  • Add the rest of the ingredients and process.
  • Pour into a pretty pitcher or soup tureen.
  • Refrigerate overnight (the flavors will develop as it sits).
  • Serve cold in pretty chilled bowls, tea cups or hollowed out red peppers from the pitcher or soup tureen with the below toppings of your choice.
  • *My blender is small so I need to make this in two batches. I like mine pretty smooth so I use the puree setting. It can also be served a bit chunkier by using the blend setting or just hand chopping.
  • Toppings:.
  • Choose from: Chopped feta or blue cheese, hard-boiled eggs, fresh basil, avocado, tomato, cucumber, bell pepper, onion, lemon or lime wedges, dollops of yogurt or sour cream or grilled whole wheat pita triangles lathered with roasted garlic. Set a bottle of vodka next to it, a small bowl of horseradish and my recipe #341835 (gorgonzola chese ball). Make it your own and enjoy!
