The Hidden Valley Ranch Salad Dressing & Seasoning mix provides an accent in three separate layers of the dish. You'll find that the flavors blend very well, hearty enough for the hungry appetite and appealing to children as well. Using only one mixing bowl, one skillet, and one casserole dish makes for easy preparation and clean up is a snap! Crunchy Valley Chicken stores well and makes excellent left overs, too.

Steps:
- Preheat oven to 350 degrees. Lightly coat 8" or 9" square baking dish with cooking spray.
- FILLING:.
- Thinly slice celery and coarsely chop onion. In 12" skillet, melt 3 T butter and sauté 2 minutes. Pour into medium sized mixing bowl. In the same skillet, heat olive oil; add chicken breasts cut into ¾" cubes and 1 tablespoon of seasoning mix. Stir well and sauté just until chicken is no longer pink. Pour into mixing bowl with vegetables. Reserve 1 teaspoon of seasoning mix for the topping. Add remaining mix to bowl along with the next 7 ingredients. Stir gently to combine well. Pour chicken mixture into prepared baking dish.
- TOPPING:.
- In the same skillet, melt 2 tablespoons butter. Stir in Panko bread crumbs, sliced almonds and the 1 teaspoon of reserved seasoning mix. Toss just until well coated. Sprinkle topping on chicken filling mixture.
- Bake for 30 minutes until bubbly and topping is golden brown. Makes four generous, delicious servings.
ANDALUSIAN-STYLE CHICKEN

- Add the saffron to the hot stock to soak. Heat the oil in a medium pan and cook the onion until it is soft and just beginning to turn golden. Push to the side of the pan and add the chicken. Cook for a few mins until the chicken is browned all over.
- Add the cinnamon and chilli, and cook for a couple of mins. Add the stock, vinegar, honey, tomatoes and raisins. Bring to the boil, turn down the heat and simmer for 10 mins until the sauce is reduced and the chicken is cooked through. When ready to serve, scatter with the coriander and nuts, and serve with bread on the side.

Steps:
- Brown chicken breasts in melted margarine, remove and set aside.
- Saute mushrooms and onions in the same pan until tender.
- Return chicken to pan.
- Add wine, bouillon, parsley, garlic powder, oregano, salt, and pepper.
- Cover chicken and simmer 40 minutes.
- Remove chicken.
- Blend flour and water into pan juices.
- Stir until thickened.
- Return chicken to pan.
- Heat through or refrigerate until serving time, then reheat.
CHICKEN RANCHILADAS #RSC

Steps:
- Preheat oven to 375 degrees. Spray a 9" x 13" x 2" baking dish with non-stick cooking spray; set aside.
- Heat spinach in microwave oven according to package directions, just to thaw it out, not heat it through. Place spinach into a clean kitchen towel and squeeze dry; set aside.
- Heat the vegetable oil in a medium non-stick skillet over medium-high heat. Add in the shallots, garlic and 1/2 teaspoon salt and cook until they begin to soften, approximately 2 - 3 minutes. Add in the reserved spinach, mix to combine; set aside.
- Place the yogurt into a medium bowl, add 4 teaspoons of the ranch seasoning mix; mix to combine; set aside.
- Place the enchilada sauce into a medium bowl, add in the remaining ranch seasoning mix, mix to combine; set aside.
- Place the chicken into a large bowl, add in the reserved spinach mixture, 6 ounces of the cheese, remaining 1/2 teaspoon salt, black pepper and 1/2 cup of the ranch yogurt sauce, mix to fully combine; set aside.
- Lay the tortillas in a single layer onto work surface. Evenly divide the chicken mixture between the tortillas, placing it down the center of the tortillas. Start rolling up the tortillas, by folding over an empty end of the tortilla over the filling, then rolling up cigar style. Follow this process for all 6 tortillas.
- Spread 2 - 3 tablespoons of the enchilada sauce into the bottom of the prepared baking dish. Place rolled tortillas, seam side down, into baking dish. Pour remaining sauce over tortillas, being sure to cover them entirely in sauce. Top with remaining 2 ounces cheese. Cover dish with aluminum foil, place in preheated oven and bake until heated through, approximately 30 - 35 minutes.
- Serve ranchiladas with remaining ranch yogurt sauce on the side.

Steps:
- remove skin from chicken breasts if desired.
- in a medium bowl beat 3 eggs and 3T of Milk set aside.
- in a shallow bowl mix breadcrumbs.
- crushed Thyme.
- Paprika.
- 1 package of Hidden Valley Original Ranch seasoning mix.
- In a large skillet heat 3 T cooking oil for 10 minutes.
- dip chicken in egg milk mixture.
- roll in breadcrumb and Hidden Valley Original Ranch seasoning Mix mixture.
- add Chicken to pan and cook for 10 minutes uncovered.
- turn occasionally to brown evenly.
- Drain well, add 1 1/2 cup of Milk.
- cover tightly and cook 35 Minutes.
- Uncover and continue to cook 5 to 10 more minutes or until chicken is no longer pink in center.
- transfer chicken to serving platter sprinkle with fresh grated Parmesan and fresh chives while hot.

Ready, Set, Cook! Hidden Valley Contest Entry. Textures and contrasts abound in this delightful combination of roasted vegetables, vibrant greens and crispy red pepper rings. But be careful with the pepper rings, they are so yummy, it's hard to save some for the salad!

- Pre-heat oven to 400? F.
- Place chicken breasts in freezer - partially freeze and slice into ½ inch medallions. Combine Greek yogurt, rosemary, thyme, sage and salt. Add chicken medallions and allow to marinate while veggies roast.
- For vegetables, whisk Hidden Valley Ranch Dip Mix into Olive oil and toss with vegetables. Place on sheet pan and roast, stirring occasionally, until vegetables are tender and beginning to brown, about 20 minutes.
- Add 1 Tbsp oil to skillet and bring to high heat. Sear chicken medallions in hot skillet 3-4 minutes per side until juices run clear.
- Toss warm veggies with Hidden Valley Ranch Original Dressing.
- For the salad:.
- Heat canola oil in deep skillet to 360°F Lightly beat the eggs with 1 tsp water. Dip pepper rings into egg mixture, then into flour, then into egg mixture and toss with Italian seasoned bread crumbs. Fry 3-4 minutes until lightly browned and crisp.
- Assemble the salad by placing ¼ of the fresh spinach onto each of 4 plates. Top each bed of spinach with ¼ of the roasted, dressed vegetables, then ¼ of the chicken medallions. Top each with fried red pepper rings and serve.
