Preheat the broiler to medium-high heat. Heat a 12-inch non-stick skillet over medium heat and add the butter. Saute the apples for 4 to 5 minutes, or until softened. Add the cinnamon and the sugar, sprinkling them evenly over the apples, and stir together for 2 minutes more, until the apples are glazed and slightly translucent at the edges. Distribute the apples evenly in the skillet and pour the batter over them. Cook until the bottom seems quite firm, about 8 minutes. Transfer the pan to the broiler and, watching carefully, cook until the pancake is firm throughout and golden on top. Cut the pancake into 4 wedges and transfer them upside down to breakfast plates. Sprinkle with a little confectioners' sugar, place a dollop of creme fraiche on the top, and fan out some sliced strawberries on the plate, if desired.

Steps:

  • Pastry: 160g white flour 80g chopped almonds 160g cold butter, chopped into chunks 80g sugar pinch of salt 1 egg 1.Mix all the ingredients together quickly 2.Roll out the pastry so it is 4mm thick and has a 3cm border. 3.Lay the pastry in a 20cm dish and pinch it to the sides and corners. Fork a couple of holes in the pastry so the air can get through.
  • Filling: 4 apples, peeled, quartered then thinly sliced. 1 tsp cinnamon 50g chopped almonds 1.Heat the oven to 180deg C fan. 2.Lay two thirds of the sliced apple on the pastry then sprinkle over the almonds and cinnamon. 3.Lay the remaining apples on top in a decorative fashion.
  • Custard Filling: 2 eggs 150g sugar 1 tsp vanilla sugar pinch of salt 50 g vanilla custard powder 250ml cream 1.Beat the eggs, sugar, vanilla sugar and salt for a minute, then mix in the custard powder and cream. 2.Pour the whole mixture over the apples. Bake for 45 minutes. If the apples are browning too quickly, cover the dish with aluminium foil.
  • Tips - If you have time, try to prepare the pastry in advance and leave it wrapped in cling film in a ball in the fridge. This will make it a lot easier to roll and stop the pastry from cracking apart.

SANDRA'S GERMAN APPLE CAKE

My mother sent me this unusual recipe back in the 70's. I was baking rolls in a health food restaurant at the time. The restaurant wanted me to come up with a dessert for the menu, so I made my mother's recipe using wholewheat flour, turbinado sugar and organic walnuts*. It was an enormous success! You should note there is no liquid in this recipe. The moisture that binds the ingredients comes from the eggs, oil and fresh apple slices. A pretty good electric mixer and/or strong arm is required to incorporate all the flour no matter what kind of flour you use. The result is more like a stiff dough than any cake batter I've ever seen. I continue to make this cake with wholewheat flour and turbinado sugar because I like the result. You, of course, may use any flour and sugar you want. *Nostalgia Note: In 1974, organic walnuts came from a tree in their original packaging called a shell. To use the nut, the shell had to be broken with something hard called a nut cracker and then the nutmeat was picked out; repeat until the amount of nutmeats equal what the recipe calls for. Today, walnuts come in a bag and if there are any shells involved you can lodge a complaint.
