AWESOME PAN FRIED POTATOES
I made this up tonight in search of something different from baked(boiled)potatoes. My oven was not working yet so I decided to pan fry them and they were a hit. ***Updated on 9/16 to add that potatoes should be browned and to add more oil as needed.

Steps:
- Microwave potatoes for 5-6 minutes to soften.
- Cut potatoes into bite size pieces(about 1 inch cubes).
- Dice onion.
- Spray large frying pan with olive oil and add potatoes, onions,paprika and garlic adding more oil as needed to brown the potatoes. Cook on medium heat until tender and browned.
- When done, add white wine and salt and pepper to taste.

PAN-FRIED POTATOES
The way my mom always made 'em. I serve these with smoked sausage or kielbasa. These are NOT hash browns, and will not be crispy

Steps:
- In a skillet, melt bacon fat.
- Add onions and saute 2-3 minutes.
- Add potatoes, salt, and paprika (there should be enough to make potatoes almost orange).
- Fry, covered, over medium heat until soft and tender.
- If it starts sticking and forming a crust on the bottom, turn the heat down and add a little water.
OVEN-FRIED POTATOES

- Preheat the oven to 450 degrees F.
- Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren't touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
- Transfer potatoes to a serving dish and serve immediately.
PERFECT FRIED POTATOES

- Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
- In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
- Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.
PAN-FRIED LEMON POTATOES

- Place the potatoes in a large sauce pan and cover with cold water. Add the garlic, rosemary sprigs and lemon half to the water and season well with salt. Place over medium-high heat and bring to a boil. Reduce the heat to a simmer and cook until the potatoes are tender when pierced with a fork, about 15 minutes. Drain well and immediately cut the potatoes into halves. Place on a plate to allow the steam to escape. Allow to cool for 15 minutes.
- Meanwhile, to make the seasoning salt, mix together the lemon zest, chopped rosemary and 1/2 teaspoon salt in a small bowl. Set aside
- Heat a large skillet over medium-high heat. Add the oil and heat until it shimmers when it swirls in the skillet. Add the potatoes cut-side down to the skillet. Do not overcrowd the skillet. This may be done in 2 batches. Cook until the bottom of the potatoes are a deep golden brown, 3 to 4 minutes. Using a metal spatula, flip the potatoes and cook on the second side for an additional 3 minutes. Remove to a paper towel-lined plate and drain well. Sprinkle with the seasoning salt and serve warm.
PANFRIED SMASHED POTATOES
Crisp skinned, and sprinkled with a generous amount of salty parmesan! Adapted from Gourmet magazine(March 2009).

Steps:
- Cover potatoes with cold water in a 3-4 quart pot and add salt. Boil until almost tender, 10-15 minutes. Drain potatoes.
- Move to a baking sheet and lightly crush to about 3/4" thick with a potato masher, keeping potatoes intact as much as possible.
- Heat oil in a 12" heavy skillet over medium high heat until it shimmers. Move potatoes with a spatula to the skillet. Lower heat to medium low and cook, turning once, until golden brown, about 10 minutes on each side.
- Serve sprinkled with cheese. Season generously with black pepper. Enjoy!
- Note:.
- Fried potatoes can be kept warm in a sheet pan in a 200*F. oven up to 30 mnutes.
FRIED POTATOES AND BACON
Let me tell you my boyfriend absolutely loves when I make this. His eyes even light up. But it is not something to make all the time for health reasons ;-) But that is what is so good about it.

Steps:
- Peel all potatoes and cut up in to 4ths.Put potatoes in a pot with water and salt.Cover. Put on high until it boils then lower a little. Total boiling time should be 30 minutes.
- Cut up bacon and onion into smaller pieces.Add to a 10-12" pan 1 tablespoon butter.Let fry for 5-7mins so bacon grease can accumulate.
- Drain potatoes when they are done and add to frying pan.With a spoon make potatoes pieces even smaller and stir mixture together. Add another tablespoon butter and stir.
- Turn flame up med-high and cover so potatoes can brown. Every 5 minutes or so stir potatoes and add salt and pepper to taste. Also add more butter if necessary.
- Continue to fry for about 15 minutes or until most potatoes have one side browned.
PERFECT SAUTéED POTATOES

- Cut 1 kg waxy potatoes into chunks.
- Bring a large pan of water to the boil, then cook the potatoes for 3 mins. Drain, shake out onto a kitchen paper-lined tray and leave to cool.
- When ready to serve, heat 6-8 tbsp sunflower or olive oil in a large non-stick frying pan until you can feel a strong heat rising.
- If your pan isn't large enough, fry the potatoes in two batches - rather than crowding them. Have kitchen paper ready to drain them on. Add the potatoes in a single layer, not too tightly packed.
- Turn the heat to medium-high, so that the potatoes sizzle, but don't stir until they start to brown underneath.
- Turn them all evenly 2 or 3 times until nicely browned all over - this can take about 7 mins.
- Then lift out with a fish slice or large slotted spoon to drain on more kitchen paper. Sprinkle with sea salt.

- Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
