Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Divide in half and press each half into a greased 11x7-in. baking pan. GERMAN FRIDGE CAKE

A great recipe for kids and adults who are really kids at heart! So easy to make. I got this recipe from my German friend Katja, who often brought it to a class we took together and made my lunch breaks very tasty indeed. I think you could sub shortening or butter for the coconut fat (Palmin) she used but I have not tried it, having only made this while in Germany.

17 TRADITIONAL GERMAN CAKE RECIPES | ALLRECIPES
Apfelkuchen (Apple Cake) It is not unusual for traditional German cakes with fruit, especially with apples and plums, to have a yeasted pastry base. Mostly these cakes are large sheet cakes meant to serve a crowd; a yeasted dough base was more economical than a butter-based batter or pastry crust.
