- Tip the sugar and 150ml water into a saucepan set over a low heat and heat until all the sugar has dissolved. Turn up the heat to medium-low and add the cranberries. Cook, stirring occasionally for 15 mins or until the cranberries have started to break down. Leave to cool, then blitz to a smooth purée using a hand blender, if you like (you can also leave it as is). Will keep in a sterilised sealed jar in the fridge for up to a week.
- To serve, spoon 1 tbsp of the cranberry purée into each glass, stir in a single or double measure of the gin and top up with the soda water. Garnish each glass with an orange slice and add a few ice cubes. Alternatively, mix everything together in a jug and serve.

MIDNIGHT FIZZ
While a classic gin fizz uses lemon juice, the sweet acidity of lime in this variation skews it toward a (very) frothy gimlet. To ensure plenty of that froth, use a double shake to make the cocktail: first without ice to foam the egg white, then a second time with ice to chill and dilute the drink. Serve traditionally without ice in a small Collins or fizz glass, or go rogue and serve over a few cubes. Either way, as with all egg white drinks, drink with efficiency to capitalize on the drink's froth and avoid its inevitable separation.

- Puree the watermelon. Strain (I do not strain, I simply use the puree); divide the juice among 4 TALL ice-filled glasses.
- Top each glass with 1 1/2 ounces gin, 2 tablespoons lime juice and 1/3 cup ginger ale (I use a little more soda).
- Garnish with the lime wedges.
- NOTE: I mix mine up to take to the pool by combining the puree, gin and lime juice in a container and then just take cans of soda. I find that this amount makes 5 LARGE drinks.
