CHOCOLATE COVERED BACON STRIPS

This is the perfect marriage. The sweetness of chocolate and the saltiness of bacon. What could be better?

Chocolate Covered Bacon Strips image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place a baking rack on top of a large baking sheet.
  • Thread each slice of bacon onto a skewer; place skewered bacon on the baking rack.
  • Bake bacon in the preheated oven until crisp; 20 to 25 minutes. Remove from oven and cool completely.
  • Combine chocolate chips and shortening in a microwave-safe bowl. Heat in the microwave in 30 second intervals until chocolate is melted and smooth, stirring after each interval.
  • Coat each side of the skewered bacon with the chocolate mixture using a pastry brush. Place coated bacon on a sheet of waxed paper. Refrigerate until firm, at least 30 minutes. Store in refrigerator until ready to serve.

Steps:

  • Heat a skillet over medium heat. Add the bacon and render until crisp. Drain on paper towels to remove the excess grease. Melt the chocolate on the top of a double boiler over medium heat. Remove from the heat when the chocolate is 80-percent melted and continue stirring until fully melted. Stir in the bacon, and then gently fold in the crisped rice cereal. Pour the mixture into silicone molds, cover and refrigerate for 30 minutes. Unmold and sprinkle with fleur de sel.

Gina's Chocolate Pound Cake image

Steps:

  • Preheat oven to 350 degrees F. Butter a 10-inch Bundt pan and dust with cocoa powder.
  • In a large bowl of a stand mixer, add the butter and the sugar. Using the paddle attachment, cream together until light and fluffy and the volume has increased. Add the eggs and egg yolk, 1 at a time, beating after each addition.
  • In another mixing bowl, whisk together the flour, cocoa powder, the salt, and baking powder.
  • Add the dry ingredients alternatively with the buttermilk to the butter and egg mixture ending with the flour. Stir in the vanilla and pour the batter into the prepared Bundt pan. Bake for 1 hour and 10 minutes or until a toothpick inserted in the cake comes out clean. Let cool on a wire rack before turning out onto a serving plate and slicing.
  • Add the chocolate to a medium-sized bowl. In a small saucepan over low heat, add the cream and bring to a low simmer. Pour the cream over the chocolate and add the corn syrup. Once the chocolate melts, whisk together to combine. Drizzle over the cake and serve.

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix brown sugar, cayenne, and black pepper together in a medium bowl. Add bacon and toss.
  • Line a baking sheet with a wire rack and lay bacon on the rack. Pat any remaining spice mixture on the bacon. Put the baking sheet on the top rack of the oven and bake until crisp, about 15 minutes. Remove from the oven to a serving dish and let cool slightly before serving.

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  • Thread the bacon slices onto 12-inch wooden skewers that have been soaked in water. Bake until cooked but not too crisp, 20 to 25 minutes. Let cool completely.
  • While the bacon is cooling, set a glass bowl over a pot of simmering water so that the bottom of the bowl is not touching the water. Add the white chocolate to the bowl and heat until melted.
  • Line another baking sheet with parchment. Dip the bacon strips in the white chocolate so they are mostly covered. Place on the parchment. Sprinkle the bacon with the chopped pistachios and use a rasp grater to grate the milk chocolate on top. Let the chocolate harden at room temperature before serving.

Grandma's Green Beans with Bacon Vinaigrette image

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
  • Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender-crisp, 3 to 5 minutes. Drain.
  • Drain bacon slices on paper towels, reserving grease in the skillet. Saute onion in the bacon grease until softened, about 5 minutes. Stir in brown sugar, vinegar, salt, mustard, and pepper. Stir well, scraping up any onion bits off the bottom of the skillet. Cook until bubbling, 3 to 5 minutes.
  • Add green beans to the skillet with the sauce; toss to coat well. Chop cooked bacon and stir into the beans. Serve hot.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Place bacon on the prepared baking sheet, without overlapping.
  • Bake in the preheated oven until slightly crisp, 15 to 20 minutes. Allow to cool on the sheet for 5 minutes before transferring to a plate lined with paper towels.
  • While bacon is cooling, place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
