GLAZED APPLE COOKIES

Spicy cookies that everyone loves. I've mailed them before and they mail beautifully. I've been making these for about 25 years, and never met anyone yet who didn't like them.

Glazed Apple Cookies image

Steps:

  • Beat shortening and brown sugar together until light and fluffy. Beat in egg and blend thoroughly.
  • Stir together flour, baking soda, salt, cinnamon, cloves and nutmeg.
  • Stir half the dry ingredients into creamed mixture. Stir in nuts, apple and raisins, then stir in remaining half of dry ingredients and milk. Mix well.
  • Drop from tablespoon 1 1/2 inches apart onto lightly greased baking sheet. Bake in a preheated 400 degree oven for 10-12 minutes. Remove cookies to racks and while still warm, spread with glaze.
  • To make Glaze: Combine powdered sugar, butter, vanilla and enough cream to make glaze of spreading consistency. Beat until smooth. Spread on warm cookies.

Fresh apples keep these cookies moist and chewy. If you prefer you can either omit the maple extract in the glaze and add vanilla or just omit it all together. Either way their still delicious.

Maple-Glazed Apple Cookies image

Steps:

  • Preheat oven to 400'.
  • Cream together butter with sugar.
  • Add salt, cinnamon, nutmeg, cloves, coriander and egg. Blend well.
  • Stir in flour with baking soda and milk until well blended. Stir in apples.
  • Drop by small spoonfuls onto ungreased cookie sheets and bake at 400' for 10-12 minutes or until cookies are light brown and spread but not overly brown (Firm when cooled and touched)
  • Remove from oven and cool on cookie sheets 1-2 minutes, then transfer to wire rack
  • To make glaze: Stir together butter, powdered sugar, maple flavoring and milk to make a smooth glaze.
  • Dot each cookie with about 1/2 teaspoons of glaze and spread to edges.
  • Cool cookies and allow glaze to set before storing in an airtight container.

These are really good cookies, topped off with a glaze. Just make certain to glaze the cookies when still hot. If you do not have any apple juice, then use the same amount of milk instead. The glaze can be doubled if desired. Yield is only estimated, depending on how large the cookies are.

Steps:

  • Set oven to 350 degrees F.
  • Grease a cookie sheet.
  • Comine the flour and baking soda in a small bowl.
  • In a large mixing bowl, cream butter, brown sugar, salt, cinnamon, cloves, nutmeg, egg and apple juice; beat until smooth and fluffy (about 2 minutes).
  • Add in the flour/baking soda mix to the creamed mixture until thoroughly combined.
  • Add in the chopped apples, raisins and nuts (if using) mix until well combined.
  • Drop by tablespoonfuls onto cookie sheet.
  • Bake for about 8-10 minutes.
  • To make glaze: mix/whisk together all the ingredients until smooth.
  • While the cookies are still HOT, spread with glaze.

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth.   • 1. Mix together the butter, brown sugar and egg. Sift together the flour, baking soda, salt, cinnamon and nutmeg. Mix half of the flour mixture with the butter mixture. Mix in the rest of the flour mixture and milk. Alternately. Stir in the walnuts, raisins, and chopped apples.

  • 1. Preheat oven to 350°F. Grease cookie sheets.
  • 2. Soak raisins in hot water, until ready to use; then drain.
  • 3. Cream butter (or shortening) and sugar, with electric mixer, until sugar is dissolved.
  • 4. Add egg, and mix well.
  • 5. Sift together the flour, baking soda, salt, cinnamon, and nutmeg.
  • 6. Add to creamed mixture, a half of a cup, at a time, while stirring with a wooden spoon.
  • 7. Drain raisins. Then, fold in apples, nuts, and raisins. Add apple juice (or milk), and mix well.
  • 8. Drop by teaspoonfuls onto greased cookie sheets.
