GLUTEN-FREE BASIL PENNE WITH ASPARAGUS AND FETA

Here's a hearty pasta dish that's both vegetarian and gluten free...plus, it's ready in 35 minutes.

Gluten-Free Basil Penne with Asparagus and Feta image

Steps:

  • Cook and drain pasta as directed on package, adding asparagus during last 3 minutes of cooking time (don't overcook pasta).
  • Meanwhile, in 12-inch skillet, heat oil over medium heat. Cook garlic in oil about 3 minutes, stirring occasionally. Add beans, tomatoes, basil, lemon juice, salt and pepper; toss gently.
  • Stir cooked pasta and asparagus into skillet. Cook about 5 minutes, stirring occasionally, until thoroughly heated. Stir in cheese.

2 cups uncooked gluten free penne pasta (6 oz)
1 lb fresh asparagus, trimmed, cut diagonally into 1 1/2-inch pieces
2 tablespoons olive oil
2 cloves garlic, finely chopped
1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
1 1/2 cups halved grape or cherry tomatoes
1/4 cup chopped fresh or 1 tablespoon dried basil leaves
2 tablespoons fresh lemon juice
1/2 teaspoon coarse sea salt
1/4 teaspoon coarse ground black pepper
1 package (6 oz) gluten free crumbled tomato-basil feta cheese

Penne, Spinach, Asparagus and Cashew Salad image

Steps:

  • Cook asparagus in large pot of boiling salted water until just tender, about 3 minutes. Using slotted spoon, transfer asparagus to small bowl. Cool. Add pasta to same pot and cook until just tender but still firm to bite. Drain well. Transfer pasta to very large bowl. Toss with 1 tablespoon oil. Cool.
  • Blend cup oil, green onions, vinegar and soy sauce in blender until smooth, about 2 minutes. (Asparagus, pasta and dressing can be prepared 1 day ahead. Cover separately; chill.) Pour dressing over pasta. Add asparagus, spinach and cashews; toss to coat. Season with salt and pepper.

1 1/2 pounds penne or rigatoni pasta
1 tablespoon plus 1/2 cup olive oil
3/4 cup sliced green onions
6 tablespoons white wine vinegar
2 tablespoons soy sauce
1 6-ounce package baby spinach
1 cup (about 4 ounces) salted roasted cashews, coarsely chopped

Penne with Asparagus and Basil image

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add garlic and red pepper; sauté until garlic is golden, about 2 minutes. Add asparagus, tomatoes, stock and 1/4 cup sliced basil. Cook until asparagus is crisp-tender, about 8 minutes. Season with salt and pepper. Remove from heat.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite. Drain. Transfer to large bowl.
  • Pour sauce over pasta. Add cheese, parsley and 1/4 cup chopped basil. Toss to coat. Season with salt and pepper.

2 tablespoons extra-virgin olive oil

Pinch of dried crushed red pepper
1 pound asparagus, stalks cut into 1/2-inch lengths
4 tomatoes, peeled, seeded, chopped
1 cup chicken stock or canned low-salt chicken broth

PENNE WITH HEIRLOOM TOMATOES, BASIL, GREEN BEANS AND FETA

Sweet, juicy heirloom tomatoes lend themselves well to uncooked tomato sauces. In summer, I make quick meals out of chopped ripe tomatoes, pasta and green vegetables.

Penne With Heirloom Tomatoes, Basil, Green Beans and Feta image

Steps:

  • Combine the olive oil, tomatoes, garlic, basil, salt and pepper in a large bowl, and let sit for 15 to 30 minutes (or longer).
  • Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the green beans to the boiling water, and boil four to five minutes, depending on how crunchy you like them. Remove with a strainer or skimmer, and transfer to the ice water. Allow to cool for a few minutes, then drain and set aside.
  • Bring the water back to a boil, and add the pasta. Cook until al dente, about eight minutes. When the pasta is ready, drop the green beans back into the water to heat, then drain the pasta and beans and toss at once with the tomato mixture and the feta. Serve hot or room temperature.

Steps:

  • Put oven rack in lower third of oven and preheat oven to 500°F.
  • Toss asparagus with oil, salt, and pepper in a large shallow baking pan and arrange in 1 layer. Roast, shaking pan once about halfway through roasting, until asparagus is just tender when pierced with a fork, 8 to 14 minutes total. Serve asparagus sprinkled with cheese.
