GLUTEN-FREE COTTAGE CHEESE PANCAKES

I used Bob's Red Mill Gluten Free Oats in this recipe. It's surprising how much texture and flavor it gives it. These are really simple, 37.5 grams on protein in a serving, and delicious. I quadrupled the recipe because I wanted more pancakes. Recipe posted as written. Recipe courtesy of Hurry the Food Up.

Gluten-Free Cottage Cheese Pancakes image

Steps:

  • Mix all ingredients together in blender. You can change up the recipe by adding a tablespoon of coconut powder of peanut butter or rasins or a teaspoon of cinnamon or a teaspoon of vanilla or even some thin slices of apple or pear.
  • Put some oil or butter in pan over low to medium heat.
  • Flip with a spatula once bubbles start to appear. Cook until both sides are golden brown.
  • Top with honey or maple syrup or strawberries or whatever your heart desires.
