GLUTEN-FREE DENVER OMELET
Ham, bell pepper and onion flavor this popular anytime egg treat.

Steps:
- Heat butter in 8-inch omelet pan or skillet over medium-high heat just until butter begins to brown. As butter melts, tilt pan to coat bottom. Cook ham, bell pepper and onion in butter 2 minutes, stirring frequently.
- Quickly pour eggs into pan. While sliding pan back and forth rapidly over heat, quickly stir with fork to spread eggs continuously over bottom of pan as they thicken. Let stand over heat a few seconds to lightly brown bottom of omelet. (Do not overcook-omelet will continue to cook after folding.)
- Tilt pan and run fork under edge of omelet, then jerk pan sharply to loosen eggs from bottom of pan. Fold portion of omelet nearest you just to center. (Allow for portion of omelet to slide up side of pan.) Turn omelet onto warm plate, flipping folded portion of omelet over so it rolls over the bottom. Tuck sides of omelet under if necessary.

Steps:
- Spray a large microwave-safe mug with nonstick spray. Add green pepper and onion and microwave until softened, 1 to 2 minutes.
- Blot any excess liquid from the vegetables. Add egg substitute and microwave for 1 minute.
- Add ham and cheese and lightly stir. Microwave until scramble is just set, an additional 45 to 60 seconds.
- Let cool slightly. Garnish with orange slices and serve with an English muffin, if using. Eat up!
- Serving suggestion: Whole-wheat English muffin.

A change of pace from a French omelet, the Denver omelet is known for its firmer texture and caramelized flavor. It's one of the first foods I've ever learned to cook professionally, as a line cook in high school. Make it a complete lunch or dinner with arugula salad and toasted bread.

Steps:
- Beat eggs until just combined; do not over-beat.
- Melt butter in a skillet over high heat. Add ham, onion, and bell pepper. Sprinkle in a nice pinch of salt and a touch of pepper. Cook and stir over medium-high heat until onions start to soften and ham begins to caramelize, about 5 minutes.
- Reduce heat to medium-low and pour in the eggs. Mix briefly with a spatula while shaking the pan to ensure ingredients are evenly distributed. Quickly run the spatula along the edges of the omelet.
- Sprinkle Cheddar cheese and cayenne pepper over the omelet. Cook, shaking the pan occasionally, until the top is still wet but not runny, about 5 minutes. Fold omelet in half with your spatula and transfer to a plate.

- Thinly slice your potato using a mandolin or very sharp knife. Slices should be 1/4-1/8″ thick. Layer the slices overlapping on the bottom of the pan evenly to create the bottom crust. Once layered, put in oven for 25 minutes or until potatoes are 80% cooked through.
- Heat remaining 1tbsp avocado oil in a skillet over medium high heat and saute pepper, onion, and ham in skillet for about 5-7 minutes. Vegetables should be starting to soften but not be fully cooked through. Most of the cooking will take place while it is being baked.
- In a separate bowl, crack 12 eggs and whisk together along with, salt, pepper and any other seasonings you’d like to add.
