GLUTEN-FREE RUSTIC BREAD

A great gluten-free recipe for a daily staple that has other benefits too. Sorghum is an important grain because it gives an alternative to wheat for those who need a gluten-free diet, it is usually eaten as a whole-grain which keeps the hull and its' nutrients intact. Sorghum contains selenium and niacin which are thought to help in the prevention of cancer. Flax seeds are especially good for digestion because of its' mucilage gum content which forms like a gel in the intestinal tract, while cider vinegar is proven to improve insulin sensitivity and to reduce blood sugar levels for those with Type 2 diabetes. For those bread lovers out there, here is a great excuse to have a healthy egg on toast for breakfast, a healthy fish and salad sandwich for lunch and a healthy bean and vegetable soup with a chunk of this tasty rustic bread for dinner. You'll know which side of your bread is buttered with this recipe!

Steps:

  • Whisk together sorghum flour, potato starch, tapioca starch, flaxseed meal, salt, sugar, and yeast in a bowl.
  • Stir in the egg whites and olive oil.
  • Stir in the water and cider vinegar.
  • Pour the batter into a non-stick loaf pan.
  • Bake for 35 minutes at 175C/350F, starting from a cold oven.

  • In a small bowl, mix together the yeast, sugar and 150 g (1/2 cup + 2 tbsp) warm water. Set aside for 10 – 15 minutes, or until the mixture starts frothing.
  • In a separate bowl, mix together the psyllium husk and 240 g (1 cup) water. After about 15 – 30 seconds, a gel will form.
  • In a large bowl, mix together the buckwheat flour, potato starch, brown rice flour and salt, until evenly combined.
  • Add the yeast mixture, psyllium gel and apple cider vinegar to the dry ingredients. Knead the dough until smooth and it starts coming away from the bowl, about 5 – 10 minutes. You can knead by hand or using a stand mixer with a dough hook.

  • To make the starter: In the bowl of a stand mixer or a large bowl, mix the starter ingredients together until combined; some lumps are OK. Cover and set aside at room temperature for 2 to 24 hours.
  • To make the dough: Add all of the dough ingredients to the bowl with the starter. Fit the mixer with the flat beater attachment and beat at medium speed to make a smooth, sticky dough, about 2 minutes.
  • Transfer the dough to an oiled surface and fold and press it over onto itself, turning it 90° (a quarter turn) between each motion, about 5 to 6 times.
  • Preheat the oven to 450°F with an uncovered Dutch oven or cloche inside; the baking vessel should have at least a 4-quart capacity.
  • Uncover the dough and repeat the folding and pressing motion 5 to 6 times, then loosely shape the dough into a round. (The dough doesn’t need to be as tightly shaped as a conventional wheat loaf; the proofing vessel will do most of the work for you to ensure a round final loaf.)
