GLUTEN FREE NO BAKE CHOCOLATE BALLS

These are a delicious treat. They look nice and they are easy to make...especially on hot summer days when I don't have to turn the oven on!!!PLUS they are gluten free and nut free!! I had to skip dinner the first time I made these because I ate so many during the making process, they didn't even get a chance to harden.

Gluten Free No Bake Chocolate Balls image

Steps:

  • In a large saucepan, melt butter over low heat.Add marshmallows and milk.Heat until melted, stirring constantly.
  • Stir in chocolate chips, and heat until melted.
  • Remove from heat.
  • Cool until mixture thickens.
  • Blend in rice cereal.
  • WET HANDS and roll into 1-inch balls.
  • Then roll ball in shredded coconut.
  • Place balls on a wax paper lined cookie sheet and place in the fridge to harden.
  • (I made half the batch that way and then for the second half I added the remaining shredded coconut into the mixture and skipped rolling the balls in the shredded coconut -- this way it looks like I made 2 different kinds of balls.

4 cups mini marshmallows
1/4 cup milk
2 cups chocolate chips
4 cups gluten-free crisp rice cereal (I used Gluten Free Rice Twice)
1 cup shredded coconut (You can use sweetened or unsweetened.)

GLUTEN FREE HOLIDAY RUM BALLS

I was missing one of my favorite Holiday treats due to it usually being made with vanilla wafers which contain Gluten and I can't have that so I tinkered around with my recipe and came up with these. They taste wonderful and none of my family guessed they were Gluten Free! Just make sure you add the Rum a little at a time, you don't want your dough to be too runny. I'm going to try dipping some in chocolate too.

Steps:

  • Melt semisweet chips along with canned milk in the microwave on low-med or setting 5 for approximately 45 seconds or until chips can be gently stirred into the milk. set aside.
  • Mix all the dry ingredients together well.
  • add the rum a little at a time until everything makes a stiff dough.
  • You may need more rum, just add until it's the right consistency. Like play dough.
  • Add melted chocolate mixture and rum extract and mix well.
  • Rum Ball dough should be stiff yet pliable.
  • Roll into teaspoon sized balls and coat with powdered sugar. put into small papers and store covered in the fridge for at least 3 days to let flavors mellow, then just before serving, roll in more powdered sugar.
  • These freeze well. Just freeze on a cookie sheet and store in a freezer bag for up to 4 weeks.

1/4 cup good quality dark rum
1/2 cup semi-sweet chocolate chips

  • PREP: Line a baking sheet or plate with parchment paper. Then, place a few spoonfuls of desiccated coconut into a separate small bowl or dish. This is NOT the 1 cup of coconut that goes into the balls, but what the balls get rolled into so that they're coated on the outside! Set aside.
  • In a large food processor, add pitted medjool dates, desiccated coconut, cacao powder, hemp seeds, and water. Pulse until it forms a paste-like texture. If things aren't sticking together, feel free to add a splash more water until it does.
  • Using a large spoon, take a couple spoonfuls of the mixture from the food processor and place it in your hands. Roll into balls, then roll the balls in the dish with the coconut until the outsides of the balls are fully coated. Place finished ball onto the parchment lined baking sheet/plate. *this part is meant to be a little messy!
  • Repeat until all mixture is used up. Recipe as written should make about 10-12 balls, depending on size.
