CRISPY SHEET PAN GNOCCHI WITH SAUSAGE AND PEPPERS

Broil -- instead of boil -- gnocchi in this quick sheet pan dinner. Peppers, onions, tomatoes and sausage are the perfect bed for the little potato dumplings, which are crusted with Parmesan and broiled until crispy and tender.

Crispy Sheet Pan Gnocchi with Sausage and Peppers image

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss together the sausage, oregano, red pepper flakes, garlic, bell peppers, onion, 1 tablespoon of the olive oil, 1 teaspoon salt and a few grinds of black pepper on a sheet pan. Pour the cherry tomatoes over top and gently shake the pan a few times to evenly distribute. Bake until the sausage is cooked through and the vegetables are soft, 18 to 20 minutes.
  • Meanwhile, toss the gnocchi with the Parmesan, remaining 1 tablespoon olive oil and 1/2 teaspoon salt.
  • Turn the oven to broil. Sprinkle the gnocchi over the sausage and vegetables and broil until dark golden brown, 3 to 5 minutes. Divide among 4 plates and sprinkle with the parsley and more Parmesan.

1 pound sweet Italian sausage, casings removed, crumbled
1 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
2 cloves garlic, minced
1 small green bell pepper, thinly sliced

This quick dish packs lots of flavors in one pot-Italian sausage, zucchini, pesto, kale and mascarpone, to name a few. Store-bought gnocchi is a convenient shortcut ingredient that cooks in just a few minutes. And since the gnocchi simmers right in the sauce, there's no need for a separate pot.

Cheesy Sausage One-Pot Gnocchi image

Steps:

  • Heat a large pot over medium heat. Brown the sausage in larger chunks, 4 to 5 minutes. Remove with a slotted spoon and reserve. Drizzle in the olive oil, then add the chile flakes, garlic and shallot. Give the pan a stir, then add the corn, zucchini and summer squash and cook to soften, 2 to 3 minutes. Add the tomato paste and a big pinch of salt and pepper. Stir to coat. Deglaze with the chicken stock, scraping the pan. Stir in the tomato sauce and pesto, then bring to a boil. Add the gnocchi, kale and reserved sausage, then reduce the heat to a simmer. Cook, stirring frequently, until the gnocchi are tender and the sauce has thickened, 6 to 7 minutes. Stir in the mascarpone and taste. Adjust the seasoning as needed. Serve, garnished with grated Parmesan and basil.

Steps:

  • Start by preparing the tomato sauce. Put the extra virgin olive oil in a pot with the peeled whole onion. Sauté it for a couple of minutes then add the tomato purée, some salt and half the basil. Cover it and cook for 15 to 20 minutes on a low flame, or until thickened. When ready, remove the onion, add the cubed mozzarella to it and mix it with a wooden spoon for a few minutes. Make sure the mozzarella is nicely melted and there are no lumps in the sauce. Add the rest of the basil (roughly chopped). Add half the Parm to the sauce and stir. Add cooked Gnocchi, and cooked sausage slices to sauce and stir. Grease an oven proof dish (I used 2 individual dishes, but you can also use 1 and then divide them in plates when ready). Pour the gnocchi mixture in it, top with the mozzarella slices and the remaining thinly grated Parmigiano Reggiano. Put the gnocchi in the oven and broil them for about 10 minutes, or until the cheese melts and becomes golden.

For the Tomato Sauce
15 oz. can crushed tomato
1 tbsp extra virgin olive oil
1 small onion
10 basil leaves
Salt to taste
For the Final Dish
1.1 lbs potato gnocchi, cooked
1 link sweet Italian sausage, cooked & sliced
5.5 oz. fresh mozzarella (3.5 oz. cubed, 2 oz. sliced)
2 oz. Parmigiano Reggiano

Steps:

  • Heat avocado oil in a large, nonstick skillet over medium-high heat. Add onion and cook until softened, 3 to 4 minutes. Add garlic and cook just until fragrant, about 30 seconds. Add sausage; stir to break up the meat and cook until well browned, 5 to 7 minutes.
  • Drain excess oil and keep meat mixture in the skillet. Add gnocchi, stirring to break up any clumps. Stir in tomatoes, salt, basil, oregano, and pepper. Cover and simmer for 5 minutes.

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium heat. Add sausages and cook until browned and firm, about 10 minutes. Cut sausages into 1/2 inch slices, return to the skillet, and continue cooking until no longer pink. Drain sausage slices on a paper towel lined plate.
  • Meanwhile, heat 1 tablespoon olive oil in a saucepan over medium heat; stir in onion and cook until the onion softens and turns translucent, about 5 minutes. Add garlic and 1 1/2 teaspoons Italian seasoning; cook until the garlic softens, about 2 minutes. Pour in crushed tomatoes, water, salt, sugar, and remaining 1 tablespoon Italian seasoning.
