Steps:

  • 1. Combine all ingredients and pour into an 8x10 inch glass dish.
  • 2. Top with extra grated cheese and bake in preheated 350 degree oven for 50-60 minutes.

3 eggs
1 tsp oregano, dried
1 tsp black pepper, coarsely ground
1 tsp salt
1/2 c vegetable oil
1 medium onion, chopped
1 1/2 c all purpose baking mix
1 1/4 c American cheese, grated
4 c zucchini, grated

Steps:

  • Heat oil in a non-stick skillet and add zucchini rounds. Season well and flip to brown both sides. Sprinkle in bread crumbs and toss to coat zucchini. Cook until golden brown.

3 tablespoons olive oil
2 small zucchini, sliced into about 1/4-inch rounds
Salt and pepper
1/2 - 1 cup Italian dry bread crumbs

Zucchini With Citrus-Herb Dressing image

Steps:

  • Cut zucchini lengthwise in half, and cut into 1/4 inch thick wedges about 1 1/2 inches long. Sprinkle wedges with salt.
  • Saute minced garlic in hot oil in a skillet over medium-high heat until lightly browned. Add zucchini; cook, stirring occasionally, 8 to 10 minutes or until tender.
  • Pour Citrus-Herb Dressing over zucchini, tossing to coat. Garnish with lemon slices. Serve immediately.

  • Whisk together all ingredients in a medium bowl. (1/2 cup).

Steps:

  • In a saucepan, bring water and salt to a boil. Add zucchini. Reduce heat; cover and cook until zucchini is crisp-tender, about 5 minutes. Drain well; set aside., In another saucepan, saute carrots and onion in 4 tablespoons butter until tender. Remove from the heat; stir in 1-1/2 cups croutons, soup and sour cream. Gently stir in the zucchini., Pour into a greased shallow 2-qt. baking dish. melt the remaining butter and toss with remaining croutons; sprinkle over the top. Bake, uncovered, at 350° for 35-40 minutes or until heated through.
