Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in an 8 inch square pan. Stir in graham cracker crumbs, 2 tablespoons sugar and 1/4 teaspoon cinnamon. Pat over bottom and onto sides of dish. Set aside.
  • In a blender, combine cottage cheese, milk, eggs, flour, lemon juice, vanilla, 2/3 cup sugar and 1/4 teaspoon salt. Blend until smooth. Pour into prepared crust.
  • Bake in the preheated oven for 60 minutes, or until filling is firm. Allow to cool completely.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). In a small bowl, stir together the crushed macaroons and butter. Press into the bottom of a 9 inch springform pan. Bake for 15 minutes in the preheated oven; remove and cool.
  • In a medium bowl, stir cream cheese and sugar together until well blended. Stir in matzo meal, milk and vanilla until smooth. Mix in the eggs one at a time.
  • Combine the chocolate chips and butter in a small microwave-safe dish. Heat at 30 second intervals until melted, stirring at each interval. Stir into the cream cheese batter. Pour the batter over the cooled crust and smooth the top.
  • Bake in the preheated oven for 40 minutes, or until the center appears solid when jiggled slightly.

Passover Cottage Cheese Cake image

Steps:

  • Set oven rack at middle of oven; preheat oven to 325 degrees F.
  • Prepare the crust:.
  • In a small bowl with an electric mixer, beat the butter until smooth. Add matzo meal, sugar and cinnamon; beat until it resembles coarse meal. Add wine, blend just until it holds together.
  • Press onto bottom (and partly up the sides) of an ungreased 8 inch springform pan.
  • Prepare the filling:.
  • In a large bowl with an electric mixer, beat the cottage cheese and cream cheese until smooth.
  • Add the egg yolks one at a time, beating well after each addition.
  • Beat in sugar. Add sour cream, potato starch, rind and vanilla; beat until combined well.
  • In a separate bowl with clean beaters, beat egg whites until they just hold stiff peaks.
  • Stir ½ cup of the beaten egg whites into the cheese mixture. Fold in remaining egg whites gently but thoroughly.
  • Pour on top of prepared crust.
  • Bake for 1 hour. Turn off oven; let cake cool in oven with door slightly open.
  • Chill in the pan at least 4 hours or overnight.
  • Run a thin knife around edge of pan; remove side of pan.

Steps:

  • Preheat oven to 325°F if using a 9-inch silver springform pan (or to 300°F if using a 9-inch dark nonstick springform pan). Mix cookie crumbs and margarine; press firmly onto bottom of pan.
  • Beat cream cheese, cottage cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour over crust.
  • Bake 55 min. to 1 hour or until center is almost set. Run small knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight. Spread sour cream over top of cheesecake; top with strawberries just before serving. Store leftover cheesecake in refrigerator.

  • Lightly oil griddle or frying pan and heat the pan.
  • Mix all ingredients together in a bowl.
  • Adjust thickness of batter by adding liquid (or matzo meal).

  • These are great with strawberries and yogurt.
  • For non-Passover use, you can substitute regular flour for the matzo meal.

Steps:

  • Heat oven to 325°F.
  • Mix cookie crumbs and margarine; press onto bottom and 1 inch up side of springform pan sprayed with cooking spray. Bake 12 min.
  • Meanwhile, beat cream cheese and 1 cup sugar with mixer until well blended. Add zest; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour into crust.
  • Bake 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.
  • Blend strawberries in blender until smooth; strain. Stir in orange juice and remaining sugar. Serve spooned over cheesecake slices.

Steps:

  • Beat the eggs and sugar for a few minutes until pa;e and somewhat increased in volume.
  • Beat in the farmer cheese.
  • Add the butter, vanilla extract, and salt.
  • Slowly stir in enough matzo meal to make a batter that holds together.
  • In a skillet, heat oil, and drop the batter by tablespoonfuls into the hot oil.
  • Flatten the pancakes slightly with the back of a spoon, and fry for 3-4minutes on each side.
  • Don't crowd the pan. Add more oil if needed.
  • Drain the latkes on paper towels and serve sprinkled with cinnamon.
  • Sour cream and/or jam is a great accompaniment.
