PINEAPPLE GOOEY CAKE
This is a variation on Paula Deen's Pumpkin Gooey Butter Cake. It was made and served at a Bake Sale in my office and the baker referred me to the Food Network for the recipe. It is scrumptious!

Steps:
- Preheat oven to 350°.
- Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.
- To make the filling: In a large bowl, beat the cream cheese and pineapple until smooth. Add the eggs, vanilla, and butter, and beat together.
- Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pineapple mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.
- Serve with fresh whipped cream.

GOOEY COCONUT PINEAPPLE BUTTER CAKE
This is spinoff of Paula Deen's Gooey Butter Cake. This is very rich and a little goes a long way. I have had her gooey cake from QVC and it is very good. You can't eat much.

Steps:
- Preheat oven to 350 degrees F. Lightly grease a 13 by 9 by 2-inch baking pan.
- For the cake: In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into bottom of prepared pan and set aside.
- For filling: Still using an electric mixer, beat the cream cheese until smooth. Beat in the eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce the speed and slowly pour in butter. Mix well. Fold in coconut and pineapple.
- Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes.
- Don't be afraid to make a judgement call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point.
- Remove from oven and allow to cool completely. Cut into squares.

COCONUT PINEAPPLE CHEESE CAKE
I like cheese cakes!! This delicious cheese cakes uses a cake mix for an easy base. Tastes great with a cup of coffee.

Steps:
- Mix the dry cake mix (reserving 1/2 cup), 1/2 C butter and 1 egg.
- Grease and flour a 13x9" pan.
- Press the mixture into the bottom and bake at 350 degrees until light golden brown (about 15 min).
- Beat together all the filling ingredients in a small bowl and set aside.
- Combine the 1/2 C reserved cake mix with the sugar and cornstarch for the topping.
- Stir into that the crushed pineapple, flavoring and 1 egg.
- Toast the coconut on a cookie sheet for about 5 minutes in a 375 degree oven.
- Pour the FILLING over the partially baked crust.
- Spoon the pineapple TOPPING over the filling.
- Sprinkle the toasted COCONUT over the pineapple filling.
- Bake for 350 degrees for 35-40 minutes.
- When done it should be a light golden brown and the filling should be set.
- Cool, then refrigerate for 2 hours before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Mix cake mix and 2 eggs together in a bowl. Add butter and vanilla extract; mix until batter is smooth and thick. Spread batter into the prepared baking dish.
- Beat confectioners' sugar, cream cheese, and 2 eggs together in a bowl until smooth; spread over batter.
- Bake in the preheated oven until sides of cake are pulled away from dish and browned, 25 to 35 minutes. Cool cake completely. Sprinkle more confectioners' sugar over cooled cake.

- In large mixing bowl, beat the eggs, sugar and vanilla until fluffy.
- Combine the flour, baking soda, baking powder and salt; add to egg mixture alternately with pineapple.
- Stir in walnuts.
- Pour into greased 13-inch by 9-inch by 2-inch baking pan.

- For the crust: Preheat the oven to 350 degrees F. Spray a 9-by-13-inch glass baking dish with cooking spray.
- Combine the cake mix, nutmeg, vanilla and eggs in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until smooth, about 1 minute. Add the melted butter and mix just until combined. Spread the mixture evenly in the prepared baking dish.

- Preheat oven to 350 degrees. Spread coconut on a rimmed baking sheet. Bake until lightly toasted, tossing occasionally, 6-10 minutes; set aside. Butter and flour a 9 x 5" loaf pan; set aside. In a medium bowl, whisk together flour, baking soda and salt; set aside.
- Using electric mixer on high speed, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Reduce speed to low and alternately add flour mixture in 3 parts and sour cream in 2, beginning with the flour mixture. Mix just until combined (do not overmix).
- Using rubber spatula, fold pineapple and 1 cup coconut into batter. Spoon into prepared pan and smooth top; sprinkle wiht remaining coconut. Bake until a toothpick inserted into center comes out clean, 65-70 minutes (cover pan halfway thorugh). Let cake cool in pan 15 minutes. Remove from pan and transfer to a wire rack to cool completely. To store, keep at room temperature, wrapped in plastic for up to 2 days.

- Mix margarine, cake mix, 1 egg and pecans together and pat into a greased 9x13 pan.
