GORDITAS - CRISPY PUFFY TACOS

The first time I tried gorditas I thought they were so good I ended up having 4 of them! They are light and crispy and completely addictive. You can fill them with anything you like from taco fillings, to bbq and they are always very good.

Steps:

  • 1. Mix Masa and salt together in a heat proof bowl.
  • 2. Add 1 1/2 cups boiling water to Masa mixture. Stir with a spoon to combine
  • 3. If the dough is still too dry add 1 tablespoon of water at a time until dough is pliable.
  • 4. Allow dough too cool a little. When it is still very warm knead until the dough is smooth and elastic. It will remind you a little of the softness of pizza dough
  • 5. Cover with plastic wrap and allow to rest 30 minutes.
  • 6. While dough is resting preheat your iron skillet to medium heat. Turn on your deep fryer about 10 minutes before you press your first gordita
  • 7. Separate dough into 10 equal pieces. Press between plastic in a tortilla press until it is about 3/8 inches thick and 4" in diameter.
  • 8. Place gordita on to you iron skillet. Cook for 1 minute until it releases from pan.
  • 9. Flip and cook the other side.
  • 10. Remove from skillet and drop immediately into deep fryer. Make sure to drop in a way that it completely submerges itself in the oil.
  • 11. It will begin to "puff" up right away. Cook until light, crispy, and golden brown.
  • 12. Remove from deep fryer and allow to drain. I use a metal colander for this.
  • 13. Continue until all gorditas are cooked.
  • 14. Transfer to a baking sheet lined with paper towels.
  • 15. Top with your favorite toppings, beans, onion, cheese, and taco sauce. Shredded pork, slaw, pico. Use your imagination. Have fun and enjoy!

Steps:

  • Mix masa, water and beans with hands until mixture forms dough; roll into 12 balls, each about 2 inches in diameter. Cover with damp towel until ready to use.
  • Flatten each ball into 5-inch round. Spoon 2 Tbsp. cheese onto center of each round; gather dough at top to completely enclose filling, pressing edges together to seal. Flatten to 4-inch gorditas (patties).
  • Heat large skillet or comal sprayed with cooking spray on medium-high heat. Add gorditas; cook 2 to 3 min. on each side or until slightly puffed. Serve topped with sour cream and salsa.

Even though some would consider gorditas a snack food,these are very rich,especially if served with salsa negra,and make a very satisfying meal.These are good topped with a fried egg,tooThis is a recipe that's best made with friends-someone else can press out the disks while you fry them saving a lot of trouble.It's a little trickier ,but you can still make these if you are cooking alone(I did).The gorditas and salsa negra are Rick Bayless recipes,the additional garnishes my own touch.

Gorditas Infladas (Fried Puffy Black Bean Gorditas) image

Steps:

  • Toast the avocado leaf by holding them over a hot burner with tongs and turning until toasty.
  • Puree beans and avocado leaf with enough liquid from the beans to make a smooth puree.
  • Add puree to the masa and add salt to taste.Mix well.It should be thick enough to form in you hand but still wet and pliable.
  • Form the dough into 24 balls.Using a tortilla press lined with wax paper or plastic press the balls into disks about 1/8 inch thick and 4 inches diameter.
  • Pour oil 1/2 inch deep in a deep frying pan and heat over medium high(oil should be about 375 f).
  • Carefully fry one gordita into the hot oil and using a spoon,bathe the top of the gordita with hot oil.The gordita should begin to puff.After 30 seconds,flip the gordita and fry for 15-20 seconds more.remove to a paper towel lined plate and keep warm.
  • Repeat with the remaining dough.Do not fry too many gorditas at once about 2 or 3 at a time is enough.
  • Serve topped with salsa negra,thinly sliced radishes,crumbled cheese,and pickled red onions.

Steps:

  • Combine the corn dough and 1 cup water, adding the water little by little until the dough is soft, smooth and doesn't stick to fingers. Take 3/4 cup dough and roll into a ball, then flatten into a 1/2-inch thick round disk. Place on a hot flat-top or in a cast-iron skillet for 4 minutes to form a crust. Flip and repeat on the other side. Using a knife, poke into the edge of the gordita, opening up one-third of the inside, making it into a pocket. Repeat with the rest of the dough. Set aside, covered, while making the filing. Pour the vegetable oil on the flat-top or in the cast-iron skillet. Remove the chorizo from its casing and crumble onto the hot oil. Cook for 1 minute, releasing the spices. Add the poblano peppers, garlic, tomatoes and onions. Stir-fry for 2 to 3 minutes. Spread a spoonful of the refried beans inside a gordita. Add the chorizo/vegetable mixture and garnish with lettuce, sliced tomatoes and queso fresco.

Steps:

  • Divide the masa into 6 balls. Press each one between 2 sheets of plastic wrap to form 6inch rounds about 1/8inch thick. Heat a dry non-stick pan or well-seasoned griddle pan over medium heat. Toast the gorditas, turning frequently, for 3 to 4 minutes per side or until speckled and golden on the outside and puffy. Set aside for up to 6 hours before finishing the dish.
  • In a large, heavy saucepan or deep fat fryer, heat 2 inches of vegetable oil to 350 degrees. Deep fry the gorditas, in batches, until golden brown. When cool enough to handle, split open like pita bread and fill the pockets with either Carne Asada or Grilled Fish and White Bean fillings.

Steps:

  • In a large bowl, stir together the masa harina, salt and hot water. Gradually mix in the shortening and flour. If the dough seems dry, add a little more hot water. Form the dough into balls that will fit into the palm of your hand.
  • Line a work surface with waxed paper or plastic. Sprinkle with water. Flatten balls on the wet surface until about 1/4 inch thick.
  • Heat a griddle or comal over medium heat. Cook the gorditas on each side until they are cooked through.
  • Heat oil in a large heavy skillet over medium to medium-high heat until hot. Fry each gordita until puffed, pressing it down into the oil occasionally with a spatula. Drain briefly on paper towels, cut the tips off and stuff full of your favorite foods.

  • Mix together masa harina, water and salt to create a dough. Roll the dough into 16 little balls. Heat a large skillet, griddle or comal over medium-high heat.
  • Lightly flatten a masa ball in between two sheets of plastic wrap using a tortilla press or a flat plan. Make sure not to press it down too much as it will become too thin like a normal corn tortilla. You want it about twice as thick as a normal tortilla.
  • Remove the flattened masa from the plastic wrap and place it on the hot griddle. Let it cook for about 10 to 15 seconds, flip it over and let that side cook for another 10 to 15 seconds.
  • Flip it over one more time and cook each side for about 1 minute, until it has beautiful brown spots.

  • Purée the plantain in a blender with the milk. In a medium-sized mixing bowl, combine the mixture with the masa, 1/4 cup of the flour, and 1/2 teaspoon of the salt. With your hands, mix the ingredients into a dough; work in more flour, 1/2 tablespoon at a time, just until it has a smooth, somewhat pliable but firm consistency. Taste for salt and work in a little more if desired. Shape the dough into about 12 ping-pong-sized balls and keep them covered with a damp cloth as you work.
  • Press out each ball of dough into a 5-inch round; place them on baking sheets lined with parchment or waxed paper.
  • Pour oil into a deep-fryer or deep heavy skillet to a depth of about 1-1 1/2 inches. Heat to 375 degrees F, or until a morsel of dough sizzles on contract. Have ready a large cooking spoon and a slotted spatula or skimmer. Slip the gorditas into the oil, one at a time. They will sink to the bottom at first, then come to the top. As the gordita rises to the surface, start flicking spoonfuls of the oil over it to make it puff evenly. Fry without turning for about 20-25 seconds; it should be darker than lightly golden. Turn and fry for about 10-15 seconds more. At once lift out with the skimmer, letting as much oil as possible drain back into the pan. Set on a baking sheet lined with paper towels. Watch the temperature carefully as you work and adjust the heat as necessary to maintain the oil at 375 degrees F.
  • It’s impossible to predict just how long it will take a gordita inflada to deflate. But they will be at their most tender, and most irresistible if eaten hot, hot, hot, as they come out of the pan.
