THE BEST GUACAMOLE
Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

Steps:
- Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
- Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
- Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.
PERFECT GUACAMOLE

- Put the avocado cubes in a glass bowl. Add the cilantro, tomatoes, red onion, lime juice, jalapeno, cumin, salt and pepper. Gently, using 2 wooden spoons or paddles, work from the outside blending until the avocado cubes start to break up yet chunks still remain. Work slowly, taking time to ensure the guacamole stays chunky and creamy.
- If not serving immediately, press a piece of plastic wrap directly on top of the guacamole to cover it completely so it doesn't brown. When ready to serve the guacamole, garnish with a tortilla chip in the middle of the bowl. Serve with the remaining chips on the side for dipping.

- Preheat the oven to 350 degrees F.
- Halve the avocados lengthwise, remove the pits, and scoop the flesh out of the skin.
- Add all the ingredients, except the tortillas, to a bowl. Blend with a fork until the mixture is just slightly lumpy.
- To make flame-like tortilla chips for garnish, cut flour tortillas into wavy triangles shapes, then bake on a cookie sheet until crisp, about 5 minutes.

- Halve and pit 2 ripe avocados and scoop the flesh into a mixing bowl.
- Mash the avocados with a fork until the mixture reaches a coarse, chunky consistency. Stir in the remaining ingredients: 1 onion, minced, 1 garlic clove, minced and mashed to a paste with ½ tsp. salt, an additional ½ tsp. salt, 4 tsp. lime juice, ½ tsp. ground cumin, 1 jalapeño, seeded and minced, and 3 tablespoons chopped fresh cilantro, if using. Taste and adjust seasoning. MAKE AHEAD: This guacamole recipe can be made two hours in advance. Press plastic wrap flush with the surface of the dip to prevent oxidation. Let it come to room temperature before serving.

- In a molcajete or food processor, grind onion, chiles, and salt into a rough paste. Gradually add the avocado, coarsely mashing it (you'll want it to be chunky). Stir in the lime juice. Fold in the pear, grapes, and 1/2 cup of the pomegranate seeds. Sprinkle remaining 1/4 cup pomegranate seeds over the guacamole and serve.

- For the sake of visual purposes– though it’s not necessary– save a bit of the tomato, red onion, and chopped cilantro on the side. This is for garnishing the the finished guacamole later on.
- Cut the avocados in half, and remove and discard the stones. Using a spoon, scoop the avocado into a large bowl, then roughly mash into a chunky paste. I use a fork here, though you can go the more traditional route and go with a molcajete / mortar and pestle.
- Juice the 2 limes into the bowl of mashed avocado (things might look a little liquid at this point, but I promise it’ll all come together). Add the diced tomato, red onion, cilantro, jalapeño. Quickly stir, and add salt per your taste. Top with the reserved tomato, red onion, and cilantro. Cover with plastic wrap and chill for up to 1 day or two in advance (there’s a lot of lime in here, trust me- it keeps), or serve right away with tortilla chips.
