EASY MASHED POTATO CASSEROLE
Great for preparing beforehand and then an easy 35-minute bake when company comes over.

- Preheat oven to 350 degrees F (175 degrees C). Butter a casserole dish.
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes.
- Drain potatoes; reserve water for mashing, if necessary. Add sour cream, cream cheese, onion salt, garlic powder, and pepper; beat until creamy. Pour into the prepared dish. Cover with Cheddar cheese, parsley, and paprika.
- Bake, uncovered, until cheese is bubbly, about 35 minutes.

GOURMET MASHED POTATO CASSEROLE
This recipe was given to me years ago by a very good friend who was an excellent cook. I have made it over and over again. My husband loves it! I have never had it with mashed potatoes, only riced!! Great to make ahead, refrigerate, bring to room temperature and cook when needed!!

Steps:
- Boil potatoes in salted water to cover until tender.
- Mash or rice potatoes.
- Whiles still hot, add sour cream, cottage cheese, onion, butter or margarine, pepper and salt, and mix well.
- Place in casserole.
- Sprinkle parmesan on top.
- Bake in preheated 325 degree oven for 30 minutes.
- Recipe easily doubled.

BUD'S MASHED POTATO-CREAMED CORN CASSEROLE
This casserole is a lot like the man who invented it-larger than life, over the top, and guaranteed to make you happy. Bud's the name behind Royers Round Top Café, a "contemporary comfort food" oasis in, no surprise-Round Top, a 1 1/2-hour drive from Austin-that serves up heaping portions and Bud's famous pies. Bud's casserole is a side dish that's hearty enough to qualify as a main course, and a great option if you have vegetarian guests coming for dinner.

- Preheat the oven to 350°F. Grease a large, deep casserole with butter or cooking spray.
- Place the potatoes in a large stockpot, cover with water, and bring to a boil over high heat. Immediately decrease the heat to medium and cook until the potatoes are fork-tender (literally when you stick a fork in a spud, it slides out with ease), about 20 minutes; drain. Return the warm potatoes to the pot and mash with the 1/2 cup melted butter, sour cream, and ranch mix, leaving just a few chunks of potato. Set aside.
- In a saucepan set over medium heat, stir together the corn kernels and the remaining 1/2 cup butter until the corn is heated through. Stir in the creamed corn, cream cheese, salt, and pepper and cook until the cream cheese has melted and combined with the rest of the ingredients.
- Stir the creamed corn mixture into the potato mixture and turn it out into the prepared casserole. Bake until hot, about 30 minutes. Just before serving, sprinkle the onion and blue cheese over the top of the casserole. Serve immediately.
- The casserole can be assembled up to 1 day in advance, covered, and refrigerated. Bake just before serving.

Wow! This recipe is from Bon Apetit and this casserole pairs well with pork loin or a roasted chicken. Heck, the casserole is a meal in itself. The flavor of bacon and gouda are wonderful together. be sure and use applewood bacon and smoked gouda for the best combination.

Steps:
- Grease 13 x 9 x2 inch pan or spray with cooking spray.
- Cook bacon in a large heavy skillet until browned; transfer to paper towels and drain.
- Chop bacon and place in a medium bowl.
- Chop green onions, green parts only and add to bowl.
- Shred the gouda cheese; set aside.
- Peel potatoes and cook in a large pot with enough water to cover; sprinkle with salt.
- Cover and boil with lid ajar until potatoes are fork tender, about 15-20 minutes.
- Drain well and return potatoes to pot. Add sour cream, milk and butter.
- Using a potato masher, mash until almost smooth.
- Add 1 1/2 C shredded gouda cheese and 1 C bacon and onions.
- Spread potatoes into casserole and season with salt and pepper.
- Add remaining gouda over the top.
- Bake at 375 F until the cheese melts, about 30 minutes.
- Sprinkle with remaining bacon and onions and serve.
MASHED POTATO CASSEROLE
This casserole may upset some mashed potato purists, but take heart: one bite and they'll be won over. The genius of this recipe, besides its utter deliciousness, is that it can be made the day before, or even two. Cook the potatoes, assemble the casserole, wrap tightly and store it in the refrigerator. When dinnertime comes, dust it with the cheese, butter and bread crumbs and bake the whole thing off. - Lightly grease a 9-inch-by-13-inch baking pan.
- In a large pot, bring the potatoes, 4 quarts water and 2 tablespoons salt to a boil. Boil potatoes until fork tender, about 20 minutes. Drain.
- Mash potatoes with 10 tablespoons butter, sour cream, 1 teaspoon salt, and pepper. Mash in the chives. Taste and adjust seasoning, if necessary. Spread potatoes into the prepared pan. Cover and refrigerate for up to three days.
- In a small bowl, combine the remaining 4 tablespoons butter, bread crumbs and cheese. Mix together until it forms coarse crumbs. Crumbs can be refrigerated for three days.
- Heat the oven to 400 degrees. Sprinkle crumbs over the top of the potato casserole and bake until golden and crisp, 30 to 40 minutes.
