SHORT'NIN' BREAD

"Mix up the flour, then you'll be fed. Mama's little baby loves shortnin bread." My grandfather used to sing that to me when I was a kid. I'd never seen a recipe for the famed "shortnin bread" until I started digging around for some very old, Southern recipes.

SHORTNIN' BREAD, TENNESSEE STYLE.

I was shocked to not find Shortnin' Bread here. So, here it is, antebellum style, and it sounds delicious. There is no shortening in here, since shortening once referred to any type of cooking fat. The original shortnin' bread, according to some, was a savory cornbread layered with bacon. It is now categorized as a sweet dessert, and encompasses all from Scottish Shortbread to regular sugar cookies. This, however, is one of the original recipes from pre-war Tennessee. I'm sure all "mama's little babies" will love this. Thanks to Margaret Nichol.

SHORT'NIN' BREAD

There used to be a nursery rhyme: "Mammy's little baby loves short'nin', short'nin', Mammy's little baby loves short'nin' bread. This recipe will make more of a shortbread cookie that requires very cold milk or a good cup of tea. From the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

Answer (1 of 12): I have seen so many “original lyrics” that I can't say what it's intent was. What I can tell you is I grew up in the South in the 1960s. My Dad sang this song to me often while bouncing me on his knee. He did not sing it in a negro vernacular, nor …

WHAT IS SHORTENING? | BOB'S RED MILL BLOG
Shortening, by definition, is any fat that is solid at room temperature and used in baking. This actually includes a few things that you may have thought were definitely not shortening before–like lard, and margarine, and hydrogenated vegetable oils, for instance. Shortening helps give baked goods a delicate, crumbly texture.

SHORTNIN’ BREAD MEANDER – ELIZABETH GAUFFREAU
Shortnin’ bread was a traditional quick bread in the American South during the plantation era. Doing some Google searching for recipes, there appears to be little agreement now about what it actually is. My understanding is that it was made originally with with cornmeal or flour and lard. Cornbread is also a quickbread (made without yeast); it includes eggs and milk. …
