- Place both flours, sugar, baking powder, baking soda, salt and cinnamon into the bowl of a food processor and pulse several times to combine. Add the butter and pulse until the mixture resembles cornmeal. Add the molasses, milk and vanilla extract and process until the dough forms a ball, approximately 1 minute. Press the ball into a 1/2-inch thick disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 350 degrees F.
- Unwrap the chilled dough and place it onto a large piece of parchment paper and top with a second sheet of parchment paper. Roll the dough out until it is 1/8-inch thick. Slide the rolled dough and parchment paper onto a half sheet pan. Remove the top sheet of parchment paper and cut the dough, using a rolling pizza cutter into 2-inch square pieces, by making vertical and then horizontal cuts all the way across the dough. Trim off any excess. Using a fork, poke holes all over the top of the dough. Leave the crackers on the pan and bake on the middle rack of the oven for 25 minutes or until the edges just start to darken. Remove from the oven, set the sheet pan with the crackers on a cooling rack and allow to cool completely. Once completely cool, break into individual crackers and store in an airtight container for up to 2 weeks.
GRAHAM CRACKER LETTERS
This is a recipe I just remembered. It came from a Sesame Street cookbook and I can't remember what the cookbook was called, but I think this was around the 1980's to 90's that I had this cookbook and I loved it. I tried this recipe along with many others and really enjoyed them. I am going to post this recipe as close to the original as possible. If I made this now, I'd have to replace the real cream cheese with soy cream cheese, due to my IBS. This is a lot of fun for kids, and tasty and fairly healthy too. :) I'm posting it here to share with the 'Zaar community and for safekeeping, so I don't forget it. I do not remember the ingredient amounts, only the ingredients themselves, and so I am going to estimate this for one child. You'll need a plastic baggie and scissors for this, too. Edited to add: After posting this and waiting for approval, I got to thinking, and the picture in my mind's eye makes me think that I might have listed the ingredients here backwards; in other words it might have been apple butter as the base spread and cream cheese (softened) as the topping for making the letters on each graham. In that case this would be a bit healthier. I'm thinking either way will work just fine. :)

- Spread each graham cracker rectangle with cream cheese.
- Place the apple butter into the corner of a plastic sandwich bag. Adults, take a pair of scissors and snip off the corner.
- Squeeze the apple butter into alphabet shapes onto the cream-cheese-covered graham crackers. Enjoy!

Everyone loves pie, but not everyone loves the sometimes-finicky task of making a traditional rolled-out pie crust. For them, there is this press-in crust made with just graham cracker crumbs, sugar, salt and butter. It works best with fillings that don't require the structure and heft of traditional pie dough, like this Key lime pie or this ube pie.

- In a medium bowl, combine graham cracker crumbs, sugar and salt. Stir in the melted butter. (Mixture will look like wet sand.) Press into the bottom and up the sides of a standard (not deep-dish) 9-inch pie pan. Fill and bake according to your recipe. (If your recipe calls for a prebaked crust, bake for 6 to 9 minutes at 375 degrees until just lightly browned. Let cool completely on wire rack before filling.)

- In a medium bowl, cream together the shortening and brown sugar. Stir in the vanilla. Combine the whole wheat flour, all purpose flour, baking powder, baking soda and salt, stir into the creamed mixture alternately with the milk. Cover and chill dough until firm.
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. On a lightly floured surface, roll the dough out to 1/8 inch thickness. Cut into rectangles. Place 1/2 inch apart onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, or until crisp. Edges will be golden brown. Remove from baking sheet to cool on wire racks.

- If you’re starting out with full-sheet graham crackers, you can use a food processor or blender to grind them up. Or crush them in a zipped top bag with a rolling pin.
- Mix the graham cracker crumbs, melted butter, and granulated sugar together with a rubber spatula in a medium bowl until combined. The mixture will be thick, coarse, and sandy. Use the bottom of a flat measuring cup like I do in these photos. It helps! The crust will be thick.
- For a baked dessert, pre-bake this crust per your recipe’s directions. I usually pre-bake for 10 minutes at 300°F (149°C) or 7-8 minutes at 350°F (177°C). For a no-bake dessert, chill the crust for 2 hours before using in your recipe.
