Steps:
- Beat egg yolks, sugar and flour with a electronic mixer until lightly lemon colored.
- In a medium saucepan, heat milk and cream until bubbly around the edges.
- Beat into yolk mixture.
- Transfer to saucepan, cook gently over low heat, stirring constantly, until custard has thickened.
- Stir in liqueur.
- Serve warm or cold.

- Mix butter and sugar heat in microwave oven on high for 1 minute.
- Add cream, Grand Marnier and orange zest.
- Heat for 2 minutes stir and heat for 1 more minute.
- Add orange food coloring for eye appeal stir.
- Serve warm.

GRAND MARNIER CUSTARD SAUCE
A lovely, Grand Marnier scented creme anglaise to accompany most desserts. Especially nice with the Poached Pears recipe I have posted.

Steps:
- Beat egg yolks and sugar with whisk in medium saucepan until light in colour, about 5 minutes.
- Scald heavy cream and half and half in separate saucepan.
- Stir hot cream gradually into yolks, whisking constantly.
- Cook, stirring constantly, over medium-low heat, until sauce thickens and coats the back of a spoon; do not allow to boil.
- Remove from heat.
- Stir in Grand Marnier and orange zest.
- Cool to room temperature.
- Place plastic wrap directly onto surface and refrigerate until cold.

This is a delicious sauce served over grilled or baked shrimp or scallops. Do not drown the seafood in this sauce. Just drizzle it. We love it.

Steps:
- Slice butter into 1/4-inch slices.
- In a small saucepan, heat orange juice, sugar and orange rind, on low temperature stirring often for 5 minutes.
- Increase heat and bring to boil.
- The mixture will thicken and become syrupy.
- Whisk the mixture and add the butter, piece by piece.
- When thoroughly blended, remove from heat and stir in Grand Marnier. Serve immediately.

GRAND MARNIER SOUFFLES WITH CRèME ANGLAISE

- Preheat oven to 400°F. Generously butter eight 1-cup (3 1/2 x 2-inch) ramekins and coat with sugar, knocking out excess sugar.
- In a 1 1/2-quart heavy saucepan melt 3/4 stick butter over moderately low heat and whisk in flour. Cook roux, whisking, 3 minutes. Add milk and cook over moderate heat, whisking, until mixture is very thick and pulls away from sides of pan. Transfer mixture to a bowl and cool 5 minutes. In a large bowl whisk together yolks, vanilla, oil, and a pinch salt, and whisk in milk mixture and Grand Marnier, whisking until smooth.
- In a large bowl with an electric mixer beat whites until they hold soft peaks. Beat in 1 cup sugar, a little at a time, and beat meringue until it just holds stiff peaks. Whisk about one fourth meringue into yolk mixture to lighten and with a rubber spatula fold in remaining meringue gently but thoroughly.
- Spoon batter into ramekins, filling them just to rim, and arrange ramekins at least 1 1/2 inches apart in a large baking pan. Add enough hot water to pan to reach halfway up sides of ramekins and bake soufflés in middle of oven 20 minutes, or until puffed and tops are golden.
- Remove pan from oven and transfer ramekins to dessert plates. With 2 forks pull open center of each soufflé and pour some crème anglaise into opening.
- Serve souffl s immediately.
GRILLED SALMON IN GRAND MARINER SAUCE
Steps:
- Fold aluminum foil to make a "tray" (bend sides up), about 9 x 13 size. Put on a cookie sheet to support the foil tray. Spray the tray lightly w/cooking oil. Drizzle about 1/4 cup of the sauce onto the foil tray. Lightly season the fish w/ Johnny's Seasoning Salt. Slide foil tray w/ fish onto the hot barbque and watch it carefully. As the fish starts to change color about 1/4 of the way through the fillet, gently flip it over and drizzle with more sauce to lightly coat. Finish cooking, and remember NOT TO OVER COOK as it continue to cook on the serving platter. Put cooked fish onto platter and drizzle with a bit more sauce and sprinkle w/ sesame seeds, (optional) chopped garlic chives and remaining sauce. Serve w/ streamed Brown Rice or Potato Croquettes, Fresh Green Salad and Rosemary Bread.

- Combine sugar, water and lemon juice in a saucepan.
- Stir over medium heat until sugar is dissolved.
- Bring to a boil, reduce heat to low and simmer, uncovered, for about 5 minutes or until mixture becomes slightly syrupy.

- Serve warm.

- Combine first 4 ingredients and 2 tablespoons Grand Marnier in processor. Blend until smooth. Taste and add more Grand Marnier, if desired. Transfer mixture to bowl and refrigerate until cold, about one hour. (Can be prepared 1 day ahead. Keep refrigerated.)

- Set an oven rack in the middle of the oven and preheat oven to 375 degrees F. Butter a 4-cup souffle dish (the souffle won't rise as tall if using a larger dish) with 1 tbsp of the butter and dust it with granulated sugar, tapping out any excess. Prepare a collar for the souffle dish by buttering one side of a long 4-inch-wide strip of parchment paper with 1 tbsp butter, then dust it with some granulated sugar. Wrap the prepared side of the parchment paper around the outside of the souffle dish and tie it in place with kitchen string. It should rise above the rim of the dish by about 3 inches. Set the dish aside.
- In a medium, heavy-bottomed saucepan, mix the orange rind with 7 tbsp of the granulated sugar, off the heat. Stir in the flour. Add the milk, stirring until smooth. Bring to a boil over medium heat, stirring constantly, and cook until thick, about a minute.
- Continue to cook over medium heat until the mixture has thickened. Remove from the heat.
- In a standing mixer fitted with a balloon whisk attachment, whip the egg whites and pinch of salt on low speed, to form small bubbles. Gradually increase to medium speed, and add the remaining 1 tablespoon of sugar. Increase to high speed and whip until stiff, but not dry, peaks form.To the flour mixture, whisk in the egg yolks, one at a time, whisking well after each addition.
- Add the egg yolk mixture to a large mixing bowl, and whisk in the Grand Marnier, vanilla extract, and remaining 2 tbsp butter until smooth.Gently fold together the egg whites and yolk base, adding a third at a time, until all is incorporated.Pour the batter into the prepared dish, and bake in the oven for 30 minutes.
- Remove the souffle from the oven, discard the paper collar, dust with powdered sugar, and serve immediately.

- Combine milk, butter and 1/3 cup sugar in medium saucepan over medium heat and bring to boil, stirring occasionally.
- Using electric mixer, beat yolks and remaining sugar in small bowl until thickened.
- Add cornstarch and continue beating until mixture is light and lemon colored.
- Gradually beat in enough hot milk to warm mixture slightly.
- Strain into remaining milk, whisking until blended.
- Place over medium heat and bring to boil.
- Remove from heat and stir in vanilla. Let stand until cool.
- Refrigerate until ready to serve.
- Just before serving, cook over low heat, stirring in liqueur and cream.
