GRANDMA'S HOMEMADE GRANOLA
My grandmother and I created this homemade granola recipe one day, and it is currently loved and requested by the rest of my family, including my other grandma who used to be anti-granola! My favorite ways to serve it are in coconut Greek yogurt or just in a bowl with milk. Simple and awesome.

- Preheat the oven to 325 degrees F (165 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
- Mix oats, pecans, almonds, and coconut flakes together in a large bowl. Set aside.
- Combine vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt in a medium saucepan over medium heat. Stir gently until it begins to boil; remove from heat. Pour over oat mixture and fold together until dry ingredients are well coated. Spread granola onto the prepared baking sheet.
- Bake in the preheated oven for 20 minutes. Stir and continue to bake on the top rack until golden, about 5 minutes more.
- Remove from the oven and let cool, 20 to 30 minutes. Toss with cranberries. Store in an airtight container.

- Preheat the oven to 325 degrees F (165 degrees C).
- In a large bowl, stir together the oats, almonds, walnuts, pecans, sesame seeds, wheat germ, coconut and sunflower seeds. In a small pan over medium heat, stir together the oil and honey. Cook and stir until blended. You could also do this in a large measuring cup in the microwave, heating for about 2 minutes and 30 seconds. Pour over the oat mixture, and stir to coat evenly. Spread out in an even layer on two cookie sheets.
- Bake for 20 minutes in the preheated oven, until the oats and nuts are toasted. Immediately after it comes out of the oven, stir in the raisins and dried cranberries. Let stand until cooled, and stir again to break up any large clusters. Store in an airtight container at room temperature for up to two weeks, but I guarantee it won't be around that long!

MOM'S HOMEMADE GRANOLA

- Preheat the oven to 400 degrees F.
- Line a 9-inch square baking sheet with foil, allowing the foil to extend over the sides. Spray with nonstick cooking spray.
- Mix the oats, cranberries, almonds, cinnamon and salt in a medium bowl.
- Combine the butter, sugar and honey in a medium saucepan over medium heat, stirring until the butter melts and the mixture begins to boil. Add the vanilla and stir. Remove from the heat.
- Pour the butter over the oats, mixing until well coated. Transfer to the prepared pan and, using a spatula, press the oats evenly into the pan.
- Bake until the top is crisp and golden brown, 15 to 20 minutes. Transfer to a rack and cool. Using the foil as aid, lift out of the pan and place on a work surface. Crumble into pieces. Serve with berries, plain yogurt and drizzle with additional honey.
GRANDMA BIRD'S GRANOLA
My DH's grandma's granola recipe, given to me by DH's aunt; amount made is estimated. I allowed for a serving size of 1/2 cup, as it is quite filling as well as high in fat (mostly "good" fat, but fat nonetheless!). Good plain or with fresh fruit, with milk or with yogurt. Prep/cooking time doesn't include cooling time.

- Put all dry ingredients in large roasting pan and mix well.
- Heat oil, vanilla & honey until mixture bubbles.
- Mix liquids with dry ingredients and stir thoroughly.

- Cool, break apart into pieces, and store in an airtight container.

Steps:
- Bring a large pot of water to a boil. Add broccoli and cauliflower florets to the boiling water and cook for 3 minutes. Drain, then transfer florets to a bowl of ice water to cool.
- Whisk mayonnaise, vinegar, pepper sauce, garlic powder, salt, and pepper for dressing together in a bowl.
- Remove florets from the ice water and put on paper towels to dry.
- When ready to serve, transfer florets to a large bowl. Mix in carrot, onion, and bacon. Pour in dressing and toss until well distributed. Let rest for 5 minutes before serving.

- Preheat oven to 300 degrees.
- Place oats, pumpkin seeds, sunflower seeds, coconut, pecans, syrup, olive oil, sugar, and 1 teaspoon salt in a large bowl and mix until well combined. Spread granola mixture in an even layer on a rimmed baking sheet. Transfer to oven and bake, stirring every 10 minutes, until granola is toasted, about 45 minutes.
- Remove granola from oven and season with salt. Let cool completely before serving or storing in an airtight container for up to 1 month.
