Steps:

  • Preheat the oven to 350 degrees F.
  • For the berry mixture: In a medium bowl, combine the raspberries and strawberries, granulated sugar, cornstarch and vanilla. Stir and set aside.
  • For the crisp: Butter an 8-inch square baking dish. In a large bowl (or food processor), combine the butter pieces, flour, oats, granulated sugar, brown sugar, pecans and salt. Cut together with a pastry cutter (or pulse in the food processor) until the mixture resembles coarse crumbs.
  • Press half of the crisp mixture into the prepared baking dish. Top with the berry mixture, then sprinkle the remaining crisp over the top. Bake until the topping is golden brown, about 45 minutes. Allow to sit for 10 minutes before serving.
  • For the whipped cream: Add the cream and granulated sugar to the bowl of a mixer and whip until soft peaks form.
  • Scoop out the crisp with a spoon and top with sweetened whipped cream

2 1/2 cups raspberries and sliced strawberries
1/3 cup granulated sugar
1 heaping tablespoon cornstarch
1 teaspoon vanilla extract
1 1/2 sticks (12 tablespoons) salted butter, cut into small pieces, plus more for greasing the baking dish
2 cups all-purpose flour
2/3 cup oats
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup pecans
Dash of kosher salt
1 cup heavy cream
1 teaspoon granulated sugar

Steps:

  • Preheat the oven to 375*F. Prepare fruit: slice large fruit (like apples and strawberries) and keep small fruit (like blueberries) intact. Toss fruit with 1/4 cup flour and 3/8 cup sugar, and pour into a deep baking dish (roughly 9" x 13" x 2").
  • For the topping: mix 1 cup flour and 1/2 cup sugar together in a food processor. Add the butter pieces, and pulse until crumbly; the biggest clumps should be 2-3 inches. Turn off the processor and break the largest clumps with your hands, so that the pieces range from 1/4-inch to 1-inch in size. (If you don't have a food processor, you can use a fork instead.).
  • Pour the crumbles over the fruit, and bake the crisp. If using berries/soft fruit: pour crumbles over the fruit and bake 30-40 minutes, uncovered. If using apples/firm fruit: bake 20 minutes covered with foil (or until fruit starts softening), then pour crumbles over top and cook for 30-40 minutes uncovered.
  • When done, fruit should be cooked and crumbles browned. Cool for about 15 minutes, and serve warm. Crisp stores well, covered in the fridge, for up to 5 days.

GRANDMA REDDY'S FRUIT CRISP - REVIEW BY LOVESTOHOST

I also had some fresh pineapple that needed to be used, so I diced it and added it to the cherry pie filling; it really worked well and added a nice juicy pop. I used funfetti cake mix, since it was a birthday, and did need to bake a …
