GRANDMA'S MEATLOAF WITH OATS

Grandma's meatloaf recipe was the best I have ever tried to make. My previous attempts to create a healthy, yet good tasting meatloaf recipe failed repeatedly because each attempt resulted in a dry loaf. Not so with Grandma's recipe! I added more seasonings and scaled her recipe up a bit so 2 full pounds of beef can be used and a whole can of tomato sauce (instead of a partial can). Plus beef is usually sold in 1-pound packages, so assembly time is reduced.

Grandma's Meatloaf with Oats image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix together ground beef, oats, tomato sauce, eggs, onion, garlic, salt, and pepper until well combined. Press into a 9x5-inch loaf pan.
  • Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (71 degrees C), about 1 hour.
  • Remove from the oven and spread ketchup over top. Serve with additional ketchup.

2 pounds lean ground beef
1 cup old-fashioned oats
1 (8 ounce) can tomato sauce
2 large eggs, slightly beaten
2 tablespoons minced dried onion
¼ teaspoon granulated garlic
¼ teaspoon salt
⅛ teaspoon ground black pepper
¼ cup ketchup, or to taste

This is my all time favorite dish, that my Grandmother served in her restaurant. She would serve this with real mashed potatoes and creamed corn.

Steps:

  • Mix everything together very well and shape into 2 loaves.
  • You can either pour the tomato juice or ketchup on top before baking, or apply the sauce to the top of the meat loaf 10 minutes before it is done.
  • Bake at 350 degrees for about 45 minutes to 1 hour or until done.
  • Makes 2 loaves.

2 lbs ground chuck
4 tablespoons Worcestershire sauce
1/2 cup grated onion
2 eggs, slightly beaten
2 cups breadcrumbs
1 cup milk
1 cup tomato juice (for topping) or 1 cup ketchup (for topping)
salt and pepper

Just simple and good. Grandma made meatloaf and served it hot for dinner and cold in sandwiches.

Grandma's Everyday Meatloaf image

Steps:

  • 1. Preheat oven to 350 degrees. Mix all ingredients well and shape into a loaf. Place in a bread pan. Bake for 35 minutes. Remove meatloaf briefly from oven and drain as much grease from pan as possible. Top meatloaf with 2-4 tablespoons more catsup. Return to oven and continue to bake for 10-15 more minutes or until done.
  • 2. Grandma served this hot with scalloped potatoes or cold in sandwiches.

1 lb lean ground beef
1 c dry bread crumbs
1 egg
1/2 c chopped onion
1/2 c catsup
salt and pepper to taste

Received this recipe from a former co-worker several years ago. This has turned out to be my husband's favorite meatloaf...very moist and tangy! This is also a way to sneak more veggies into your children's diet!

Steps:

  • Preheat oven to 375 degrees.
  • After toasting and cubing your bread, soak it in the milk.
  • Mix remainder of meatloaf ingredients together well.
  • Add toast cubes/milk and mix lightly.
  • Place meatloaf into a loaf pan and bake for about 1 hour or until a meat thermometer inserted reads 160 degrees.
  • Prepare the sauce by combining all the sauce ingredients in a small saucepan and simmer while meatloaf is cooking.
  • When meatloaf is thoroughly cooked, remove any extra fat that has accumulated in the loaf pan and slice into serving size pieces.
  • Pour sauce over and let stand for about 10 minutes.
  • Make sure to get the sauce in between the slices.
  • Serve and enjoy!

  • In large bowl mix together: bread (soaked in milk), onion, oatmeal, eggs, sage, and salt. Add ground beef. Mix together and shape into two meatloaves. Bake 1.5 hours at 375 degrees (cover before baking with wax paper).

  • Preheat oven to 350F, rack in the middle. Line a rimmed baking sheet with parchment paper and lightly spray. In a large bowl add the oats and milk and gently mix. Set aside for 15 minutes to allow the oats to soak in the milk.
  • After 15 minutes strain out the milk into a separate container but do not discard. *If there is no milk left, it’s OK. Some brands of oats suck up all the milk while others do not.
  • In the bowl the oats are in, add the ground beef, eggs, Worcestershire sauce, steak seasoning, garlic, onions, ketchup, and 3 Tbl of tomato soup.
  • Just combine but try not to overwork it as it will get tough. If the mixture is too wet, add in 1-2 more Tbl of oats (don’t worry if they aren’t soaked). If too dry, add in the milk 1-2 Tbl at a time. If you have no milk left as your oats sucked it all up just add more milk or water. You want the mixture to be pretty moist but firm enough to hold a shape.
